I was visiting my sister in Palm Springs, she has been telling me about Maracas a restaurant in Rancho Mirage that has really good Mexican food, and she was not lying. We were seated and found out that we were in time for happy hour from 3pm to 5pm weekdays, a few TV's a enclosed cover patio, an open kitcher with huge bar in the center, there is another location in Palm Springs too, the chips & salsa was top notch it was spicy and so good. We ordered a margarita and sangria, the buffalo chicken wings and a combination enchilada plate, all of our food was very tasty plus delicious, the staff was friendly and helpful checking on usa few times. Wish Yelp gave a six star option. We've been coming to Maraca's for years. My wife and I call it the "Cheers" of Mexican restaurants... it's where everybody knows your name! The food is consistently solid. The waitstaff are all amazing and their margaritas are fire! My go to dinner is the skirt steak, sautéed spinach, and chipotle mashed potatoes. All three items are amazing. I would venture to say that the chipotle mashed potatoes are the best mashed potatoes I've ever had anywhere. Next time we ordered for take out. Steak Grande Burrito had no flavor at all. The skirt steak salad was awful. Soggy apples and very little cheese but a lot of lettuce. The only thing consistent about this place is the chips and salsa. Tried the lunch bowl and it was mediocre at best. Tried the chicken tortilla soup and had to send it back it was soooo beyond strong and salty!! Then ordered the albóndigas soup and it was just broth with vegetables and strange tasting meatballs. Tried the poblano soup and it was decent the first time I ordered it. Tried to order it again another day and it was NOT EDIBLE. They tried to thicken it with flour and forgot to add the cream! It was chunky with balls of flour. Yuck!!! I have tried this place several times due to it being next to my work and I have to say HARD PASS. You must try the carne tampiquea! The savory carne asada steak with small mouthfuls of cheese enchilada made me have a mouth-orgaism! My tongue was shaking little maracas in excitement! The corn cake and typical sides of beans and rice added flavors that literally made me say, "Fantastic!" Mix those up a little bit together. Trust me. I've enjoyed their potato tacos, burritos, and salads, but nothing has cast a shadow on how excited I was to jump into the tampiquea! The Chile rellanos are light and fluffy... absolutely perfect. They say their drinks are stiff, like a 19 year old when a breeze blows by, but I haven't been able to partake in a libation... yet! The service is every bit of a five star experience. I wasn't crazy about the mashed potatoes as they had some type of sauce mixed in. I'd still order this item again, I'd just choose a different side. The server was awesome, chips were hot, crispy with off the hook salsa. A few of our friends ordered the chili rellenos which were a generous size. I will definitely be back again soon. Service was so so. One guy just put things down. Didn't smile or say anything. They didn't really come to check on you. Maybe once or twice. I didn't want anything spicy and they gave me pico de gallo and the guacamole with my chimichanga. I asked for no sauce. The guacamole is made with jalapeños. :( The chicken inside was a bit spicy. My coworker got a taco salad thinking it was the shell. She only ate half. She was disappointed. It just had a few tortilla strips. Soda tasted like sink water mixed with a fountain drink.
