It's $21.45 at the time of this review, a bit much, but this might be the biggest portion of ramen in the area. I'm a big eater and I've never found myself wanting to order extra noodles, or needing an appetizer to get full. The soup is much lighter than most places in the area. You won't be overwhelmed with fatty soup here, but it still has a nice savory pork flavor to it. Most of the times I've come here, the cut of pork they use for the chashu is very lean. Noodles are the stand out. They're thick, curly and chewy. Such a different texture compared to other places. I like this place because it offers big portions, lots of meat and isn't overwhelmingly fatty like other places. If there was anything I wish they could add to their menu, I'd like them to add freshly pressed garlic as a topping. There's lots of good ramen in the area, I've had almost all of them, and I think this one is slowly becoming my favorite spot.

It's separate restaurant on the far side of the complex with only a few tables inside. Because of this there is a long wait; we waited the exact quoted 30 minutes, then after we were seated we heard them telling walk-ups that it would be 45-60 minutes. You can also order to go and eat it outside among the public tables but I def recommend seating inside even if there's a wait.....the reason being the unique way they serve your food. You sit by an open kitchen and then a giant window opens and they hand you your food. It was a total surprise when this happened! I cracked up so hard. I'll come back just for this. Other than the surprise window, additional highlights for why I this is my new favorite place: 1) Their standard water is lemon/mint/watermelon infused. I wish more restaurants did this! 2) Very family friendly, they offered the cutest little pair of pink safety scissors to cut the noodles up. 3) The crispy spicy tuna rivals fancy sushi places like Roku and Katsuya! I totally recommend getting a 2 or 3 piece appetizer of it. 4) You get your choice of thick or thin noodles. I tried both and they're both solid, but next time I'll pick the thin. It's slightly thicker than Shin-Sen-Gumi (which has the traditional Japanese thin noodles). The thick noodles are similar to what you get with tsukemen, but a little wider. 5) The broth was very rich and fatty, similar to Kotteri broth (though I didn't confirm if it was indeed kotteri broth). 6) The default ramen comes with spinach and bean sprouts; usually these are my fave toppings that I have to add. 7) The ajitama was creamy perfection. All of the ramen bowls (except the vegan one, which also looks great) give you a half-egg. 8) Plentiful parking at The Enclave parking lot. 9) Delicious fresh garlic on the side. I loved the presentation with the big bowl of ramen on a square plate with garlic on the side. 10) Their logo boasts they craft "noodles, stock, and sauces." Their spicy red chili sauce is AMAZING! Def try some with your ramen, as they provide a large jar on the side. It looks a bit like sriracha but has a rounder, more robust, flavor. It's spicy but worth trying if you dont usually order spicy.

Everything from the flavor to the experience just feels a step above. The (always-vegan) broth is rich and well-balanced, and you can really tell the focus is on quality. One thing I really appreciate is how accommodating they are with customizations. I usually ask for my ramen without nori (seaweed) and skip the egg, and they get it right every time. It might seem like a small detail, but it makes a huge difference not having to send anything back. The atmosphere is also a big plus. It's cozy and inviting, perfect for sitting down and enjoying a warm bowl of ramen. The first time we went it was pretty busy, but it still felt comfortable. The second time, we went earlier in the day and it was quieter, which made the experience even better. At this point, anytime I'm craving ramen, this is where we go. I just went with the default options, which i believe they recommend for first timers. On the side, I got a flavored egg, and pork belly. The broth was solid. It was flavorful, and fatty. The noodles were the right firmness as well. However, the chashu pork and pork belly were pretty mediocre. I know this sounds harsh but hear me out. Even after bathing them in the broth, they were dry and not tender. I didn't enjoy the flavored egg either. It was overly boiled and barely marinated. Despite the shortcomings noted above, I'm still giving this place four stars because the service is fantastic. The staff is very nice and provide incredibly fast service. My drink came out in like one minute. The refill came out even faster. They also offer free refills of the noodles.
