    This place has been amazing since I've been here. Everyone here is friendly and the prices are affordable for a bar in the high desert.

The menu has the typical fare found in other sports bars and pubs. There is even a make your own pasta option. The menu is extensive. I ordered a ribeye steak as it was recommended by previous reviewers. It came with soup and salad options and a side. I chose a clam chowder soup and broccoli as my side. Food comes out of the kitchen as it is made so, if in a large group (10+), be prepared for a rather long wait and plates coming out piece meal. The generously sized ribeye steak was at the requested medium rare temperature but it was a very thin cut. It was seasoned simply with salt and pepper. The steak was tender and juicy with a good char grilled flavor. The broccoli was cooked to a crisp tender and tasted good. Clam chowder came out of the kitchen only a few minutes before my main so I enjoyed that with my steak. This was a good tasting chowder, albeit with more potatoes than minced clams. There seems to be a blue cheese tanginess in the chowder which is different from the usual. If there was cheese, it was a good flavor addition. This restaurant would be perfect for large groups in general as there is plenty of space to accommodate. It was not what we were looking for as a club meeting place due to the overall loud background music but the food and beverage options here are A1. We came on a Saturday around 6 pm and were quoted an hour and a half for 6 people. We noticed that next to the bar, there were quite a few seats available. That area is a free for all and anyone can sit there without having to wait for the quoted seating time. Our waitress was very attentive to us and would give us recommendations on what was her favorite and most ordered. Food: Short Rib Nachos (7.5/10): I will admit, I'm not a nacho cheese person but these were delicious. The short ribs were cooked perfectly, it was melt in your mouth after chewing a few times. The cheese wasn't too heavy but was equally spread across the entire plate of chips. This was my first time seeing avocados on nachos. There were a lot of jalapeños slices throughout the dish which adds a nice spice to the cheese. Oogi's Special The Works (7.2/10): This is a FILLED pizza. We had 6 people and opted for the X-Large. It was perfect amount and only two slices were left over. I couldn't even tell you what toppings were on there because it was so filled, you couldn't even see the cheese under it. I thought it was a little too much but that's just personal preference. Side of Fries (7/10): These were addicting. It's beer battered fries with ketchup and ranch. It was nicely coated with a good amount of crunch in them. Honestly, wish there was more uniqueness to it. 2-lb wings (Korean and Garlic Parm)(6/10): There were quite a few flavor options you could choose from. It comes with two cups of ranch and celery and carrot sticks. When it came, we didn't see any wings and all drums. The garlic parm flavor fell short and didn't have any garlic flavor in it. I thought it just tasted like a fried chicken wing. The Korean flavor was just okay. It was tangy with a touch of spiciness. I did prefer the Korean one over the garlic parm one for sure. Chicken Tequila Pasta (4/10): This one was given to us as a waitress recommendation but I'm sorry but it was so salty. We all tried it and all thought the same thing.     I came into REPUBLIC for a drink and to check out the renovations. REPUBLIC has only been open for…read moreabout a week, and it was absolutely packed, which is understandable for a reopening. Even with plenty of servers on the floor, it was difficult to get a drink. I really liked what they did with the back room, turning it into a designated area for watching sports on TV. The remodel looks great, and the space has a really nice new feel. I ended up staying for dinner, although in hindsight, I probably should have just had my drink and left. At 5:55 p.m., I placed my order separately, about 10 minutes before everyone else at our table. There were three orders placed at our table. I ordered a ribeye and shrimp, mixed vegetables, and a baked potato with butter only. At approximately 7:25 p.m., our waitress brought everyone else's food, but my meal was still not ready. Throughout the wait, our server continued checking on us regarding drinks and kept us updated that my food was still being prepared. I even went up to the kitchen/food counter myself to see if my order was ready. I continued checking back about every 10 minutes. Finally, around 8:05 p.m., my food arrived. I immediately noticed that the baked potato had not been prepared as I requested--it had toppings on it instead of being plain with butter. The server offered to take it back and have them redo it, but after waiting more than two hours, I told her I would just take it. I cut into my ribeye, and I have to say, it was cooked to perfection. The plate looked great, and everything appeared appetizing. Unfortunately, the entire meal was very cold. I let our server know, and again she offered to have the food remade. At that point, I didn't want to wait another two hours for another meal, so I declined. I completely understand that REPUBLIC has just reopened and that some of the staff may be new. Opening a busy restaurant after renovations can certainly come with challenges. My comments are meant to be constructive. My suggestions would be to add food runners to help the kitchen get meals out to the tables quickly and to have more people behind the bar to keep drinks moving. The remodel looks great, and I really like the new sports-watching area. Now the restaurant needs to focus on getting food to the tables in a timely manner while it's still hot, as well as getting drinks out more efficiently. Shoutout to "Reese" she is a very attentive server. Also noticed she was helping out other servers at the pos machine. I would definitely be interested in coming back once they have had some time to work out the opening-week growing pains. The potential is definitely there.
