Seeing as their main warehouse was located down in Tualatin, and they allow in person pickup to save on shipping, we decided to make a spontaneous long weekend trip down to Portland. Pickup is pretty easy. When I ordered, I specified in person pickup and the very next day, I got an email that said the order was ready for pickup, Monday through Friday from 8:30am-4:30pm. We parked in one of the two parking spots outside the office door, gave them a call, and one of the employees came out and handed us the chocolate. We ended up getting four different types of couverture (and 12 types of chocolate in total between Chocosphere and other retailers): Cordillera 65% ($36.79/kg) - Woah, this one starts with a fragrant floral aroma, strongly vanilla-like in flavor. It spreads through the palate but never gets too intense. It then goes to a more neutral cocoa flavor and finishes with a bit of bitterness and astringency. I love this flavor profile, although to reduce the astringency of the finish, I'd probably prefer the 59% or 53%. I'll have to try those next time. These are going into my favorite chocolate chunk cookies, so hopefully they won't take too long to go through!. Ranked 2/12 Valrhona Illanka 63% ($41.39/500g) - I'm not a fan of this one. It first starts off with an unpleasant kind of musty flavor, one that my wife describes as the flavor of "old wet dog." It has a somewhat fruity and astringent finish, almost reminding me of cherry flavored cough syrup, which in addition to that initial flavor really puts me off. Ranked 8/12 Guittard Oban 100% ($30.79/500g) - I bought these specifically for a chocolate chess pie recipe but decided to try a callet. I've never tried 100% cocoa by itself. After trying it, I don't recommend it. No sugar = extremely intense astringency that floods the mouth with saliva. Even with that reaction, the mouth still feels as dry as a desert. This chocolate is so astringent that my throat actually started getting scratchy and sore, and the feeling lasted for several hours afterwards even through drinking a ton of water trying to get rid of that feeling. My least favorite of the 12. That's not an indictment of the quality - I don't think it's supposed to be eaten by itself! Cacao Barry Tanzanie 75% ($43.39/500g) - Interesting flavor that's hard to describe. Bitter and coffee-like with a bit of hazelnut essence mixed in. Astringent and slightly fruity to finish. My 3rd favorite out of 12. Chocosphere is a great place for all amateur baking needs. I absolutely love their selection and will definitely be ordering more in the future.
