Finally tried this "dive bar" BBQ joint yesterday. Staff was fantastic letting us know right away that this was true smoked meats and not vinegar based or sugar sauce based BBQ. Draft list was fantastic for a small bar. My 7yo loved the options on the fountain machine. We only tried the brisket but it fell apart in our hands and had a delicious smoke flavor and was very moist. The pretzel and beer cheese was great. The hush puppies were huge. The cheese curds are what I get when I'm in Wisconsin. My Mrs isn't a fan of smoked meats, but I guarantee this will become a regular haunt for our family. I went back with a group of six and I'll still stick with my four star review. The ribs were fantastic, probably some of the best ribs I've had lately. The hush puppies are very good and we always enjoy them. My wife's pulled pork was not the best. The pork was kind of dry and stringy. She was not a fan of the fries, although someone else had the sweet potato fries and they were five out of five. My son had the brisket which he said was good, but he felt like it was a child's portion. I really enjoyed the ribs, even though I really wanted the bratwurst with the peppers but they were out of them. I had the pink coleslaw which I also enjoyed and if you're a vinegar fan, you will like it too. The potato salad was peppery, and I gave it a three out of five I like pickles in my potato salad. It's just not summer without bbq. I was visiting and looking for a place in Winchester and found Hog it Up. It's a Texas style bbq and bar where they make everything themselves except for the pickles according to the owner Mike. I ordered the brisket sandwich with fries and tried all 3 bbq sauces. Sooo good! The brisket was tender and flavorful. The baby back bbq sauce was my favorite, just a classic flavor. South Carolina bbq was delicious as well. The bourbon style was a bit syrupy and sweet for me but still had a nice flavor. The decor was Texas eclectic and the music playing was classic country which created an inviting space with an authentic atmosphere. There was a television screen at the bar. The seating was comfortable though the high tables at the front window were a bit small to fit all the food. There are bigger tables on the other side near the counter. The owner was friendly and shared how he renovated the place himself over 10 months working every day, raised and replaced the ceiling, redid plumbing and electric and decorated it himself. He also has a Food truck business. I also tried the banana pudding. Yum! You get Free refills on drinks. They didn't give us anything near that amount. The Mac n cheese was dry, the rice wasn't rice it was more like grits, and it did not have a pleasant smell to it. My husband got the brisket and pulled pork. The brisket was so dry he couldn't eat it. I wanted to try this place and was so disappointed especially because my husband was still hungry afterwards. We ordered the brisket, Mac N cheese, and chicken strips with fries. The brisket was just a tad dry but it very tender and broke apart easily. The Mac N cheese was decent but it didn't have a powerful cheesy flavor. The chicken strips were just ok and the fries were very soggy, lack flavor overall, and just sad. Even McDonald fries are better than these fries. All in all, the food experience was ok but nothing to write home about. Completely felt back at home in Texas walking in. We were greeted immediately with a friendly smile and hello. My husband and I love traveling and experiencing new food and Hog It Up did NOT disappoint. We tried a little of everything but as anyone knows Texans can be pretty picky with our BBQ. I don't know if I could pick a favorite honestly. We had wet and dry cuts of brisket, turkey, shredded brisket and smoked corn beef brisket. Every piece of meat took us right back home to Texas! These are not Buffalo wings nor do they claim to be. They are good old fashioned smoked wings with a good rub and awesome flavor. Want more? Dip them in some sauce to really make them pop. I would have to say these are the best wings in Virginia. I would say the best wings I have had but I have to revisit a spot in Pennsylvania to confirm it.
