I think a place with seating should have a public restroom in which customers can wash hands before eating and be willing to give you a glass of water instead of making you buy a plastic bottle. GREAT sandwich shop with very friendly staff! There were ~10 employees and each one of them was needed. This joint was boooooming at 3pm on a Saturday afternoon after a long day of shredding. Found this stop as a couple people recommend this joint so we had to stop by. We ordered a large ham and salami combo and a mini x. They LOAD these sandwiches up! Each of our sandwiches came with meat, cheese, we subbed lettuce for cabbage, onions, banana peppers, pickles, tomatoes, mayo, olive oil, and S&P. The end result? A delicious lunch. When they first pull out the bread the sandwich looks like it'll be tiny but they PACKKKK it, so don't fret. To start , the 3 stars is due to the change from the Gill's I've known since 1964. Grinders are good , just like Jersey Mike's are good . But it is no longer the Gill's I've known. Pretty sure historically hot Capicola was used in the hot Italian and picante provolone . Both are missing. Cabbage is shredded very very fine , honestly thought it was lettuce at first .:( Rolls are more Jersey Mikes ish vs Italian . Not sure mainstreaming the menu will sustain the new owners for the next 60 years . read more

Decided to give it another go as this was my first love of a sandwich. The staff were absolutely phenomenal, they were friendly with warm smiles across the counter from start to finish and as usual in the middle of a chaotic entryway, the staff was diligent, efficient and polite while greeting everyone at the door. I can't tell why but it might because it was the old hats? The interior has changed since the first time I entered the deli and true to a hometown feel it should never change. From the paint on the walls bright yellow to the floor the interior is something you'd find in a kitchen from the early 90's with its wainscoting and checkered floor. Hopefully they will stay true to their roots! On to the sandwich: The Hot Italian The bread: obviously fresh which is a requirement, but what makes it so great is the light fluffy texture it gives when you first bite into it without weighing you down by some gaudy huge bite of nothing but dough, it's thin and baked to what a deli roll should be. The veggies: don't mess around, get everything! Everything from the banana peppers to the shredded cabbage have a nice cold textured bite to make your mouth sing you only get from cold veggies. The meat: each bite was perfectly folded with each slice of meat deliciously stacked to perfection as to not overpower one meat over the other. Truly a master of its craft when it comes down to EVERY. SINGLE. Sandwich will be the exact same way. The attention to detail these ladies have when it comes to stacking each monstrous sandwich perfectly without it falling over itself is impressive to say the least. The staff here is extremely hard working and efficient. There was a line of at least 20 people at all times. I arrived before 2 and checked out at 2:30. Everyone was patient. A CASH ONLY sign greets you on the front door so take notice. The portions are very large as advertised. I ordered a large roast beef and a large Pastrami grinder. Unfortunately I found the bread to be dry. The usual ingredients topping are ample and it's amazing how they keep them from falling off. The sandwich is stacked high. I have been eating at Gills Deli in Rutland since I was a child - in fact my parents have been eating there since they were teenagers! It is an absolute staple of southern Vermont. They have some of the best grinders I'll ever have. The location is conveniently located in the city of Rutland. There is street parking, but it can get busy at lunch, so it can be tough to find spots at those times. There is a good amount of indoor seating, and the decor is classic deli style with a lot of charm. I normally order the large veggie grinder with cheese, extra cabbage, olives, pickled peppers, mayo and olive oil. There are multiple sandwich size options - I always go for the large or extra large and just ask them to cut it in sections. I've probably had over 30 Gill's grinders, and they are always delicious! They also have very good pasta salads and cole slaw (pictured) and plenty of drink options in the fridge section. The staff at Gills are also beyond amazing - incredibly friendly personalities that create a welcoming atmosphere. Overall, I cannot recommend Gill's enough! It is an absolute gem. Delicious, loaded subs on soft bread. I had the Hot Italian with lettuce instead of the cabbage, but had a bite of my husband's with the cabbage. Both were awesome! I thought the cabbage would be too hard but not at all, finely sliced like a slaw. I especially loved all the yellow peppers. Their potato salad and Mac salads were also super tasty. I've had the pleasure of eating at Gills twice now and both times I end up getting the hot Italian "grinder." (Come on, it's a sub! I'll settle for a "hoagie")! Gills deli was a great place to eat. I had a large roast beef and it was delicious. The meat and vegetables were fresh. If I had Gills back in Texas I would eat there every day. Obviously Gill's is a Rutland institution, so there's not much more i can say there. I recently got a BLT that was amazing. Every bite was perfect. Service is fast and fast paced, so it might be overwhelming for quiet or indecisive folks. It helps to know what you want when you step up to the counter because it is always packed in there. I haven't lived in Rutland for 12 years so anytime our daughter is down that way she'll pick up grinders or another restaurants food. The grinders aren't the same. The rolls are no where near what they used to be. They don't offer seafood salad as an option anymore, just very expensive (for a grinder) crab. I couldn't buy seafood from a grinder shop. I've been going to Gills for over 50 years, sorry it was sold. The grinders are still good but not the same. The best thing was the cabbage, thick and sweet and loaded up. The new owners have now made the cabbage so fine you can't taste it at all, I didn't know if it was cabbage or lettuce. If you are a veteran of Gills you will be disappointed, hopefully they learn and change it back. Don't change what doesn't need to be fixed.
