Many of the menu items are prepared with soybean oil, which was disappointing given the otherwise high-quality and health-conscious image of the restaurant. Soybean oil is highly processed and contains large amounts of omega-6 polyunsaturated fats. While omega-6 fats are essential in moderation, excessive consumption relative to omega-3 intake has been associated with increased inflammation in some research.
