The food truck has a nice Facebook page where you can find their weekly schedule. This is very convenient for finding the food truck. It was parked in front of Washlab on University drive. It is brightly colored and hard to miss :) The health department gave them 100 for their last inspection. Excellent score!!! I ordered a combo with 3 quesabirria tacos, a side of potatoes and guacamole with chips and a drink. It was a 7 minute wait to get my food and I was surprised as it was delivered to me. My tacos were filled with soft delicious beef and a container of consommé. Wow! These tacos were loaded with meat and very tasty. The consommé was not too salty nor too greasy. The guacamole was about 2 tablespoons worth with about 8 chips. It was good. The diced red potatoes were so delicious. They were excellent. My combo scores 5/5. From a meat to taco shell perspective, this food truck was 3rd and second in taste. The quesabirria tacos they sell are extremely tasty and I will return to buy more. I saw several things on the menu I want to try. It is impressive they score a 100 health department inspection. If you like tacos, please try the quesabirria tacos. The flavor is different from a taco or street taco. They are several notches up in taste and flavor in my humble opinion. Please stop by and give this locally owned business your attention. My long time in Florida made those and Italian my favorites. There are amazing examples of all three in Florida. This place had a great menu, even for a special event ( see the pictures). I had the tripleta sandwich. Pastrami, chicken, and Italian sausage with onions and peppers in a roll. The sandwich was huge. I also got a beef empanada. The largest one of I've seen in years. You really get your money's worth from them. I love a good food truck, such a pleasant atmosphere to sit outside and eat outside. Definitely support these guys. Quick and courteous. They're trying to bring an amazing cuisine to the region. Try Puerto Rican food and you will find a new favorite. Fried plantains are a true guilty pleasure. They are on Sparkman Friday through Sunday, and at the Arsenal the rest of the week. Give them a try and you'll be hooked. A great addition to the Huntsville food scene.

We walked up to the window and placed our order. The lunch special was two Carne Asada Tacos so we got an order to go. We added a cup of Esquites, corn, and three chicken and three pork tamales to go. The Carne Asada Tacos were delicious, as was the Eaquites, and the two varieties of tamales. Our foods were so good we pondered which we liked best. The tamales are the best I have eaten. They have a bit of a spicy kick to them. If I were younger, I would eat more than the one I had. My stomach can't eat hot like I could years ago. The tacos were my favorite and hubs agreed but then said the tamales were awesome. The lady at the order window brought our food to our car for us. That was very nice of her. We enjoyed our trip to Teresita's Tamales Food Truck and we will be back to try other tasty items. They have excellent food and customer service. I wanted…read moreto like them so terribly because they look delicious, the folks running the business seem lovely, and EVERYONE raves about them. But I can't write it off as a bad batch or anything after trying so many times. The first time was a couple years ago right after the truck got its start. It visited a neighborhood in the OXR area and I made the drive over to try because I wanted to see what everyone was raving about. It was so popular and, as a result of being new, fairly slow -- and I wound up waiting in line for over an hour. I didn't like the tamales I got very much, but I wrote it off as it being the tail end of service and them being run ragged from the insane lines. The second time, my order was beyond messed up and I didn't realize until I'd gotten home and it was too late to get it fixed. The only thing that was right was my corn in a cup...much of which spilled in the plastic bag because the lid wasn't attached properly. Argh. Finally had some luck at a truly solid go of it at the Piper and Leaf Maker's Market a week or so ago. My parents and I wanted to share a light lunch and so we got a tamale combo to share. And, once again, it didn't do much for me. All three times, I've found the tamales fairly dry and, while not flavorless, not exactly bursting with flavor, either. Here are some observations: These are the more traditional style of tamale (as opposed to Delta hot tamales, which my mom loves), and like I said, I found them pretty dry on all my attempts. This is improved some by the addition of salsa or queso, but these are all added costs (fairly high ones for the meager amount you get - think fast food ketchup sized cup), and it's also easy to forget to order them. It would be nice if a combo came with your choice of at least one. The salsas, both red and green, have vibrant flavors and some kick. The rice and beans are standard but unobjectionable. They do usually have some vegetarian options, which is nice. I've tried the pork, chicken, and rajas (veggie) tamales. The best of the three, to me, is the pork -- it is faintly spicy and more moist, imo. But FWIW my parents like the chicken more, so who can really say? What I HAVE enjoyed has been the esquite (corn in a cup). It's been refreshing, with a pleasant texture and combination of flavors. I'd order it again. I've also enjoyed the pleasant service I've received each visit. In more recent times, they've expanded to doing dishes other than tamales: tacos, enchiladas, quesadillas, etc. They also sometimes offer dessert/sweet tamales, like pineapple or pumpkin. All of this sounds intriguing and I'd be willing to try it in the future. If more traditional tamales are your jam, then by all means give this nice local business a try. I truly think the problem is more a me problem than a them problem, but that's just my experience.

She made a really good observation that it was the simplicity that made it so good. I couldn't agree more. This my friends is not Americanized Mexican fare. This is authentic as you will get in Huntsville. It's cheaper and better than Taco Bell and I left saying Rosie who? If you are a Huntsvillian, then you will understand that reference.
