If you're a butcher you don't leave silver skin on meat like that. We trimmed the meat and as it was a full pound lighter we decided to season and cook it. We cooked it like we always cook our tri tips (usually from Costco) and this meat was so chewy it was absolutely not choice grade meat. Never again will we go to springville meat co.
