Fluke Hwe
Jasper S.

Not what I was expecting, but a fascinating take on some Korean classics worthy of their . The Fluke Hwe (광어회) arrived more like a crudo than traditional hwe. I was expecting chojang (초장), but instead it was paired with a subtly tart plum gochujang (고추장) that worked beautifully. The standout was the Lamb Jajang Myeon (염소 짜장면). At first, I was struck by how little gameiness came through in the lamb. Then I found myself chasing a flavor I couldn't quite place, something almost minty. It turned out to be the interplay between the lamb and Sichuan pepper, which gave the dish a surprisingly fresh, aromatic quality. The noodles were perfectly al dente throughout.

We were able to snag a reservation and wanted to see what the hype was about. It was so dark we thought it was closed in the beginning. We were seated at the counter and realized wine list is way bigger than the food menu. We got: Fried chicken (3/5): perfectly cooked. Not dry on the inside and batter was nice. Paired with a cream tangy sauce and caviar which was fine.. nothing crazy Toro ssam bap (4/5): we didn't get the uni for the extra $30. Whole concoction tasted good but not special, felt like I could make something like this at home..? Lobster mun (4.5/5): was really tasty. The foam was very lobster and addicting to eat. Noodles were bouncy. Nothing crazy, cool place to hang with friends but not sure if I'd come back for the food

Maybe bc i heard so many good things about jeju noodle bar my expectations were quite high. I'd def come back for the toro ssam bap and order one for myself!!! Each bite was divine and I genuinely got sad as the dish was being finished. Super flavorful, each bite was literally perfection. Mushroom ramyun was good during the first few bites, but it started to get rlly salty. The lime does help lessen the saltiness, but each bite did seem to progressively get saltier. It came with a lot of mushrooms and different varieties as well which I rlly liked! The thin noodles were also cooked nicely. Lobster ramyun was also rlly delicious during the first few bites, but got progressively got saltier and heavier. The sauce is almost like a bisque, but with a slight kick which I quite enjoyed. Noodles were cooked to perfection, a lil thicker cut, and nice and chewy! The toro ssam bap was definitely the highlight and michelin1 worthy. The other dishes were still delicious but i did find myself continuously drinking water after each bite. Service was ofc excellent and thorough.

This was our 2nd time dining at Jeju Noodle Bar and the first time since they received their first Michelin star. We started with the Jeju Fried Chicken, and it set the tone right away. Perfectly cooked, crispy without being oily, and packed with layers of flavor. The caviar might sound extra, but it makes total sense here, adding this salty, savory pop that turns each bite into something special. For noodles, we split paths: I went with the Wagyu Ramyun. Rich, beefy, deeply satisfying, basically comfort food dialed way up. My wife ordered the Gochu Ramyun, which was spicy, soulful, and loaded with pork belly so soft it practically melts on contact. We were very please with our meal and it was better than we remembered.

We joined the waitlist on a Friday night and miraculously got seated. A dark lit, intimate dining experience with endless delicious bites and options. Here's what we ordered: Toro Ssambap: 9.8/10 - filled with umami and deep flavor. This was my favorite dish and I would probably be tempted to order this again. Wagyu Ramen: 9/10 - filled with umami and deep flavor and endlessly rich broth. Seriously delicious. Jeju Fried Chicken: 10/10 - the sauce that this came with made this fried chicken probably the best we've ever had. Topping it off with caviar made us completely forget we were having something as "casual" as fried chicken in an upscale restaurant. This is a must order!

Tender Ribs. Must try
William H.

We got 3 Appetizers. The ribs were really tender and falls off the bone. The tuna was excellent with caviar. The fried chicken to me was nothing special. It does come with caviar as well. That would be the one that I would drop. The entrees were definitely not normal noodle dishes. The lamb ja Jang is very herby tasting and a bit sweet. First time tasted ja jang so maybe it is supposed to be sweet. The Gochu Ramen is also very herby tasting. I did not try the Wagyu. The one most closely to a normal ramen is the Family ramen. It is also full of shrimps. Service was excellent and seating is definitely limited.

We came here for our anniversary and quite honestly also using our Resy credit from AMEX platinum. Still pretty hard to get a table, our choices were at 5:15 or 9 PM. We went with a late dinner. We did have to wait 15 to 20 minutes, they did give us some complimentary champagne. We went with the truffle appetizer, great amount of truffle, very nice contrast with Yuzu sweetness, and the sadness of all the mushrooms on top of the scallop, which was a little bit obscured. Then we got the Wagyu Ramen and the lobster mean. Both were incredible, way you was savory, medium, rare, very rich. A very distinct Ramen. The lobster noodles were so good though . It was like a very strong lobster bisque, I wish there were more noodles. It was so rich it made the wagyu Ramen taste almost diluted. Eat the wagyu ramen first if you can

My mom and i have been fiending to come here for so long! Decided to take our chances on a friday night and put a name down. Christine and i waited at katana kitten nearby and they called us after like 40 mins. Mom rushed down on the subway and got off at 14th st so she had to switch to the path. I ordered a glass of white wine to keep me company while everybody side eyed me bc they have a STRICT 90 min dining limit.... Which is one of my biggest qualms abt a lot of nyc dining..... But everything was delish! The toro ssambap is great idt u need it in ur life tho, liek 56 dollars is madness luv. Ceviche (think we got amberjack?) was great. Lobster noodles yum VERY savory and heavy u shld share them. I would come back here but i wouldn't like do the mostttt to come back ykwim

Service: 4/5 Food: 4.3/5 Price: $30-$70 A unique blend of an intimate + lively vibes with its dim lights + loud music (although not jarring). Definitely a place to dine with others + most everything is easily shareable. They have a 90 min dining window, however, I think it's only enforced if there's another booked party. Despite the time limit, neither the service nor the pacing felt rushed (server took a while to take our order). Might be a controversial take, but the noodles aren't the highlight of their menu. everything else is more worth ordering. What I Ordered: - Toro Ssam Bap*: lots of elements, good rice to seaweed to toppings ratio, roasted seaweed SO fresh - Fried Chicken Leg*: less Korean-style, more reminiscent of Church's, super crispy breading w/ juicy + tender meat, comes out HOT, sauce + caviar aren't necessary, just good complements - Family Ramyun: flavorful broth without being too rich/salty, love the thinner noodles, lots of meat + toppings, but once split, kinda small + not enough soup - Lamb Ja Jang Myun: so saucy I wanted rice for the leftover sauce, has the noodles of a normal jajangmyun, but the meat of dan dan mian, spiciness builds

I've been trying to get a reservation to Jeju Noodle Bar for a while, but it's been tough on Resy. I tried Resy notifications for a recent Friday and Saturday and was offered reservations for both nights (took the Friday), so I think this is the way to go about getting in here. The space is small and cozy; there seemed to be mostly parties of 2-4. Service was great. Food rundown: Toro ssam bap (fatty tuna, scrambled egg, shallots, jalapeño, toasted seaweed, caviar): Yes. This is the dish. If you get one thing here, get this. It's kind of like a make your own sushi project, where you can wrap up the extremely fresh and flavorful tuna, rice, and other ingredients into the little toasted seaweed wraps that you're provided in a separate bowl. All the ingredients just taste so good together, and I think they used sesame oil too, which I always love. Fluke Hwe (fluke, red onion, cucumber, plum gochujang olive oil dongchimi emulsion): this is the one dish that didn't quite work for me. While the fish and veggies were really fresh and I liked the crunchiness of the dish thanks to the cucumber, the fancy-sounding dressing mostly reminded me of an Italian dressing and it overpowered the rest of the dish. Mushroom ramyun (mushrooms, Parmesan foam, lime, chervil, garlic chips, pickled garlic): The mushroomy broth and the parm foam on top make for a real umami bomb. Loved this. Lamb ja jang myun (lamb ragú, black bean sauce, Szechuan, pickled onion, herbs, cucumber): very good. The lamb works really well with the black bean sauce, which tastes like a more pungent soy sauce. It has a gentle spiciness.

Michillin Star-worth a visit! My friend who is local, and few of us were walking around the area due to really long line in L'Industry pizza up the street. We tried to do a walk -in for 4 of us for a meal, but that was a fail, basically resy only. So my friend decided to try online after we left. And we lucked up and got a resy for the next night at 8:45pm. We arrived early, but we weren't able to be seated, so we walked around the neighborhood first then came back and were seated. The place is nicely put together, cute bar, and mood lighting all over. Service- was amazing from start to finnish. Meal was nicely timed. Multi servers checked on us. And it was great service overall. Attention to detail for sure. Lots of suggestions given by servers. Food- we shared a few dishes, but each ordered individual entrees. We shared the Toro Ssam with the cavier, was indeed worth it. This is essentially there signature dish, based on the reviews. We also split the ribs, which were fall off the bone tender and yum. And there truffle dish with mushroom was delicious. Then we got the Korean fried chicken with cavier. It was so crispy and fancy. For my main dish I got the lobster pasta. I was so full, but forced myself to eat every bite. It's very rich, but umami for the win. My friend that lives in NYC that I went with, has already been back. I would too, so I don't blame her, lol! Enjoy!

I'm recreating the sambap dish at home because I'm so sad I can only get this dish when I'm in New York. It's THAT good! Every bite I had to close my eyes and I saw fireworks. I've watched the Michelin star chef talk about this dish and it was really clever how he came up with it. I also grew up eating egg sambap for breakfast and it's so comforting but eating a higher scale version of it was not in my 2025 bingo card. I never knew fried chicken and caviar was a thing but now im obsessed. The crust to meat ratio was on point. The breading had a bonito dashi flavor to it which perfectly paired with the caviar and citrus olive oil aioli. Not to mention the chicken meat was ridiculously juicy. Wagyu ramyun was great but I probably wouldn't order it again. The soup tasted like the cozy $20 Korean soups drenched with overpowering sesame oil. The Wagyu meat melts in your mouth but it definitely gets overcooked if it gets lost in the bowl and you eat it later. The chef did recommend to eat this ramen right as it's served and eat it fast because the texture of the noodles will get compromised Inside is dimly lit and a bit more condensed (not super spacious). Service wasn't great. They took a really long time to come to the table despite trying to get attention. They also had a different energy with certain customers. Our food took an hour to come out even though we had a reservation we made in advance. The food quality was the saving grace.

JeJu Noodle Bar Reviews in Other Languages

Ask the Community - JeJu Noodle Bar

What is the wait time for walk in on Sunday at 5pm?

I've been trying to make reservations since the date opened up... it doesn't say full but I can't book for 4 people tmw still. I literally waited 2 weeks before every single day. What's the trick?

If you are okay with early dinner, I'd just show up early when the restaurant opens and be on the waitlist.

Can you pay cash?

yes

Does this place talk walk-in's?

Based on my visit, no but I was on the waitlist for a reservation and was notified of an open table a few days before our trip to enjoy!

Smallest reservation sizes allowed on Resy are for two people, but is there a bar area or something that one person could come alone and still enjoy a meal here?

Yes, there is a bar. I'm sure if you call you can ask them for a seat at the bar.

Do you take walk-ins? It's impossible to make reservation.

No, you have to make a reservation

I've read that the reservations on Resy can be made 2 weeks in advance. What time do the slots for the 2 weeks in advance open up?

Midnight on Resy! Example: If you wanted to book a reservation for June 15th your best bet is going…

Do they still take reservations for 4 people? I tried making a reservation on the dot at 12 AM 4 times and have never seen any slots open.

I just went on 2/16/22 as a reservation for 4 people! I do have Global Dining Access on Resy though through Amex, so I can see additional openings. You can't do a reservation of 5 or more though without e-mailing them

Do they still have their prix fixe menu?

Just dined there and did not see anything Prix fixe on the menu, only appetizer and main course.

Is outdoor seating still available? Thank you!

Outdoor seating was not available when we went in early September 2021.

I see that they don't take reservations for 1 person, I'm assuming it's okay to walk-in? Thank you!!

Thank you for your inquiry, we currently do not accept walk-ins. Reservations can be made for parties of 2-4 via resy.

If we can't get a reservation, what is the best time to walk in for a table? Would we be able to get in the first seating if we waited outside before opening?

They do not accept walk-in.

How far in advance do you offer reservations?

Thank you for your inquiry Joe! Currently you can book reservations of 2-4 guests via Resy two weeks in advance of the desired reservation date. We look forward to welcoming…

Do they have heat lamps for outdoor seating?

Yes

Are there gluten free noodle options?

No.

Is this place child friendly?

It's kind of small but yes. Saw a family stash their stroller in the back. Kids can sit at the tables. But there is no kids menu.

Is anything vegan?

The B&B Edamame is vegan - steamed black edamame w/black chili garlic sauce. There are also these options that can be made vegan if u ask them to omit one of the ingredients: The Soon Du Bu - sun dried tomato broth, soft tofu, fine herbs, green…

How long is the wait on a weekday?

Hi Jina, On weekdays it depends on when you arrive and the party size.…

How long does it take if you do the prix fixe menu?

4 of us went on a Friday night. Even they were busy, it took 1ish-under 2 hours on the prix fixe.

Do I need a reservation for one person?

The one time I went on a Saturday night I walked in and waited for about 10 minutes before getting seated.

First I'll start with the wine - we ended up trying all three happy hour wines (HH until 7), which the tables favorites were the white and we ended up getting a bottle to split once HH ended (but I really enjoyed the other vino verde option). It was incredibly refreshing and paired well with the many tinned fish options. As you'd expect - it's a pretty massive selection and there is bound to be a varietal and glass for any palate. It's also attached to a wine store - so it's fine to see all the bottles when peaking over. Food-wise - this is where it was hit or miss, they have a pretty extensive menu (with a whole tinned fish section!) and we ended up ordering the buratta on focaccia (buratta was excellent, focaccia was too dense for my tastes), mushroom truffle crostini (way too salty), the flatbread with sliced kielbasa (was fine), halloume (table favorite ), tinned sardines in lemon oil (delicious), tinned smoked trout (my favorite). Overall the four of us were very full at the end of the meal! The space itself felt very relaxing and rustic, and definitely got busier as the night went on (we got there at 6:50 and left around 9). The service was also fast and attentive - even for the amount of tables they were serving. Overall - I'd definitely go back again, and maybe just focus on the wine and another tinned fish selection!
