I had the Guije cocktail which cost $24 after tax and tip. Yes, that's the one thing about this place - the drinks aren't cheap. Tasting notes: "Guije is a savory, tropical, and funky cocktail featuring Chairman's Reserve Rum spiced with Mojo Criollo, offering hints of bay leaf, pepper and garlic. Along with fresh mango, lime, Maduro, to round out the robust yet tropical flavors." It was strong, refreshing, and fantastic. All of our drinks were presented beautifully too. My wife thought she left her wallet here. The next day, I DMed @bar_kaiju on Instagram and they got back to me in less than a couple hours. Whoever got back to me was responsive and kind. (Luckily, the wallet turned up elsewhere, but their help was appreciated.) Bar Kaiju is located on the 2nd floor (mezzanine level) of the Citadel food hall. It opened in December 2022.
