This place is different than what it was in the past. I ordered a breakfast burrito and carnitas quesadilla. The carnitas in the quesadilla had absolutely no flavor. **UPDATE:** For some reason the photos didn't upload the first time around..... So I uploaded it again. It really saddens me to make this review. I love the birria tacos that I ordered from here. I also decided to try menudo for the first time. It was delicious and I enjoy eating stuff like this. What I am confused and sort of grossed out about is, why are there so many tiny black hairs inside of the broth and stuck to the meat and stuck to the fatty parts? Is this normal? Is this how menudo should be eaten?.... If it's not a bunch of tiny black hairs, then what is it? I ate this yesterday night and I saw like 1-2 tiny hairs and I didn't think anything of it. Okay, it's just hair it happens. I decided to reheat the soup today and look at it more thoroughly and seems like almost every scoop I could find hair. I used a chopstick to pull it from the broth to the ladle to get a better view. Some of the hair were on the meat. Was the meat not cleaned properly or enough?.. I haven't called the business or asked for a refund, but I am throwing it out. It's sad because the flavor and everything about it was good aside from all the small hairs floating around..... Just get their Birria tacos and you can't go wrong. I liked their Birria Tacos a lot more than their classic street tacos. Had their pastor and wasn't too impressed with the seasoning and flavoring for their version. But their birria tacos were on point and made me forget about the mediocrity of their pastor taco! The birria tacos only come in shredded steak and was really flavorful and juicy. Their consumé to dip the tacos in also had a great beef broth flavor and wasn't watered down. Their salsas are decent as well and hot! Which I loved. Their red didn't have much taste but is one of the spiciest red sauce I've had so far in Arlington. Their salsa verde which I'm usually not a fan of and normally wouldn't even use was in my opinion their best salsa. Their creamy green salsa was good and though it is my favorite sauce, it's just nothing out of the ordinary compared to other taco places. The reviews were spot on... While visiting the DFW I wanted to find a local taco spot that served amazing tacos. Well Gilbertos is definitely one of them. I ordered Tripas, Fish taco, and of course, the Asada tacos. The food is fresh and very good. The fish taco was perfect. The fish was cooked crispy but still had a flaky soft center. First impression: the taco shop is squeezed between a salon and a tire shop, so parking is limited. Parking in my big truck in the back of the building was manageable, but a bit tight. The building itself does not look like much, but it does have a welcoming feeling to it. The staff: the people at the front desk were super friendly and helpful to a first timer! The rest of the family thought the food was below average as far as Mexican food goes, about on par with Taco Bueno. I'm so sad to be leaving this review, we really love their birria, so much that I over looked finding a hair in the salsa once, but the last time we went there, there was a piece of metal in my taco that I bit down on, luckily I didn't hurt myself, but their response was to refund only that meal, didn't even refund for my kids meal who I of course was not going have eat after finding a metal wire in my food!
