    Asada and lengua

Wow the best tacos! So flavorful and for the price it's so much food. Not your typical street tacos, it's even better! The customer service is 10/10 and the food came out fresh to order in under 10 minutes. [[HIGHLIGHT]]Perfect to stop by and go to a near park. There's a couple of tables next to it and outside cover and some parking.[[ENDHIGHLIGHT]] [[HIGHLIGHT]]Good ambiance in mercer island too and get food![[ENDHIGHLIGHT]]

First time here, will definitely be back! The owner was very outgoing, especially for a truck, and provided a rundown of the menu and gave his personal recommendations. The food was ready pretty soon after ordering, which was perfect for the lunch rush. Lastly, the food itself was amazing. Best lengua I've had anywhere in the world, hands down! Shrimp and Al Pastor were top notch too, and asada was solid but nothing special. it was obvious everything was homemade using fresh, quality ingredients. My meal was on the pricier end, but I definitely didn't need a fourth taco. Frankly, I probably would've been satiated with just two...

Taco truck on MI??!! So good. Had the arrachera (skirt steak) taco plate which was delicious. Healthy portion - Comes w rice and beans and 3 soft taco wrappers. Also got the lengua (cow tongue) quesadilla - savory, chewy, cheesy goodness. Everything was made from scratch. If you like it spicy, ask for the extra hot sauce on the side - it's got some serious kick. Nick was so friendly and helpful with good suggestions. Yeni, his wife, was the master chef. Worth the drive even if you're not an Islander.

Amazing tacos! Im from California and was looking for something on that level and these tacos were worthy, 10/10. I had the fried panela & pastor and my husband had pastor & asada. Tasted super fresh and the aqua frescas are delish too! Will be back for sure.

    Camaron (shrimp) Tacos x2. DELICIOUS.

How did I just find this place?! It's so good! TLDR: delicious, fresh, high quality! Food: camaron (shrimp) tacos - my favorite. They're bigger sized tacos in steamed corn tortillas, with a bed of light perhaps pickled coleslaw, 3 juicy plump seasoned shrimp, and a layer of salt spicy creamy perhaps chipotley sauce. Every bite was insanely good. Portion size is great - not a small taco, probably 2 would fill you up. Also had the Asada burrito with no beans. Burrito had the most perfectly crusted burrito top but soft and chewy tortilla, layered with crisped cheese, Coleslaw, soft juicy flavorful rice, and seared beef. Pour some avocado salsa on top and boom. Heaven in every bite. The food here was AMAZING. Service: really cool guy who asked if it was my first time (it was) and told me I'd love this place. Fresh ingredients, made to order, nothing canned. Very welcoming. Parking: easy as it's in the chevron parking lot, but there's a larger lot behind the chevron. This place is legit good. My favorite Mexican food truck I've ever had here in the PNW.

Hands down still the best tacos in the state. So happy they added the Baja fish taco. The owners are so kind and you can taste the love in each bite

Skirt steak, shrimp, Al pastor, and asada tacos

Nico runs point in the food truck and he is incredibly warm and friendly. It feel like we're good buddies that have known each other for years after a five minute interaction. He is co-owner of the truck with his wife, Jenny. They bring recipes from her hometown of Hidalgo and have named themselves after the bright and vibrant flowers found in the region, bugambilias. I got greedy and ordered 4 tacos. 2 would have filled me up. They are larger than you would expect for a street taco. The tortillas as fried up on the flat top and are fresh. Didn't have any breaks or tears when I folded my tacos up to eat. The shrimp taco has big shrimp. The flavor transported me to a warm beach on a summer day. The slaw salad was perfectly balanced to the slight kick of heat on the shrimp. The Al pastor taco was crispy pieces of pork. It had fresh slices of pineapple on top. It wasn't smothered in sauce which I prefer. The skirt steak taco was a surprise from me. The potato was way better than I was expecting and the slight vinegar of the pickled red onions kept it feeling fresh and light. The asada taco had small and cispy pieces of delicately seasoned meat and thinly sliced onions which were just shy of being caramelized. The horchata was thicker and creamier than the one I was used to. No doubt this was more authentic! Other food trucks need to take note of what bugambilias is doing. The food here is LEVELS above any other place I've had.

This is my new go to eastside taco spot! They have great vegetarian options. Preferred the stuffed jalapeno taco to the fried cheese one. Came out piping hot!! Sauces were delicious.

The best tacos around. Delicious, fresh, and great portions! Also, can't deny supporting other 12s! GO Nick and Yeni! GO HAWKS!

[[HIGHLIGHT]]Nice truck in the chevron parking lot![[ENDHIGHLIGHT]] [[HIGHLIGHT]]There were few people when we got there and what looked like quite a few orders lined up ahead of us.[[ENDHIGHLIGHT]] It took about 10 minutes for the food to be made but I never mind waiting for good food. The special of the month is a California burrito and I couldn't pass that up! I didn't try the taco my bf had but the burrito was delicious. It was so big that I couldn't finish it but so good that I couldn't put it down. Too bad it's just a special and not on the menu permanently!

So this food truck deserves a lot of recognition. Nestled at a local gas station in Mercer Island -- complete gem. Not just for food, but for above average service. The man whom took my order was passionate about the food and he might be the owner; i'm not sure. However, he walked me thru the menu. He was very descriptive about the food. [[HIGHLIGHT]]And above all else made me feel like I was home begging my mom for food (Nostalgic).[[ENDHIGHLIGHT]] This restaurant family is doing things for food truck culture that reminds me of Roy choi. Everything is scratch made, Before i got a chance to taste the food I sent my father a text that we need to come here together. Cannot wait to come back and try more. Many thanks!

I've had their street tacos, habanero enchiladas, California burrito... everything is great. The burrito is huge and full of fries, beans and meat. The meat is super tender and flavorful. The enchiladas have a super spicy, luxurious sauce that I couldn't get enough of. Their guacamole appetizer is also awesome. The inside has like three zones - a darker, moodier corner with booths... then high tables near the bar that are airy, with a ton of light... and then an outdoor area with umbrellas to keep the sun from beating on you too bad. They're all a great vibe -- just different. This is a beautiful, modern, clean restaurant that fits perfectly into Bellevue's scene -- but it almost has too much 'corporate polish,' like a Microsoft high-rise tower. My only mildest of criticisms is that this polish kind of obfuscates how soulful eating Mexican food can be.

The menus and water took a while to get to us, but we were given a basket of chips and salsa pretty quickly. After receiving our menus, we eventually had a server who seemed to give us pretty prompt attention. Party got the steak fajitas ($29), chicken enchiladas, vegan vegetable fajitas ($23.99), and the California burrito ($29). For the most part, all the food was good. The steak fajitas were the worst dish as the steak was dry and overcooked. But otherwise everybody enjoyed their food however, the price did not seem to match the quantity or service provided. I'm shocked at How expensive all the dishes were! it's crazy!

You know, the kind of place where you sit down thinking, "We'll just have one drink," and suddenly it's three tequilas later and you're talking about your childhood dreams. Speaking of tequila... WOW. The tequila selection here is basically a library, and the bartenders are the very enthusiastic librarians. They know everything. My partner and I were lovingly escorted through a full tequila tour before our food even arrived, and honestly? By the time dinner showed up, life was beautiful and all decisions felt correct. Needless to say, we were having an excellent time. The food definitely holds its own too. Everything came out fresh, beautifully plated, and tasting like someone in the kitchen actually cares (which is always a plus). We split a few dishes, including the Carne Asada and the Pescado. The Carne Asada was good, though it could've used just a bit more seasoning, nothing tragic, just a gentle nudge from "good" to "wow." The Pescado, however, was fantastic. Topped with olives, capers, and tomatoes... I mean, how do you even mess that up? You don't. And they didn't. Bonus points: they're open late, until midnight on Fridays and Saturdays. So if you find yourself wandering the streets of Bellevue after hours, questioning your life choices and craving tequila and good food, congratulations, you've found your place. Overall: great vibes, strong drinks, solid food, and bartenders who will happily teach you more about tequila than you ever planned to know. I'd absolutely come back, and probably let them "educate" me again.

The first thing to know is that it can be a little tricky to find if you're not familiar with the area. It's located on the second floor of the mall, and the easiest way to access it is through the parking garage. I really loved the decor. It was clean, modern, and had a great atmosphere. I was greeted by a very friendly hostess who explained that to-go orders are normally placed online, but she happily got the manager to help me. He was incredibly helpful and made the ordering process easy. The food was really good! I ordered the jackfruit tacos with rice and beans, along with the guacamole sampler. I didn't realize beforehand that it was more Tex-Mex style, so that was a little different than I expected. The guacamole itself was good, but I'm personally not a fan of cheese and some of the additional toppings mixed into guacamole, so it just wasn't my preference. That doesn't mean it wasn't good. It just wasn't for me. The jackfruit tacos, however, were fantastic. I absolutely love jackfruit, and these were some of the best I've had other than the ones I make. They could have used a little more spice, but they were still delicious. And the chips? Completely addicting! I'd definitely come back the next time I'm in Seattle to try more items on the menu
