Hostess stand sign announcing no margaritas!

Walked to this restaurant Thursday night around 7:15 pm mainly for their margaritas as I wasn't super hungry. I found this posted at the hostess counter! They claimed they had tried to order grand matinee and couldn't get it so they cancelled margaritas! I had just bought bottles of Cointreau and have a hard time believing they could not get any orange liquor??? Triple sec? Patron citronge? Grand mariner? Lots of possibilities. My conclusion: Very poor management.

Beef taco and chile relleno with rice and beans.

Great muy delicioso Mexican food! The exterior is deceiving, inside you walk into a nice beautiful restaurant. A must!! The workers are very nice and sweet! I will be returning. ‍

Carne asada was insanely good. You can tell they use quality cuts of meat.

The food was top notch. Could really tell the quality in the meat. Cool decor on the outside. Was a slow on checking us out given we were the last diners of the night on a Monday? Weird but would come again if I'm in the area for sure

    Menu

While passing through town there's limited options at 8pm on a Tuesday night but don't let that fool you!! Gustavo's is amazing. Great portion sizes and amazing food! Even though I ordered take out, the service was great.

1 Chili Verdi enchilada & 1 cheese enchilada

If you get the opportunity to go to Gustavo's in Monticello , order the chili Verdi , it is the best I've ever had , in this tiny town , THE BEST , my husband ordered the chili Verdi plate and I got chili Verdi enchilada, AMAZING & super friendly service

    Chile Relleno, rice and beans

I was disappointed when I googled their hours and it showed they were closed (Sunday afternoon). I was happy when we spotted the restaurant as we came into town and found that they were actually open. The food and staff (Oshla) were fantastic. She seated us immediately, brought fresh chips and salsa. Our drinks and food were served quickly. Everything was delicious. Best Mexican rice I've ever had. The restaurant was clean and festive. Don't miss Gustavo's!

Took the pic too late. It was delicious.

Amazing Mexican food with delicious house hot sauce. The one with black garlic was my favorite! So original, I wish they would sell it.

After hiking and driving through Mesa Verde, we were starving and started looking for food…read more Gustavo's had by far the most interesting menu out of all the Mexican places in Cortez and we decided to stop by for an early dinner. Chips & Salsa (Complimentary) - The chips are served warm with a small tinge of oil sheen. Very even in thickness. I think these are commercial chips, but the menu states they have homemade corn tortillas, so maybe they fry the leftover ones into chips? The salsa is nice and refreshing with just a hint of spice. A good start to the meal. Horchata ($5) - This drink actually isn't on the menu, but I noticed it available in Gustavo's online ordering system. I asked the waiter if they had horchata and they did! I happened to be sitting at the table right next to the fridge and I saw the waiter remove an unlabeled plastic jug filled with white liquid and fill up my cup. I guess this must be home made? Very nice rice flavor, sprinkled with cinnamon and spices on top. A lot of horchata I've had in the past have been almost cloyingly sweet, this one is not too sweet in comparison. It has a smooth texture that isn't too gritty and is generally delicious to drink. (5/5) Corn Salad ($8) - This is a very simple salad with cilantro, black beans, red bell peppers, and corn in a very, very tangy and vinegary dressing. They top it with a slice of red onion and some queso fresco (per the menu, although I thought it was dry and aged like a cojita, but I'm not expert) crumbles. There is a bit of liquid at the bottom, but it's easy to drain. The server gave us four griddled tortillas to make rolled tacos if desired. I found this to be a little too acidic for my tastes. (3/5) Two Chile Relleno Crispy ($17) - This dish comes with small ramekins of rice and beans, both perfectly seasoned. The rice is cooked until very tender and fluffy with diced carrots, tomato, peas, and corn. The beans are excellent - the best I've eaten in recent memory. They're super light like they've been whipped and have the fragrance of lard. The beans are perfectly seasoned, and while light in texture, are very heavy on the stomach. I swear, it must be like half lard.... The chile rellenos are very interesting. Instead of being battered and fried, these large maybe 6inch long green peppers (hatch, perhaps?) are wrapped in a dough square and deep fried. The square almost reminds me of an egg roll wrapper, except developing plenty of micro bubbles while being fried, lending a crisp when dry. The rellenos are stuffed with plenty of cheese, very stretchy, mild tasting, milky, and doused in a green chile sauce, which softens the wrapper. They pile lettuce and tomato on top, followed by a drizzle of sour cream, guacamole sauce and crumbled queso fresco. Overall the taste profile is very tangy and a bit spicy. Additional green salsa is provided in a squeeze bottle on the side, although I didn't use it as the dish is flavorful enough. (4/5) Gustavo's Mexican Restaurant & Bar was a very good choice for our dinner. We both left happy and full even though we didn't even order two entrees! I would revisit if I'm ever in Cortez again. Bathrooms - Two rooms in the back.

For my meal, I got the shredded chicken flautas, and they were SO good. The chicken was juicy and flavorful. I also really liked their rice. My SIL got the carne asada, and that felt like the star of the show to me. Everyone at the table enjoyed their meal. My husband got the steak, and it came out a little underdone. They took it back and cooked it a little longer for him when he asked. If you're wanting red meat, I'd say to go for the carne asada instead of the steak. Overall, super great experience especially for a road trip meal. I'd go back for sure!!!

One thing I loved about this spot was the misters set up around the seating area--they made a huge difference and kept us cool on a very hot day. We ordered six street tacos: two shrimp, two asada, one adobada, and one barbacoa, which came to about $27. The food was served quickly, and overall the tacos had a nice spice level and good flavor. They were a bit on the salty side, but still enjoyable. One thing I found unusual was that they didn't double up the tortillas like many taco places do, which made them slightly more fragile. It's a convenient, tasty, and casual stop if you're in Moab and want a quick meal outdoors with a relaxed vibe.

You have to get both salsa's, medium red and hot green. The hot sauce is legit, so much depth and flavor but will light you up for an extended period! The park itself offers a common table area, covered and lit. We went back the next night it was so good, highly recommended!

I have eaten here with my friend the last couple trips to Moab and it has been just perfect each time! The service is fast and very friendly. We sat outside which is under cover and shaded but you can still see the street and sidewalk. Kinda feels like a sidewalk cafe there. They also have seating inside. Unfortunately, they just completely forgot to cook my food. When the rest of my table got theirs, there was no trace of mine, and when they noticed the problem it seemed that they had to cook it entirely from scratch, so I didn't get my food until the rest of my family had finished and my kids were antsy to leave. Also, when the food did arrive, it wasn't what I ordered, and frankly I did not want to eat it, but at that point I was too hungry and dispirited to complain.
