got the Notorious PIG sandwich and the Buttermilk Biscuit while I was here Starting with the sandwich, there were a ton of things to love about this The very first thing I noticed was how all-time crispy the pork belly was. Interestingly, the meat came in two separate pieces, arranges somewhat like an X or a cross in the middle of the sandwich. This certainly wasn't the eating experience of a typical sandwich with a circular meat patty, and I appreciate the creativity here. The meat was insanely crunchy, oily, and quite plentiful. Each bite felt a bit like you were biting into a crunchy churro, but without the sweetness. I did think the outside of the pork did overpower the inside, though, as I didn't taste the meat or the fat inside much, and due to the amount of breading the pieces ended up being a bit chewy The bun was quite good as well - it was pretty soft, fluffy, and served as a really good bookend to all the ingredients inside. I thought the lettuce and onions also were good. I don't know if I'm a fan of the jelly on the sandwich - but again, I do like the creativity. What did shine here was the aioli, however. In a lot of places, you don't really taste the aioli on a burger - but that flavor was ever-present on this sandwich, and it was really fantastic. The absolute best part of the meal, by far, though, was the biscuit I have to start with how huge this is. This is certainly not the size of a typical Southern-style buttermilk biscuit - rather this biscuit makes no apologies in its effort to stand out from the crowd. Absolutely nobody would mistake this for a traditional biscuit - on the contrary, I think on first glance most people would assume this isn't a biscuit at all. It's shaped more like a massive pastry. I hesitate to say that looks are deceiving, because it does look great, but its taste manages to elevate past that. This was SO good. The edges are baked perfectly - they're oily, crispy, crunchy, and perfectly flaky. All four sides provide an amazing base - like the walls of a fortress that surround the soft, tender interior of the biscuit. You can see the different layers from the outside as well. When it comes to the inside, there was so much to get through but every bite was heavenly. So much credit here goes to the honey butter - which when spread onto the biscuit, raises the taste level of the entire thing. I put so much honey butter on mine that I nearly finished the whole thing. I saw reviews that varied about portion size and I'd say it really depends on the bread the sandwich comes on. Layers is one of my favorite places to eat in the whole city. The food is consistently delicious. The ingredients are super fresh and high quality. The combinations are just interesting enough to feel like it's worth the money (i.e. herby sauces and freshly baked bread that you wouldn't necessarily make at home) without being too "experimental" as to tip into questionable territory. The menu choices are thoughtful, seasonal, and inspired. My favorite sandwich is the TBR; fantastic homemade ranch, succulent smoked turkey, hearty bacon, and super fresh greens and tomatoes, all on a perfectly toasted bun. Their griddled banana bread is truly the best I've ever had, as is their sesame cookie. So don't skip dessert! The staff is always friendly and accommodating. Once, our group gave some feedback about veganizing a salad item option, and they took it and implemented it onto the menu the next week! It's maybe a small thing, but I am so impressed by people who love their craft and are open to improvements for the benefit of their customers. Scrumptious Sandos! Such flavor bombs that pack such a punch! You can tell they use fresh ingredients and have unique combinations. We got the "don't go bacon my heart" and the "Beauty and the beef" sandwiches. It comes with so much meat and the sauces are so flavorful! Holy balls, what a delight this place is! Came here for a late lunch with my spouse and ended up picking the breakfast sando and a glass of the salted maple cold brew. I WAS NOT PREPARED FOR SO MUCH DELICIOUSNESS, FRIENDS. It's an egg and bacon breakfast sandwich, but that undersells the actual thing. The egg is soft-fried and tasty; the quantity of bacon is comparable to a hamburger patty. I have really tried to understand the hype around this place but I simply don't get it. Honestly I think I've built enough of an instinct to know from the menu and photos how much I'll like most places, and I could tell from the menu the people behind this spot just have a totally different palette than mine which is maybe where the dissonance is. The spuds had good texture, crisp smashed potatoes that were fluffy on the inside. They really needed salt, the green goddess sauce it was served with was too subtle to enjoy. Now for the sandwiches. The meatball was pretty good! The notorious p.i.g i did not enjoy it. Pork belly was too crisp and there are only 2 tiny pieces, which is another thing, the sandwiches are TINY and for damn near $20, just expected more. The order sign/station with an arrow pointing to it is confusing since there's only one paper menu on a stand a few feet away from the cashier. We assumed there would be a kiosk to order from but you still go up to the cashier. It would be helpful to have more menus out or at least a QR code for people to scan so more than one party can study the menu while in line. After ordering, water is self serve and you have to bus your own dishes. I'm quite disappointed that our meal was $50 (including tax and tip) for two very mediocre sandwiches. read more

Layers is such a gem in Green Lake! We stopped by for lunch and were blown away by how fresh and flavorful everything was. Between our group, we tried three different sandwiches--and each one was seriously next-level. The Captain Rick (tuna sandwich) was fresh and flavorful--hands down one of the best tuna sandwiches I've ever had. The Notorious P.I.G. with pork belly was rich, savory, and had that perfect melt-in-your-mouth texture with a nice crispy edge. And the CB&J (cashew butter and jelly) was such a fun twist on a classic--nutty, slightly sweet, and surprisingly satisfying. Yum. To drink, we had a matcha and a cold brew--both excellent. The matcha was smooth and well balanced, not too sweet, and the cold brew was bold and refreshing. The atmosphere is warm and welcoming, and the service was friendly without being overbearing. I come here for the baked goods! Chef Ellary does amazing work. I love her biscuits and everything else she bakes. I did not know how much I loved canelés until I had them here. I've had the biscuit & Jam and breakfast sandwiches, but I find myself showing up for the baked goods. This past Saturday, I saw a post of the Bostok and Kouign-Amann, which are new items, so I naturally rushed to Layers to try them and both did not disappoint. My tiktok fyp has been telling me that Layers is the sandwich shop to try near Green Lake. Since I was in the area, I figured now was the time. I came on a Sunday afternoon around 3pm. It wasn't busy given the time. The Captain Rick was sold out for the day. On a whim, I decided to try the Notorious Pig. The main difference from the description is that it was served on their pullman bread instead of a toasted brioche. I completely missed that detail in the description before writing this review. I don't think it made a particularly big difference. It was a solid sandwich. The pork is really nicely crispy. Since it's a cut of pork belly, some bites are very fatty. It's a good lunch option because it wasn't overwhelmingly heavy. I will caveat that I did have to walk half of Green Lake back to my car so your experience on that might be different if you park closer. read more

It's been over 3 years so figured an update to my review is overdue. Huge fan of Layers from day 1 (as you can tell by all the photos.. haha). At first, I was sad about the Layers Sando truck no longer being at breweries because I always looked forward to their sandwiches alongside some tasty beers and just relaxing at a brewery. But, I am definitely happy to have them in a brick and mortar in Green Lake, where it's possible to have their sandos (and other items) most days of the week, whenever the cravings strike! Order at the counter and then find a seat. Sometimes it can get crowded during peak times (and weekends) so to avoid a wait, try for a week day or earlier (11:00ish) on a weekend. However, the line moves pretty quickly so not an issue either way. Note that you should grab your own water and bus your own table when finished. The space is relatively small, so may not be the best to try to eat here if you have a larger group, but otherwise, you can usually find a spot. Perfect also for a grab and go to picnic at the lake, etc. on those sunny days! I met a friend here, first time for me. Had two sandos one a pork special and the other tuna. For the pork, there was a thin layer of pork but it was overwhelmed by the greens. Flavor was there with the dressing, but needed more pork to balance the greens. The tuna held up. Could have used a bit more seasoning but was a decent sandwich. The chips added a nice crunch. Only thing I would add would be a nice cheese, and a bit of heat, to make it a melt. read more
