    I have used this Butcher Shop for processing my venison into other products for 10+ years…read more It is a neat, clean and well organized operation. My favorite products that they produce are pepper stick and pepper bologna. I'm not a fan of sweet Pennsylvania baloney and this pepper stick/pepper baloney is absolutely delicious. It's about as spicy as a Slim Jim, but not all greasy and full of fat. I've never had a deer processed here, but it is evident that they do a very good volume of total Deer Processing. What I do is bring in venison, in this year 25 pounds, and they convert it into pepper stick both in the bologna form and in the stick form. There is a nice large refrigerated display case right inside the entrance door featuring beef, pork, chicken, cheese, sauerkraut, and other products that they produce. I especially enjoy the beef jerky from this selection. I can recommend this Butcher Shop/Deer Processing business with no reservations.

I ordered a prime rib to smoke for Christmas dinner and set the date to pick it up and discussed how many pounds I needed for the amount of people we are having. I got there when they opened and there was already a line around the corner. No fear, they have so many people there I was in and out in 20 minutes. Told them we added two more people on and he recommended how much and cut it. I asked him to slice off the bone and butcher twine it back together. They had told me there was $5 charge when I preordered on the phone and I told him that was fine. When I told the guy today that I was smoking it and would cut off the twine, season the part where the bone was and twine back together, he told me he would net it after cutting the bone off and didn't charged me. This is choice meat but it is as close to prime as can be and their price was cheaper than other butchers I checked with.

On our way out we bought an American Waygu Denver steak, tallow, and lard which we cannot find at our local butcher. It had a great bun and a delicious burger sauce. Definitely a smash burger style. Fries were a little soggy for my taste but still good. The menu is small with only about 3 other sandwiches, I think this burger is the main reason to come! The store itself is small but has a few craft food items like smaller batch chips, chocolates, assorted ingredients, and of course, a butchery. There's a few tables inside in the back and outside as well. Note that while they do sell beer and wine, they cannot on Sundays. This place is worth a stop!!

Calling it a "hot dog" doesn't do it justice--this thing is a perfectly spiced, seasoned sausage, and it's enormous. It comes tucked into a super soft, fluffy roll, and we topped ours with Schmidt's homemade sauerkraut and mustard. Watching (and smelling) it sizzle on the flat-top grill right in front of us made the whole experience even better. The fresh-cut fries were spot on--especially with plenty of malt vinegar available (thank you, Schmidt's!). The whole meal could easily satisfy two hungry adults. Beyond lunch, Schmidt's has so much to offer--Wednesday Night Dinners with homestyle favorites, Friday & Saturday lunch specials (like their signature footlong sausage sandwich, brisket, smash burgers, and more), and of course their incredible butcher shop with sausages, bacon, sauerkraut, and seasonal treats. PRO TIP: Don't just wander in and hope for the best. Schmidt's keeps things interesting with their Wednesday Night Dinners and Friday & Saturday Lunch Specials, but the only way to know what's cooking is to stalk their Facebook page... unless you like living dangerously and showing up to be surprised.
