You go down the raw line, pick your protein l, veggies and sauce and hand it to a guy who cooks it on a giant flattop grill. It was damn good and damn reasonable. Better than expected for sure. May only get about 2 bites into your roll before this happens. I don't know why but all of their wait staff do that so I assume they are trained to do so. In other words, you may as well order your food Togo as they ask you if you would like a Togo shortly after processing your payment. Again, you could be a quarter of a way through your food when they ask so you will have plenty still left to put into a togo box.
