Every detail was attended to, the food was fabulous, the staff friendly and efficient and the at-home 80th birthday party was a big success. He suggested a six course meal that included mouth watering appetizers, a delicious main course of the local catch with chorizo and a fork-tender teriyaki steak. We had Chef Ed cater for our 60-person wedding in Oahu. Chef Ed won me over with his professionalism, FANTASTIC communication, and respect for working within a budget. We didn't have any time for a tasting preceding the wedding as we were organizing from afar. The menu we had had some hits, and some items that I probably would have changed if I'd had the chance to taste preceding the wedding. Appetizers - Ahi poke bites, mini roasted mushroom flatbread went down very well Mains - Kalua Pork was by far our number one hit! The scallion chicken unfortunately was a bit tough and dry. The fish 'en papillote' we had was also a bit too meaty/tough for my tastes. The vegetarian options - roast miso eggplant and pulehu Tofu were delicious and beautifully plated and I wish we had offered them to the meat eaters also! Sides - Charred Ewa sweet corn salad was delicious. The guava butter was amazing, but the rolls I was told by guests were dried out by the time they were served. Overall Chef Ed was great to work with, and I chose him because he was very considerate of my menu requests and budget, and because he certainly can make some fantastic food. This was my first time using a caterer (besides getting food catered by a hotel or restaurant) and I'm kind of a food nerd so I enjoyed it. Chef Ed was very quick to respond and very accommodating to all my needs including my price point. I asked for $20 per person and quoted me $16 per person which gives you room for tax and tip. He was very flexible with the menu. I was only needing a couple of dishes for my 2 year old's small birthday party. Menu was: -JD baby back ribs - DELICIOUS. Everyone loved them. Chef said they were even better fresh and had that crunch. He brought them all wrapped up with no holes (I imagine for transporting them) so they lost that crunch but were delicious. -chicken yakisoba noodles with vegetables - because noodles are my daughter's favorite food. They were also yummy but if I were going to have a non-child event I probably would've picked something more grown-up. -truffle miso butter corn. They were also yummy. I told him I would pay more for organic corn and he said he would do that no charge - yay! I ordered food for 20 people, not everyone ate (party started at 3 and food arrived around 5pm, and people left early). I have a TON of food left. I think his portions are quite generous. Food was due 5pm, but he arrived early which was also awesome. He set everything up, was very nice and professional. I want to hire him again but I would prefer to have him cook or serve at event so I don't miss out on that crunch again, and also order more grown-up dishes like I see in the pictures. read more

We planned this a bit last-minute and wanted to feed 32 people who were staying at the estate where our son was to be married the following day. Chef Ed was incredibly responsive and willing to work within our budget. He delivered a fabulous feast - the "Local Boy" En Papillote fish dish was especially outstanding. We had some people with food aversions/allergies and Chef Ed delivered custom servings for those individuals. Chef Ed responded very quickly to my inquiry for catering my destination wedding in Honolulu. I looked at other vendors and recognized that many of the local catering menus offered food traditionally served on the island. The customization Chef Ed allowed appealed to me. Although my then fiancé and I would be okay with traditional island fare, the 16 or so friends and family members attending our wedding from Louisiana would not be as open. Chef Ed allowed for menu customization based on cost per person. I wanted beef short ribs and corn with miso butter based on the reviews I read on other sites. Chef Ed suggested roasted pork and garlic cream mashed potatoes as additional options that would fit in my budget. I also had a salad to offset all the carbs. On my big day, Chef Ed arrived exactly as arranged and set up everything in the penthouse suite we rented. We did his "drop off" catering, and he provided everything needed. There were nice little touches like cards describing each item and the more formal looking disposable plates and utensils. The food was absolutely epic!! All our guests commented on how good everything was. To people from the New Orleans area, where food and flavor is a big part of our culture, making such an impression is a really hard thing to do. We had plenty of food left over as we ordered for 20 guests and some were children. I am sure the food could have served 20 men well. We invited our guests to come back for lunch the next day. Believe me, we had takers for our offer. The food was just as good reheated. My husband and I commented how we wished we could take Chef Ed home with us for more of his cooking. The whole process was easy. I did not have a wedding coordinator, so easy was key for me. I was able to put down a deposit and make two other payments which helped make it more affordable. ABSOLUTELY INCREDIBLE MEAL! If you read no more, know that I would hire Chef Ed a million times again! My story: I booked a trip to Oahu, first time ever in Hawaii and rented a house in Waialua, near North Shore. I wanted to experience the local cuisine but not the local tourist traps of tons of people at a commercial Luau. I stumbled across Ed and was immediately impressed with his Philanthropic nature and commitment to his family, community and children. I requested an interactive meal preparation to take place in the rental house and Ed was very accommodating. He suggested a menu based on what I told him what I was interested in. He prepared Ahi Poke, Traditional Pork Laulau (pork rolled in Luau leaves), Pulehu Chicken, Kauai Shrimp Scampi, En Papillote (fresh fished, baked), and Traditional Haupia Squares and fresh pineapple for dessert. Ed also prepared another 4-5 off menu items. He was very generous with the menu and welcomed our participation in the preparation. We only participated in the prep of the pork Laulau but Ed continued to prepare while we quizzed him on his culinary experience and background, local community and customs, and cooking tips. He should have charged us extra for the cooking tips but he was happy to share any cooking tips. The menu was intended for just 3 people and but 2 local neighbors joined us and we still had a ton of leftovers. Ed was completely self-sufficient with his cooking ware, plates, silverware, cloth napkins and table cloth and he cleaned up everything. Ed shared with us that he does larger events (I think 100+) as well. I would highly recommend including Ed in your next meal plan when you visit Oahu. I contacted Chef Ed from my home in Scottsdale, Arizona as we were planning an evening wedding reception at the "Duke" Presidential Suite at the Hilton Hawaiian Village. He was so easy to work with and had great suggestions for a pupu presentation of Hawaiian Regional Cuisine.
