Been buying from HSM for many years now. Never dissapoint and always top quality meat. Socal here has been popping up numours ayce wagyu places, and if you think that quality is good, you dont know what good is. The cuts from HSM is top notch stuff, and I have yet to have had any better cuts than these! I used to think wagyu was too expensive and over hyped until I came across HSM. HSM has ruined all meats for me. I can no longer go to any steakhouse because HSM's meats are far superior. I've tried their: A5 Tochigi Filet Mignon A5 Hokkaido Jinnai Ribeye A5 Kagoshima New York A5 Kagoshima Filet Mignon A5 Omi Rib Eye A5 Omi New York A5 Gunma Ribeye A5 Gunma NY Strip A5 Kobe Wine New York A5 Sunflower Fed Ribeye (I don't recall which prefecture) A5 Picanha (I don't recall which prefecture) A5 Brisket (friend bought it and cooked it) Australian Wagyu Denver Steak 35+ day Dry Aged USDA Prime Tomahawk 35+ day Dry Aged USDA Prime New York Australian Bone Marrow and many more that I cannot remember. I've tried a lot of different A5s but haven't tried them all back to back to see the major difference between each prefecture. It also depends on what else we pair the meal with. The ribeyes are all very buttery and I like to add a daikon/ponzu sauce on the side to help cleanse the palate. The NY strips are less buttery and very enjoyable with just salt. I felt the A5 Sunflower fed was the lightest out of all of the ribeyes I had. If we have guests from Japan who come over, we like to have them sample something from their prefecture. The Tomahawk is always impressive presentation wise, but I undercooked it last time so I had to regrill it which in turn, I overcooked it to medium. This is a me issue and not a HSM issue. The owner of HSM is very knowledgeable and helped teach me the differences of each prefecture and back stories. I highly recommend studying up on Omi. I need to try more of their seafood and Australian meats. Looking forward to trying new items! Overall, HSM has been a delight to work with. I have ordered from Peter multiple times and he has always been professional. He communicates with me and tells me when he will deliver and when I should be expecting the deliveries. Products I have purchased are: Japanese Wagyu - 100% delicious Australian Wagyu - 100% delicious Picanha - My favorite meat and it's 200% meatilicious Skirt - Meaty and Yummy Multiple types of seafood. What i like about dealing with him is that he packs everything with care and once delivered, it is ready to be grilled/cooked. If not ready, I'll place it in my freezer and wait for another day to prep it. The packaging comes with multiple ice packs that you get to keep and Peter is not cheap with the ice packs.
