It is very dark inside, even in the afternoon. My clients, before making our dinner arrangements, had told me they had heard good things about The Silo; upon reading various reviews posted online I had my doubts but since they were my clients, I did not say anything. Perhaps I should have done so. Although I arrived early, the noise inside was tremendous; there is nothing to absorb the chatter and it was very hard to hear my clients speaking, despite being at the same table. The table was clean...sort of. It had been wiped with a wet rag, and the surface was sticky and unpleasant; a good scrubbing with Murphy's Wood Soap would have made a tremendous improvement. Our server was pleasant and friendly; I do not recall his name. He was very young. I ordered a diet soda which came reasonably quickly; however, it was more syrup than fizz and I did not care for it. For $4 a well-mixed soda should not be an issue. My clients and I ordered a standard deep-dish pizza (I don't remember the toppings) which arrived in about thirty minutes or thereabouts. Well. The crust was delicious: hot and steaming fresh, with a wonderful flavour. The toppings were cold. I don't know how you order a pizza pie baked to order with a hot crust and cold toppings. Perhaps the crust was baked first and the toppings heaped on before servine. I don't know. The tomatoes were bitter and spoiled the flavour of the toppings. The meat was burnt and tasted bland, as though it had been reheated several times. Man, am I glad we got the flyer, because they have since become one of our local favorites! For the longest time, Lou Malnati's was our favorite Chicago style deep dish pizza, but Cansino's is now #1 in town for us. Their cheese blend is soooo creamy, stretchy, and delicious! It's apparently their own in-house blend of California cheeses, and it reminds us of the tasty Wisconsin brick that's popular in Detroit style (possibly a little creamier but less salty). Their tomato sauce is super savory, with a rich herb blend and not too sweet or tart - it's so satisfying! The crust is firm and delicious, and their sausage is leaner than Lou's while having a stronger fennel essence. We still love other Chicago style deep dish pizzas, but Cansino's will be the first on our list when we get a craving. We love onion rings in principle, but are a little particular about how we enjoy them. Cansino's onion rings are excellent - crispy seasoned breading and supple onion slices that are cooked juuuust right. Their fries are also really tasty, and we loved their fried mushrooms. I've tried two of their Mexican style tortas, which were also very good (I loved the fajita style veggies and beans, and the seasoned beef was pretty good). The steak and veggies were excellent, and their bread was pretty good. Next time, I REALLY wanna try their paninos. Their staff is super-friendly, giving us great suggestions of new things to try. The restaurant is always clean and well lit. Prices are fair for the neighborhood. Their preparation times are reasonable, and everything we've ordered was ready on time. There's plenty of parking right in front of the shop, and their front entrance is easily accessible. They're right across the street from the Fort Sheridan Metra Station, so I recommend trying them out if that's your stop. They also have some breakfast items, so it might be a good treat before your morning commute. We're definitely going to be trying more of Cansino's menu, and we'll be sure to add more photos and updates.

Dinner started with a tasty chopped salad that would have been a reasonable entree for one or enough to share as an appetizer for two. It was a large spoonful each for four. The four garlic knots that accompanied the salad were each about 2x2x2 inches, and when we asked for a refill of both the salad and bread we were told "that's all you get." The spaghetti came with 2 meatballs in a portion size that looked like it was enough for an entree for only 1 person. We waited a moment and when no more came realized we were screwed. Later, seeing our disappointment, the waiter was kind enough to secretly get 2 more meatballs out of the kitchen for us to pretend there were portions for each person at the table. Had they been serving Italian tapas, maybe we could have pretended it was a fair approach. The 16 inch cheese pizza was good but nothing special and the tiramisu provided 4 small pieces a little larger than the garlic knots mentioned earlier when cut into squares. I don't know what kind of "famiglia" Salvatore "Sal" Lo Cascio, the culinary director at Ballyhoo Hospitality, or Ryan O'Donnell, the CEO, have; but they probably don't eat very much. Perhaps they expect the famiglia of their guests to be a single parent with young children or a group of little persons.
