Marinated in miso before grilling, the tenderness and juiciness of the sea bass is locked in prior to simmering in the broth. Chicken broth with the bonito added depth to the dish. - Course 9: Black sesame pudding with tangerine jelly ~ THIS. This dish embodied the level of black sesame I expect for any dish.
