We sat on the patio. Our server brought us complementary bread with butter while we read through the menu. I'm told my meal was authentic Dutch food, but it just seemed like a strange combination. The name slipped my mind, but it was a pile of mashed potatoes with endive, with a meatball on top with brown gravy and then beside that with some type of smoked sausage with a pile of mustard. I've always felt that whatever food you put on a plate should taste good together sausage with the mustard with the meat and the gravy and the mashed potatoes just seem disjointed to me. With that sad, I ate every drop of it and enjoyed it so maybe I learned something from this meal. ‍ My son took the alternative approach and ordered a meal with Indonesian flavors; chicken with peanut sauce was the main entrée and it came with french fries. He definitely enjoyed his meal as well. I'm glad we gave VS a try. It turned out to be a good meal of Dutch food in a touristy area with food from all over the world. The meal came to $174 USD total for the both of us including the wine pairing. We also tried the homemade bread with black butter and fried capers, really good! The dinner started off with 2 amuse bouches - the bread and the sugar snap peas dish. The italian proscuitto and artichokes were both very good. The mussel salad was unique, and the mussels were both generous in portion and very fresh and well cooked. I enjoyed the mushroom medley, but the winner dish of the night was most definitely the sustainably shot duck - which the server warned us to chew slowly in case of any bullet casings! The dessert was one of the more unique I've ever had - watermelon " taco" with goat cheese, the flavors paired very well and was very refreshing! I also recommend the wine paring for a special night out - for the price you get 4 paired all natural wines and I think that they were all paired very nicely. The only reason I gave it a 4 star instead of 5 is because it's just not elevated enough for the full 5 stars for me. For a very similar price, Wolf Atelier's food was a bit more refined, beautiful presentation and hit more of the 5 stars of food for me. However, GUTS has much better personable service. If you have the time, I definitely recommend a stop at GUTS!

So fresh and satisfying 4th was a meat course: Beef tenderloin medium-rare, and a Chinon 2017 wine pairing. The dessert? Watermelon Tacos! Very thoughtful on this weltering summer evening. My husband's pork fillet was overcooked and very dry inside. It was difficult to slice with the butter knife he received. The escargots were nicely tender and soaked in a flavorful herb and garlic butter. The second was the Drie Crostini Belhamel. This featured three crispy crostini's topped with high quality mouthwatering toppings of tender smoked salmon, fresh tender beef tartare topped with a yolky egg, and cool salty Iberico. For my entrée I had the Tournedos Rossini. Tender juicy steak sat on a bed of crisp asparagus and savory potatoes and topped with a buttery foie gras. For dessert I had the Basque Cheesecake which had a creamy airy texture and was topped with a sweet flavorful kumquat marmalade. Overall, our dinner was enjoyable and delicious.
