The Bakery switched owners. The former owner was a baker, who understood creaming butter and sugar together until it makes a ribbon. I was addicted to the chocolate fudge cookies that were a chocolate cookie with chocolate meringue folded into it. For the same price, the meringue is gone, the butter and sugar are not creamed together sufficiently, and the dry ingredients are only mixed to a rocky consistency. The chocolate stays separate and the cookie is greasy, difficult to handle and doesn't taste very good. It is not made with love, nor was it mixed properly. The croissants are great just do not order any meringue products or the basque cheesecake. Not putting enough batter, temp too high and result a dried piece of paper with a hint of what once was. Atmosphere: - A quaint and clean bakery nestled in a small strip mall right before heading over the bridge. - There are a few seats indoors and plenty of seating outdoor with several plants and covering. Drinks: - We had an iced lavender latte and hot cappuccino. Both were well made with a sweet coffee note. Snacks: - We had an almond croissant and creme brulee bun. Yes, yes, and yes. While I wish the croissant would have had a bit more almond paste throughout both items were delicious and I would easily order them again. Service: - Fantastic. Messy but Tasty I'm a sucker for a good bakery, so I'm glad that Le Merle is here. I went for breakfast on a weekday, so it wasn't overly busy. It's a cute little spot with an open kitchen to see what's baking. There are only about 5 seats inside and another dozen outside. I had a café latte and, as is the case at so many places, lattes and cappuccinos are often mixed up. My latte had too much foam and not enough coffee & milk. The morning bun, something like the product of a croissant mating with a muffin, was very good (and quite crumbly) on the outer layers but a bit too soggy at the core. The "breakfast club" sandwich was quite delicious with jalapeno jelly, ham and cheese on a croissant. Unfortunately, the whole thing quickly fell apart and was a tasty mess. I'll go back to try more of the pastries and remind them how to make a latte. read more

I was very excited to find a French pastry store near me since I've been driving to St Pete and Tampa to fulfill my baked goods and pastry cravings. I would give this place more of a 3.5 rating, but I am unable to leave a half star. The bakery is charming, quaint, and clean. They also have 50% of croissant-based pastries and baguettes during their last hour of opening. The cruffins were delicious and flakey and the baguette was so light, had the perfect amount of chewiness, and just plain delicious. I also got a quiche, which was okay, but left something to be desired. I took off one star though due to an experience that left a bad taste in my mouth. I ordered a breakfast sandwich that would normally come on a croissant. After I paid, I sat outside with my dog. The owner shortly came out to let me know that they are out of croissants and unable to make my breakfast sandwich normally. He offered substituting the croissant with their almond croissant. While I love almond croissants, I didn't want a sweet breakfast sandwich and asked if it can be on a baguette instead. He told me he can definitely do that, and I said perfect! As he headed inside, he told me it is a $2 upcharge and I have to pay the difference, which kind of surprised me, but I went inside and paid the cost anyways. After paying though, I thought it's odd for me to have go to back to pay extra when they did not realize they were out of the main component of the order at before charging me. They were also selling their baguettes for 50% off since it was within an hour of closing. I will say the sandwich was delicious, but found it bad customer service on their end. This is by far the best croissant I've had in the Clearwater/Largo area. It may be the best one in Tampa Bay, but I got to eat more croissants to say that. The proof of an awesome croissant is buttery fingers and you gotta clean your eating area frequently from all the buttery flakes that will fly with each bite. Young local woman, trapped at home during the pandemic, reads every cookbook and watches every baking video she can find. She teaches herself to hand roll croissants and sweet rolls. She bakes cakes and muffins. As the pandemic eases she sells her creations at farmer's markets and fairs. In time she convinces her father to open a bakery with her. They choose a small, hidden space in a strip shopping center in Belleair Bluffs. Despite being directly across the road from Panera and next to Maggie Maes, the location is perfect. Le Merle provides a clear alternative to the neighboring big chain bakery and iHop-type breakfast spot. Word gets out. The locals post about the smells and tastes of the baked goods made on site each morning.
