    Been there half a dozen times. Cannot report a bad experience. Food and drinks are good. They have empanadas which I enjoy.

I lived here in the late 90s and remember when it was on the corner of Clay Street, and I was drugged in by a couple of friends from high school, saying that they had the best food, I'm such a picky eater, and I didn't think I would be able to find anything at a place called chuckwagon, that I'd be willing to eat... oh, but I was wrong! They have something for every pallet and the food is all amazing! When I move back 14 years ago and saw it was no longer on the corner of Clay Street in 159, I literally felt a pain in my heart and I lived here for over a year before I mentioned to someone else how I was upset that Bert's was no longer around and how I couldn't believe it shut down, just to find out it hadn't, they had just moved a main street!! I was there with him 48 hours and oh my goodness how I had missed the awesome that is the Chuckwagon! Whenever I am asked what we should do for dinner by people who are in town visiting and they can't make up their mind on what cuisine they want, I tell him we're going to Bert's Chuckwagon, watch them, wrinkled their nose, tell them too late. I've made up my mind and that's where we're taking them and I get them there and I watch their eyes widen, as they try the food! Bert's is the best open secret Collinsville has to offer and if ever you find yourself, not sure where you wanna eat or have guests in town who can't decide between Italian/Mexican/chinese or just a good old burger, make the executive decision and tell them you're taking them to Bert's. Make sure that you emphasize the chuckwagon, watch their faces as they come to terms with what you just said and try and talk you out of it, but stay firm, stay quiet about what they're getting ready to walk into, and take them to Bert's!

We are always greeted by someone quickly and service is always outstanding! I'm obsessed with their super tacos but that's because I prefer a flour Shell. If you like a corn shell better stick with the regular size. I didn't get one this trip but their mini pulled pork sandwiches are also a great choice! Prices are reasonable and whatever they do to their soda it's the perfect mix With the "sonic" ice!

However, tonight's experience was very disappointing due to a waitress who apparently didn't want to wait on us. Upon arrival, we asked if we could sit in the bar area and was led to a dirty table. Instead of her wiping the table and removing the trash that was left behind by previous patrons, the waitress places the menus down and starts to walk away. My aunt then asked if she could remove the trash and wipe the table. The waitress looked angry, walked over to an employee who was wiping another table, took the cloth from her then proceeded to walk over to our table. She didn't bother to rinse the towel or apply more cleaner but wiped the table and walked away with an attitude. My family and I decided to leave instead of staying to see what other trifling and rude service we were in store for. When my family member called the manager, he said the waitress is nice and something must have happened to her for her to act that way. Say what?! He actually made an excuse for her nastiness towards us and thought it was ok. No thank you! We will not spend our dollars where we are mistreated. That's your job to make sure the tables are clean and to be of service. We had a very enjoyable experience with staff and food at Rio Grande! After pleasantly greeting us, the waitress said "let me make sure your table is clean" before she escorted us to a table.

As always, the service was friendly and attentive. My server had a larger group of 10 at another table, but he still was able to give me a single diner attentive service as well. Also, my Chava's Quesadilla with shrimp was top notch. I recently have become obsessed with having shrimp in my Mexican food and their version of a quesadilla with shrimp, satisfied my craving. I also appreciated their presentation on the plate and how they sliced it up into manageable pieces. My disappointment came from my Margarita and the Chili Con Queso. I always get the Top Shelf Margarita and today's, seemed very weak and the mix was also flavorless. The Chili Con Queso was the true disappointment. The menu described it as Spicy Mexican Cheese Fondue, "blended with" jalapeños, onion and tomatoes. When it was served, there was no blending. It simply was the cheese fondue with a scoop of Pico De Gallo in the middle. The complementary chips were warm and crisp. The salsa was chunky, but needed a little more spices in it give some pizzazz. I haven't given up on Chava's, I'll be back. I enjoy their main dishes too much, to mark them off my Mexican list.
