Don't trust this butcher, have paid for 2 steers to get butchered here and the first time wasn't great with probably about 8 lbs out of 70 of hamburger having a ton of gristle and tendon chunks and cartilage and the rest having at least a few bites of it in every package where you're stopping to spit it out when you eat it. they obviously didn't trim junk and silver skin. this time has been worse and I should have learned my lesson but it's convenient and closest shop. Here's how i got back some of my meat see photos. This is a week after getting a call that my meat was ready, and an hour after picking it up and driving back home to put it in my freezer after having boxes in yeti 120. Should have checked out the boxes in the store but they are all taped up. On top of that, every other package of ground beef i have, out of the 80 pounds or so, has so much cartilage and gristle in it I can't finish a meal without having a pile of it sitting on the side of my plate. Every other fork bite is a chunk of garbage thats added weight of trash. A sorry excuse for taking care of someone's meat with no pride and pure laziness. I picked up this meat and told the owner several items had no seal and freezer burn on a call when I got back to the house, he told me it was impossible over the phone , and to text photos, never heard back with no remorse or care. I process and store every other animal I eat besides beef and he wants to tell me "it's impossible". Either his help is no good or he is complicit and a liar in their theft of new meat. Tells me I'm lying after spending $1k for his services calling him the day I pick up. I'd assume some theft is going on if I'm getting meat back that looks like it's been unsealed and frozen for years. Might give you your steaks back and take your ground and give you orders people never came to pick up. 0 pride, accountability, and character. No wonder the butcher shop side doesn't have a yelp page. I came back to leave a review after picking up in early December because the hamburger has gotten even worse as I've eaten through it. I went to M&M for the sole purpose of stocking my freezer with beef. M&M is more than just a processing facility. It offers fresh cuts of beef (some cheaper than HEB), chicken, fish, and breakfast sausage. It even has alligator and frog legs. Just about everything sold there is local: wine, beer, honey...There is a refrigerator full of a variety of pecan pies. The staff is exceptionally knowledgeable and friendly. Its location is easy to find. It's well worth the drive to Lampasas. read more

The butcher shop/store looks to have some nice offerings, but we came here for deer processing last year and had a terrible experience. *First off, it certainly didn't seem like we got all the meat back. I don't think we have ever had such a small amount returned from any deer we've had processed in the decades we have been hunting - and this was a good sized buck we brought in. Either they don't really give you back your deer or they have extremely wasteful butchering practices. *Second, about half of the vacuum sealed bags weren't properly sealed and full of air. We had to reseal all that meat in our own bags before we put it in our freezer. All of the packaging was sloppily cut and had strips of plastic hanging off of it, or the meat was pressed into the seal (which is why the bags didn't seal). *Third, the sausage is just not good. The taste and the texture is waaaay off. I don't know if they use an odd fat:meat ratio or what, but it's aggressively poor. The sausages were all greasy and rubbery and not flavorful. *Fourth, they charge a premium but don't provide a premium product in return. It was worth a shot, but we won't be going back for processing. It's just not worth the price and, honestly, I don't think you get "your deer back". read more

Warning! We recommend NOT using this business! We have been coming here for over 10 years and quality and service have progressively gone downhill! It remains questionable if we really get our meat and the correct amount of meat from each animal never seems right. Have been hunting for over 40 years and I know what should result from animals I have harvested. Be careful with their packaging! If you do decide to go here, their meat wrapping always has holes in it! The vacuum packing isn't vacuumed and the sausage is free floating in the packaging- doesn't taste right later! The ground meat (sausage, burger, breakfast sausage) package always has tiny holes in it so if you thaw it out- be sure to place inside a zip lock bag to avoid a bloody mess in the kitchen! However, the young guys outside who meet us at the pickup and take our harvested animal and also deliver the boxes of meat : they are rock stars! They are quick and service-oriented! Be sure to avoid using their taxidermy service! They took 2.5 YEARS for my last mount and that mount is nasty with matted glue all over the hide. There are other issues there that I will avoid going into.... Overall, I will not return despite the convenience and would not recommend. None of my buddies go there any more either. Rude!! Lack of customer appreciation and respect. Took over 2 years to process a deer mount (and I understand circumstances are out of control sometimes) but zero apology or kindly o the customer. We've been bringing our deer here for years. I've had venison from other processors and it's super gamy tasting, but I will eat anything from here. They also have the best pork chops ever. We have tried almost every cut of meat from here and never been disappointed. read more

Amazing selection of meats and other goodies. I've never used them for deer processing, but I will be next season. As a butcher this place is amazing. The beef steaks I've bought from here are some of the best cuts of meat I've ever had. The prices are reasonable, and the quality is superb. I won't be buying meat at HEB or WalMart anymore for sure! read more

Will not be returning. Owner was very rude and yelled at me when all I asked for was an apology for the 2+year wait for a deer mount. Don't care about customers or my business. Stay away from this business. I brought a 307# show pig for processing. Hanging weight was 200#. I ordered my bacon to be cured and lightly peppered. I received 7 total pounds of bacon one of which was ends and pieces. On an average hog dressed weight of 200# the pork belly should weight between 12-14 pounds per side. When I called to question the yield is was told "I don't know what to tell you that's all there was". They want me to believe that on a 307# show hog there was ONLY 3.5 pounds per side. I have taken 6 steers and 4 hogs to them in the past but will go elsewhere from now on. Somebody at this business is not being honest. read more

This is a "GREAT" place to get your steaks, ground beef and have your deers processed. Marquette is one of the kindest and helpful person I have ever met. I drove 4 hours from Houston and it was well worth the drive. Farmer Ron Farr made me an offer I couldn't refuse on a half of a cow. I didn't know how or where to get it processed. Mr. Farr said the best processor in Texas is M&M Butcher Block. I did my home work and found that he did not exaggerate. The nicest staff ever!! They walked me through every step and I couldn't be happier with M&M Butcher Block. Marquette was very patient with me being a new customer. She went very slow over the phone with me so that I got the most out of my half cow. I didn't get the names of the other folks that helped me but they all have an old Texas helpful attitude toward their customers. I would recommend this business to anyone who is looking to stock up on their meat for preppers and others who need great cuts of meats. Thank You Marquette!!! Kinda of a long drive from Huntsville/Madison, AL to pick up some fresh cut meats from a real old style butcher shop... However if you are in Lampasas, TX area make sure you stop by and get some meats to go. I purchased the bacon wrapped filet mignons and they were fantastic. My friend cooked them on the BBQ medium rare and they melted in your mouth. If they don't have what you want cut they will special cut it at no extra fee. Good value for some fantastic beef. Called them last minute with an Axis that the outfitter couldn't process and they guys here were great. They opened up for us and had the deer completely processed and frozen on the second day. I can't say enough good about these guys. I've hunted all over the world and you'd be hard pressed to find a better processor than M&M. Keep up the great work. read more

No quality contol at all. Had them make sasuage for us from our deer. The first time we picked it upit was still raw. The second time we picked it up they had over cooked the sasuage and burned several links to a crips. If you want to waste good deer meat go here. However the owners are very friendly and polite. Just do not know how the cure meat. read more
