Our party of 4 came for dinner on a 3 day weekend Monday and it was pretty crowded inside. We put our name down at around 5:30 pm and it was about a 30 minute wait for a table to become available. The setup was pretty interesting with tables on the side and a conveyor belt with the center where the chefs are working and seating lined around that. The staff were kind and helpful in explaining how it all worked being that it was all you can eat. First, there is a menu where you can place orders with the staff for things like appetizers and drinks. We got some sodas and ordered items such as edamame, miso soup and grilled salmon teriyaki. Then in the center where the conveyor belt is, you can walk around to it and pick up plates that you want to try. It mostly seemed like nigiri and rolls that they were commonly making. In the center, the chef station is between the conveyor belt area and there you can order more specific items you want to try like a roll, sashimi or handrolls. We chose to order some different sashimi like salmon and yellowtail and handrolls like the spider and alaska. They also make a bunch of extra dishes that you can take off the shelf as well. Just me and Mom this time. On a very chilly Saturday, we drove to Vacaville to destroy some sushi. It was all about shock & awe. The good folks at Fuji Sushi sat us immediately upon entering the restaurant seeing we were there on a mission. As always we ordered some tempura, Hamachi collar and grilled chicken. Then it was time to attack the conveyor belt of plates of sushi and spicy seaweed. Everything was fantastic as always. We spent the next hour clearing our plates and trying to do it without scaring the children in the place. I thought I was successful as I pushed two pieces of shrimp tempura in my mouth, but then noticed a little girl was looking at me and was crying. Good bang for your buck, especially for weekday lunch! I came here with my friend at 1pm on a weekday. No line. Fast service. Good food, just like usual. I was kind of surprised they cleared everything at 1:55pm. They were not kidding that lunch service was only until 2pm! Even though we only had one hour to eat, I was more than satisfied with my meal here. The hand rolls have a little bit more rice than I would like, but they were delicious! Stopped by on a weekday lunch and there was no wait and plenty of available seating. We asked to sit at the counter for the convenience of the conveyer belt and ordering the specials. Started off with miso soup and grilled salmon as appetizers. Most of the basic sushi rolls and salad were on the conveyer belt whereas special rolls/plates, sashimi, and hot items were made to order. Fish quality of the sashimi platter was pretty decent today. I know it can be a hit or miss. The special plates consisted of sashimi topped with jalapeño and their house dressing of mayo and sriracha. The special rolls were average, a little repetitive tasting after a few rounds. The dessert items they offered were either fried banana, fried sesame ball or oranges. Wish they had some ice cream or more fruits Overall, $23 is a great price for AYCE lunch (until 2pm) but I'd skip coming for dinner since it's just the same items at a higher price. Make sure you get a good spot. We unfortunately did not. Some sushi was good. Not as fresh. Hit or miss. But what do you expect when there's a conveyer belt involved. First time back since the pandemic. My friend and I did the lunch buffet. I got there about an hour before they close and the staff was so nice. Their policy states no seating until your whole party is present and my friend had not arrived yet. The host gave me a table before my friend got there and let me know there's an hour before they close if I wanted to stay. The service was great. I got to order drinks and food right when I sat down. I'm not sure if we went on a bad day but I thought it was just ok. Our aunts love this place so they took us here to treat us. First impression, we thought it was really cool with the rotating belt just like the revolving sushi spots in SD & LV. However my kids & I thought the salmon sashimi was really fishy. The quality of the raw items that day didn't taste so fresh. And the fried banana dessert that day was way overripe & was just mushy. I did however enjoyed the grilled yellow tail collar & the red bean sesame balls. The place was packed for lunch but our large party was seated right away. And the servers were great. This is our main go to now. Thanks to the best sushi chef that makes everything per order. The hand rolls are so delicious, perfect ratio of rice and fish. The chefs get custom orders done so quick that a line barely forms even on busy days. They regularly supply the chef's counter and sushi belt, occasionally switching it up so it never gets boring during your meal! They also have a wide selection of items, with my personal favorite being the large assorted/combo sashimi plate! We arrived at around 6pm, added our name to the waitlist, and were seated within about 20 minutes. The waiter greeted us quickly and checked on us often. I like this place, my wife and I were in the area doing some shopping so we thought we'd try it out. They have a Yelp Waitlist if it's busy, fortunately we got seated right away. They have a revolving sushi bar, and an area where you can grab items but you can also order sushi directly from the sushi chefs. I ordered Salmon, Tuna and Octopus sashimi and they gave us a good amount which tasted pretty fresh. We also ordered some appetizers from our table including some tempura and soft shell crab which was good. There was a hamachi kama delivered to our table by mistake, but it was good. It was decently busy, but the staff were responsive. Drinks aren't included but it was good to have a soda with free refills. Both lunch and dinner can get crowded. Its an AYCE conveyor belt sushi place but you can custom order at the counter whatever you want. Variations of sashimi, sushi, handrolls, appetizers, etc. Fish can sometimes still be frozen and/or quality isnt super great but hey its fairly good value/quality AYCE. Drinks are NOT free. Quality of sushis tasted worse than last time. I think its cause we came in late, everything was less fresh. Only thing that was still good was the seared salmon. Also dont remember what I got last time that was grilled, but whatever it was, we did not get it or didnt get the same quality. Dad said the oranges were really good. When I got my plate, chef asked if I wanted anything else, I thought this went against the "last order" rule but sure and ordered 10 tuna nigiri, he asked again so I said seared salmon nigiri, which isnt a thing but it was under a different name and had more toppings. That was the best thing that day, wished I ordered more than just 10. While my parents ordered the appetizers. Appetizers are alright imo. There was once where an appetizer blew me away but we dont know what it is and maybe its not always the same quality. Hamachi Kama. That's it, that's my draw to Fuji Sushi. This lightly fried piece of goodness is why I'd go back again and again. Flaky, soft and flavorful; my stomach just tumbled thinking about. Fuji Sushi is located across from the Vacaville Outlets in the Nut Tree Plaza (right by Fenton's Ice Cream and the Jelly Belly store). There is plenty of parking though you may have to walk a bit since the restaurant area is busy. Went on a Saturday morning around 11 am when they opened. I had put us on the waitlist on Yelp but we didn't actually need to. We were seated at the bar when we walked in. Fuji has a conveyor belt that pushes out smaller dishes like California rolls, tuna rolls, seaweed, jelly fish, octopus, orange slices. For more speciality rolls, you can order with the chef or they already have some of them premade if you go during a little slower time. This time around I got the Dragon Roll and the Caterpiller Roll. For my hamachi Kama as well as items like edamame, chicken karaage, gyoza, miso soup, soft shell crab and drinks, you would order from a waiter. They are also the people you would ask for fried banana and fried sesame balls at the end of your meal as dessert. The fried banana used to have chocolate on it and I wish they would put some honey on it instead of just powdered sugar. It's good but could've been better. The bathrooms are clean, the turnaround in the restaurant is pretty quick and there's always someone to help.
