This place commits to sourcing almost everything they have locally and they make a lot of their own base ingredients including every sauce they serve. The Ruby Brink is particularly well suited as a good bar that still has restaurant class food, especially if you just go out with your adult friends and not necessarily your family of five. Different restaurants are tiered to different clientele and I especially appreciate that they serve their target audience: adults looking for a damn good meal, super well! Their menu is prepared every single day depending on what's available at the time. Don't be surprised if you see different dishes on it from just going there a week previous. Last night I had the 'Charming and Smooth' which ranged from a chilled red to a Pinot The Chianti blew my mind. It tasted like a Madeira before it was fully aged with dry fruit notes. And I do not normally pine for Chianti. They also carry some of Washington's special wines (eg. Figgins) that are great if you are there with a group and in the mood to spend a bit more on a 'rare' WA piece. The staff and owners are always friendly and love to talk wine. My wife loves the gelato flights. I like stealing bites from her.
