They have a patio but it's strange and didn't feel like they enjoyed having outdoor tables. The space indoors is a good size with lots of seating. Large parking lot. This is our go to Mexican when in Collinsville. Yes, it's TexMex. We winter in the RGV and the food at Carisilos is no different from what you get at one of the places around the RGV or Progresso MX except they do not serve french fries with every meal at Carisilos. read more

Just average standard tex-mex. I had heard good things, but I know who not to listen too now. It wasn't bad, and it wasn't good. Lots of "cheese" sauce. Very Americanized, the tacos come in flour tortillas with Lettice, tomatoes, cheese, and sour cream (not a single one of those ingredients is a standard taco ingredient). Its fine if you like Tex-Mex a lot, I was just disappointed. I would send the most white-bread basics I know here and they would probably love it, but as a fan of Mexican food, I'll have to pass. read more

I have loved this place from the first time I ate there, not long after they opened their doors (in their prior location). I loved taking my Mom there because although she was a person who could not handle any heat or spiciness at all, she was still able to eat here, thanks to the availability of mild choices. My Mom's absolute favorite dish here was the Encheladas de la Casa, and it soon became my favorite as well. It is absolutely delicious! I have never ordered anything that I didn't like, and they have a large and varied menu. I really feel that I am treated like family here and plan to continue supporting this local business as often as possible going forward. Five out of five and highly recommended! read more

Server Maria was too rushed, not friendly, didn't even know what sour cream sauce was for chicken enchiladas, didn't have chile con carne, just a red sauce, she looked at us like we were stupid. I burnt my fingers! They have a very reasonable lunch special from 11 AM to 3 PM. I got the speedy Gonzalez platter (picture). it was about 4 1/2 bucks. The food here was aiiiiight. It came it entirely too quickly and it scared me a bit. I have been here before but not for a long time and after my gym workout (yes my gym workout!) and I was FAMISHED! So I wanted to stop somewhere that would feed me immediately upon sitting and I thought- MEXICAN! So the chips and salsa came and then life was good. I ordered the beef chimichanga with no beans on the plate, just double rice and just when I got into a handful of chips and salsa, my food arrived! Quick service. So quick it was scary. My mind immediately went to all those episodes of Kitchen Nightmares......but I digress... The food was good and hot and it did the job. This is a fantastic Mexican restaurant. The food is really, really good! My family comes often and everybody has a favorite. Cheese quesadillas, bean burritos and veggie quesadillas are favorites with the family. But the Chile Relleno is fantastic. They serve it so hot and it is exquisite this way. read more

Carisilo's is warm and welcoming on the inside, and offers more seating than what you would think. The salsa and chips are served right away, and the chips are nice and toasty! The menu is decent, and there are plenty of options for even the pickiest eater. I ordered the burrito grande, my wife got the nachos fajitas, and my kids went with the burgers. Overall we enjoyed the food, but weren't absolutely blown away by it. The burrito was on the smaller side, with the stack of lettuce/tomatoes bigger than the burrito itself! And the nachos fajitas were good, just lacking in the "wow" factor. I've had better Mexican, but I've also had far, far worse. read more

I stopped in this place while working in the area, and had a craving for Mexican food. I was seated right away, and hot fresh chips, along with a healthy bowl of salsa. The salsa was absolutely delicious, and I consumed the whole bowl before my food hit the table. I ordered the fajita quesadilla, with rice and beans. The quesadilla was huge, and was very good. The rice was even good, as it is usually dried out at many places. I ate about half of the plate, and took the rest home for another meal. I recommend skipping this restaurant. The kitchen does not Season food well. Over salted or bland... no in between here. Chips were unseasoned. The salsa was good. The shredded chicken was dry, tough and without flavor. My husband ordered two chicken enchiladas. I ordered 2 tacos, 1 chicken enchilada and Chile con queso. Chile conquest was a tostado shell topped with ground beef and queso. The ground beef had good texture but was overacted big time. The red enchilada sauce was odd... slightly sweet and thinner than most. We just tried everything and decided that none of it was with boxing up for leftovers. We will not be back. Formerly, El Rancherito Authentic Mexican Restaurant. After seeing numerous people commenting on this place on their facebook's and such I decided it was time to try it. I had never tried it before and figured it was time to start finding some Collinsville favorite places since I have been living back in town now for better than a year. First of all, people misjudge this place for not being the most fantastic looking joint. Sure, there are some bare bulb like fixtures and when we went the floor wasn't swept.. but once you taste this food, you won't really care. The time it took to get our food was the only reason this place didn't get five stars. No big deal though, we weren't in any hurry and the chips and salsa were keeping us busy. I ordered the Pollo Carrisillos and it was awesome! By far, probably the best mexican food I've had to date and believe me, I've tried a lot of mexican food. Everything arrived piping hot, and the portion sizes are gigantic for the price. The dish I ordered had TWO chicken breasts on it and with all of the rice and beans etc I threw half of it into a tupperware at home to take for lunch the next day. Two full meals for less than 9 dollars, you can't beat it. My husband ordered the Chimichanga Fajitas and was equally impressed. Ranchero sauce mixed with cheese and drizzled over the chicken, yum! Definitely a step above the rest of the Mexican restaurants in town. The only other restaurant that seems to come close is La Fonda in Glen Carbon. read more

This has been my favorite place for Mexican and margaritas since they were in the old building where CVS is now. Great food, awesome staff, and fun environment. The outside patio is perfect on nice days. The chori pollo has been my go-to dish since they reopened in the new building. As for the margaritas, you have to get the "golden," it's a huge difference that you can't go back from once you've had them. Also, they have a really good spicy salsa you can ask for with your chips if you like some heat. Overall it's an incredible place to eat and I've never had a bad experience yet, even with big groups on busy nights. read more

We were passing through town and the great reviews brought us to Carisilo's. The food was great! I had the burrito grande. It came with guacamole and a salad, and a delicious cheese sauce. The steak chunks inside were so tasty! Usually the quality of the meat in inexpensive restaurants can be a hit or miss, but this was great! The pico de gallo was delicious too. I've heard many great things about this place from people all over the region - like how different it is from other Mexican places. I went in here for Cinco de Mayo, and I was one of the first customers that day as they opened. I knew that all Mexican places and bars were going to be busy for the obvious reasons, so I tried to bear with them. I was seated right away, and got a jumbo margarita (which was a special), then I ordered. It wasn't until probably 20 minutes later that I got my food. This is not typical of a Mexican restaurant, as I get my food usually five minutes after I order (even though most is pre-made anyway, but still...). The reason I'm holding a bit of a grudge is because it seemed the waitress and chips lady spent more time seating people then wondering about me, as groups of people started coming in. My food was in the window for a long time, so yeah, I didn't tip the lady as part of her punishment. Food was delish, but not so sure about Carlisio's. read more
