Formosa has an affordable lunch menu, and even on busy days has delivered my meal within ten minutes. Don't be astounded yet, because I would easily wait twenty minutes for this food. When their food arrives from the delicious variety of their lunch specials, you will be treated to crispy tofu, a nuanced spice for chili or jalapeño meals, or fresh vegetables that will make you wonder: who is introducing you to the best cuisine that southeast Asia has to offer? Sichuan meals, Mandarin meals, and even with a Miso soup that is vibrant and delicate in flavor, you may not have any difficulty in deciding at all because any meal you choose will be cooked with what tastes like generations of expertise, love, and wisdom. It is not possible to follow a recipe, or a video, or a shopping trip and recreate the food at the level of Formosa, nor at the price of Formosa, and I say this after years of enjoying their meals. If you are in the area and you are hungry, you will want to visit Formosa as it is an unbelievably satisfying trip for almost any person in the continental USA, and likely for international travelers from near and far. Please tip your staff generously and leave a review to share this love--there is no amount of business they can do that will do the history and delight in their food justice. Their food is accessible to the local public, and they also donate to local causes as well. Amherst has more than universities that educate people here, they have restaurants with generations of stories and wisdom in every meal. You'll be amazed at the silky luxury their hot and sour soup is, with a texture matching the fresh micro mushrooms inside. Be prepared and humble, the staff are dedicated, responsible, and attentive to the public as much as they can. I would love to read a book about the story of this restaurant some day.

Was it a mistake to order their spiciest wings on my first visit? Would the price I paid for the combo meal justify the quantity and my satisfaction with it? Do the patrons REALLY watch those music videos? Well, it's definitely all about the chicken here. That first bite of a boneless wing with the Spicy Galbi was indeed a taste-bud-awakener, but after that it was all flavor and the right level of crispness. I definitely wanted more. The fries were interesting. They were nicely crisp, and they were lightly covered with some kind of coating that was both subtly spicy and subtly sweet. They were certainly fine, but I'll explore other sides on future visits like the cole slaw and the pickled radishes. The price for a combo, $13.99 plus tax and tip extra... well ... since I'm really here for the chicken, maybe next time I'll just order a big batch of wings and do something else instead of (the starchy) sides. Those music videos... today they were all from a K-pop girl group known as aespa, evidently quite successful internationally. Clearly I am not their target audience. But as background music, it was pleasant enough. Since it's roughly 15 minutes from my house to here, ordering in advance seems like the way to go. It is indeed worth it for the chicken.

The fried chicken with their "secret sauce" is one of the better versions of what I consider to be authentic, so my rating is based mostly on this. Things that would've made for a 5- star experience relate to the ultimate Korean fried chicken and pizza joint in the Atlanta region, where they play a Korean TV show on mute (or music videos, although I almost never watch them with intention) and have utensils and crockery that at least remotely make you feel like you're dining out if you decide to eat in like we did.. For example, bb.q only had plastic forks and not even a paper plate. And regrettably like many Korean fried chicken joints in the U.S., they charge separately for sides such as pickled radish. Speaking of which, they charge $0.95 for a little cup of radish and most of the mass was liquid, forcing me to ration even though we ordered two of them. Moreover, one of the radish cups clearly had been sitting out and they still served it, as I overheard the front staff say to the kitchen staff, "I need two radish.. actually, only one, there's one sitting out here already, I'm not gonna waste that." Anyone who knows and appreciates the crunch of the radish that complements Korean fried chicken will understand how this affects the radish and the diminished enjoyment. On a positive note, the chicken was tender and the sauce, although not one of the best I've had of its kind, was more like the authentic sticky and sweet 'yang nyoem' that I've come to love. There was an unidentifiable note to the flavour of the sauce that I didn't like but it didn't detract completely from enjoyment. If there was a half star rating I would consider 3.5 stars. Then again, I'm glad there's a decent Korean fried chicken joint in our neck of the woods away from big cities, and I wouldn't mind going back. I hope they continue to improve.

But because they also serve burgers, I think a comparison to Roy Rogers is more appropriate (minus the fixin's bar I really liked). (Side note: There are no more Roy Rogers in New York State, they're only in Mid-Atlantic states at this point). The restaurant is tiny, with about 5 booths and a few small tables, but when I came in for lunch, it was immaculate. My first meal here was a chicken combo, spicy, with cole slaw. I really like their chicken; their spicy chicken has exactly the right amount of heat and flavor that I want. It's also extra, extra, crispy. I feel sorry for those who have to clean up after anyone who eats in, because there will be lots of batter flakes all over the place. And there's no sporks, it's all plastic forks, knives, and spoons. And now, for the picky stuff: You get a slightly larger amount of cole slaw than at similar restaurants. But the chop is finer, and there's more mayonnaise, so for me, it was too mushy. I probably won't order it again, instead I'll check out other sides. The biscuit was fluffy and less salty than at other places, but it was slightly dry, probably having been under a heat lamp for a while. The combo includes a fountain drink, from a smaller, older-style Coke dispenser for which there are only 6 options, one of them being sweetened iced tea. Unsweetened ice tea was not available as far as I could tell, so if that's true, your only unsweetened option is water, out of the dispenser or bottled. I found it amusing to see, in big letters under the counter, "We cook fresh all day," with about 3 dozen pieces of chicken under heat lamps in the back. Just how often during the day do you cook fresh? The bathroom was clean, but the dispensers were out of soap and paper towels. This is not a good thing for a place serving fried chicken. And it was only about 75 minutes into the day when I was there, I would find it hard to believe it was all used up in 75 minutes. More likely, it was never restocked at the start of the business day. C'mon, you can do better. This is easy to fix. I'll definitely be back if only for the chicken, but I do intend to try the burgers and also the other sides. If those are as good as the chicken, and the beverage and bathroom stuff gets better, I'll add more stars to a revised review for sure.
