The guava sauce served with the cheese offered an amazing counterpoint to the saltiness of the cheese, which was not breaded-making it a much healthier option. We shared the pork medallions stuffed with manchego cheese and more of that amazing guava sauce. Pork was fork-tender and just melted in my mouth. The guava sauce made it perfect. The Arroz con Gandules (traditional Puerto Rican rice) was seasoned perfectly and a great compliment to the pork. We were also given a taste of the mashed plantains which had a bit too much garlic for my taste, not letting the taste of the plantain shine, but at this point, I just wanted to move in and never leave. And all of this was served in an awesome and eclectic space, with over 70 pieces of original art, mostly by local artists, which chronicled the history of Guayama.
