Gilbert's Bakery is not the same as it used to be. The staff could use more customer service training. I ordered a pimento roll, a ham roll, and a pastelito. When I took a bite of the pimento roll, it was still frozen. I assume they prepare them in advance, freeze them, and then thaw them to sell, but mine had clearly not been thawed properly. Gilberts is a long standing business which in my opinion is great, however the quality of service and even food has declined. This was my favorite place for pastelitos (weekly run) amongst other goodies. Last two visits the pastelitos (guava +cheese, meat and guava) and croquetas were all stale. Bought a packaged spread home and it was moldy. The biggest issue I had was that we purchased mini deserts for a dinner party. I asked the server if there was a possibility of cross contamination of these with any type of nuts (none of the small deserts had nuts as ingredients but I always ask because of the allergy) and I was told no, they do not contain nuts and not prepared on shared equipment. Ok great so I thought- definitely cross contaminated and a reaction was had. This type of staff education is critical as this can be life threatening for anyone with a nut allergy. As much as I loved this place in the past, it is now a hard no for me. Although I am not the person with allergies, the lack of awareness is concerning and the repeated staleness offense is enough for me not to return. read more

Love the Nona Rum Cakes from Gilbert's Bakery! My family always enjoys them when I bring them home and they definitely do not last very long. I will say, all the times I have tried their patelitos and croquetas I have been disappointed. This last visit I ordered a Ham Pastelito and Croqueta, they gave me a Beef Pastelito instead which I happily took because it's one of my favorites but both the pastelito and croqueta were cold and seemed like they were old. The flan was creamy and smooth and had a little fruitiness from the vanilla they used. The guava pastries were fresh and crisp and flaky. The capuchino cake had a wonderfully flavored syrup, it was sweet but had enough liquor to offset the sweetness. The alfajores were soft and had icing but it wasn't too sweet. This is the most misunderstood bakery in all of Miami. Maybe the problem is that they belong in the 1800's and they haven't realized they live in the 21st century. On top of that, they are located in coffee fueled Miami. The fast pace of the city and the absence of time at Gilbert's creates a lot of friction and frustration. All the pastries, cakes, and trays with sandwiches and hors d'oeuvres are beautifully made, and very reminiscent of baroque art, which is the theme here. I come for the pastelitos of guava and cheese, the trays for parties, and a cubano or a media noche. All this I wash down with a cafe con leche. I stick to this religiously, as this is all I like at Gilbert's. When you come here, you need to remember that time will stand still. Allocate plenty of time and don't be in a rush. The staff here is really pleasant and helpful, but this is like a restaurant without a front house. It does not run smoothly, and lots of fine tuning is necessary. But the food is really good. I particularly recommend the media noche. If you think that a media noche is just another Miami sandwich, you need to order one here. It is the best media noche in the city, hands down. It will absolutely make you a fan of this bakery. Then again, if you think that you can come in, order and go on your merry way, forget about it. You will be stuck here for a while. So, when I asked about it, a family member told me of this place and how they were very similar. They were very correct and so before leaving Miami to go back home, I stopped in and grabbed a variety of small items from sweet to savory just to get a sampling of their items. I was going to do some more holiday shopping and I was going to do that and hang out with my younger brother while doing it... we both needed to get things for people so why not? Since we were going to spend the day together...he was wondering if I could swing him by one of those medical centers because he needed to have some blood drawn for blood tests...I dropped him off at the place and when we were done he needed some energy to start the shopping day. We ordered some Cuban coffee and some croquettes...but instead of our usual ham croquettes...we saw they also sold chorizo croquettes! Omg I have never had any and they were incredible. The croquettes were well cooked and the meat was delicious and creamy. Unfortunately, the Cuban coffee was as terrible as the croquettes were great. The coffee was bitter and almost tasted as if it was overcooked/burnt. I know a bakery should be mostly measured by their baked goods...but a Cuban bakery not making good Cuban coffee is a no-no. There is nothing even remotely acceptable about this sham. The food is always older than the person buying it. The prices are so high you need to get a personal loan to buy a few snacks. We came to this bakery to get a custom cake of my brother in laws face printed on a cake. As if it wasn't funny enough, we did a design of "The New Most Interesting Man in the World" which cracked everyone up. Not only did they do an amazing job, they were friendly and kinda worked last minute on this to make sure it was done on time. No other bakery could have pulled it off like they did! Aside from the custom cake, this place is a Miami staple. Everyone knows Gilbert's! It's always a struggle to find that best pastelito in Miami but I'm pretty sure you won't be disappointed stopping here for a quick Cuban treat. Gilbert's comes in handy when I find myself in the Redbird Shopping Plaza craving a cortadito and yes, I usually get some croquetas on the side. To start, the ladies working here are always cheery and ready to serve. Not all of the pastelitos and baked goods are labeled so they are happy to talk you through what each contains. If you don't speak Spanish, you can still get around and not feel like you're an uninvited guest... Something not always easy to come by in Miami! They have unique croquetas you won't find everywhere. If you like spicy, try the jalapeno. Last time I stopped by, I had a Cuban empanada that was essentially a medianoche wrapped up in a empanada (pickles included). It was pretty tasty. What wasn't? The pumpkin spice cortadito. I was urged to try it but it was overly sweet and had an odd grainy texture. Did I drink it all? You bet! The things we do for caffeine... If you're looking to pick up bites for a party or meeting, they have platters ready to go. Also an array of enticing pastries and cakes to add to the mix. This shopping plaza fulfills a lot of my needs (dry cleaning, grocery shopping, pharmacy) and I'm glad Gilbert's is added to the mix to always get me through my afternoon slump! read more

Despite the fancy looking pastries and desserts, i give this bakery a 3 because its overpriced and sometimes the pastries are dry. Today inordered a chorizo croqueta got a ham croqute instead. Ok opps they did a mistake but i was so craving chorizo. The chicken monsier were dry and didnt really taste like chicken. The guava pastelles were ok and almost a dollar each. This place catered an event at my job and I figured, hey, pastelitos and such, I love 'em like everyone else, but I was not expecting to be wowed, but I seriously was! The pastelitos were soft, not excessively flaky,and super flavorful! I couldn't get enough of them! We had the finger food size and they were a perfect size with the perfect amount of filling. The bocaditos de pasta were really yummy and full of soft, fluffy, addictively flavorful goodness. Some other bocaditos with a green and white cream were tasty, too. On the desserts end, they had these super cute and dainty dessert minis, and I mean mini! They were perfect for a finger food menu and packed with gigantic flavor! I had some mango pie and a mini flan. Both were super delicious! I have never actually had traditional flan (my teacher made a delicious more cheesecake-y version), so I was glad I had my first experience with this one. It was very good and had only a very very slight bit of eggy-ness, but overall, the caramel flavor was perfect, as was the texture. The downside--Well, I really wasn't a fan of the chicken pastelitos. They used a different type of dough that was harder and drier like a shortbread and I wasn't a fan of their spin on this particular item. In terms of presentation, everything looked classy and they did some simple elegant touches with fruit flowers, romaine lettuce, and such. Also, they arrived on time, which is also super important. Overall, 4.5 stars. Very very good! Everyone at my job is Cuban, mostly first generation, and they love this place! It is their go-to for catering. Based on this experience, I was very pleased and the only small issues are the dough for the chicken pastelitos and the very slightest eggy taste in the mini flan. I just can't believe that this is the place that I've been avoiding because of such terrible reviews. I guess either they have gotten a lot better or the catering is just far superior to their common bakery stock. Either way, I promise you that they are sure to wow on catering. Additionally, none of the staff here speaks English (surprisingly, and this is rare, even in Spanish Miami since there's usually at least one staff that is bilingual).
