My fiancee and I celebrated our 1 year engagement anniversary dinner here and it did not disappoint! We opted to have the 5 course meal + wine pairing. The meal came to $174 USD total for the both of us including the wine pairing. We also tried the homemade bread with black butter and fried capers, really good! The dinner started off with 2 amuse bouches - the bread and the sugar snap peas dish. The italian proscuitto and artichokes were both very good. The mussel salad was unique, and the mussels were both generous in portion and very fresh and well cooked. I enjoyed the mushroom medley, but the winner dish of the night was most definitely the sustainably shot duck - which the server warned us to chew slowly in case of any bullet casings! The dessert was one of the more unique I've ever had - watermelon " taco" with goat cheese, the flavors paired very well and was very refreshing! I also recommend the wine paring for a special night out - for the price you get 4 paired all natural wines and I think that they were all paired very nicely. The only reason I gave it a 4 star instead of 5 is because it's just not elevated enough for the full 5 stars for me. For a very similar price, Wolf Atelier's food was a bit more refined, beautiful presentation and hit more of the 5 stars of food for me. However, GUTS has much better personable service. The best meal I've had in a long time. 4.5 hrs, 5 wines, 6 courses. No BS Michelin class restaurant, no dress code, wines are poured generously, incomparable food and fantastic casual service. We had both the Che'f Tasting Menu and premium Wine pairing. First they bring out 4 platters of amuse, and we ordered a Riesling to go with it. There was razor clams - absolutely sumptuous. The artichoke hearts was perfectly cooked. The chicken tonkatsu was crispy and not oily at all. The really unique prosciutto from Italy was satisfying and I was afraid I would not be able to eat 6 courses today. 1st course was Scallops ceviche with cucumbers - cool, refreshing incredible combination. 2nd was a whitefish in pea soup - doesn't look like it will work, but, they really know the flavors that go together. 3rd they brought us out a whole Turbot steamed lightly. So fresh and satisfying 4th was a meat course: Beef tenderloin medium-rare, and a Chinon 2017 wine pairing. The dessert? Watermelon Tacos! Very thoughtful on this weltering summer evening. We had spend the day at the Rijksmuseum, so we wanted an experience where we could just sit back and let the chef make all the decisions...and boy did this chef make all the right ones! We were seated at their intimate bar seats upstairs and while we looked over the restaurant's two prix fixe offerings, we ordered two signature cocktails: a negoni, complete with spicy slushy on top and a vodka + chamapage cocktail called the Twinkle. Both delicious. We made the decision to go the Deluxe route with the prix fixe and the wine pairing, which nets out to about 5-6 dishes and 5 wines. We were blown away. From the razor clams and mushroom soup, to the ceviche and their lamb with romesco, each dish was superbly crafted. My boyfriend mentioned during our meal that the romesco on the lamb was one of the best he's ever had! Truly masterful. Additionally, their wine selections during the meal were wonderfully complementing to the dishes. A wonderful meal. Overall, GUTS provided a fantastic meal with great service and guidance. Another Amsterdam gourmet restaurant and another tasting menu for us. But first let's start with the free "welcome" bread and accompanying spreads. Honestly we would come back just for that (they brought us a second plate once we quickly finished off the first). In general we had a very good experience with our dishes here which apparently change nightly based on a certain culinary theme. Our theme was "French" food, which, while not as exciting, suited us just fine. Actually I might've rated this place lower given the lack of excitement around most of the dishes we had (a course of leeks- come on), but loved the ambiance here and friendly service. We actually had a really pleasant chat with one of our fellow patrons- something I usually would never do. But for some reason in this restaurant it felt just right. Also, that last course of squab was just freakin' awesome. Four stars it is... we'd certainly go back, if not just for the good company. read more

For a nicer place it's quite solid in execution. We ordered the turbot (for two or more) and the steak (again for two or more) for lunch given we had a group, both were very good. It's definitely a leisurely meal, though-- if you're expecting a more casual dining experience, well, the atmosphere is nice-but-casual enough, the service is good but not up to Michelin star level, really the pacing is what defines it. Pricing was also on the nicer side, shall we say. Enough that there's quite a lot of competition when you're paying this kind of money. All that adds up-- back lunch does feel like a 3* meal, it really feels like this place would shine as a dinner venue when the pacing makes more sense. I visited during the "Best Of" Chapter. With no reservation, I was able to eat at the bar, which was great - I got a direct view into the kitchen. You order the number of courses, that's all the information you're going to get. So every course was a surprise. Being the best of - my five courses (plus an amuse bouche and pre-dessert) took me all over the globe. There was a ceviche with granita, ramen, lamb, gaspacho....each dish thoughtfully selected and artfully plated. The staff was warm and welcoming. Since I was seated at the bar so close to the kitchen, one of the chefs would come out with my dish and explain it. As a solo traveler, it was nice to feel so welcome and engaged during a meal alone. After coming from another Michelin restaurant the other evening and spending over 350 Euros, we decided to visit a less pricier establishment. Surprisingly, the food and 6 course dinner menu we choose with the wine pairing was half the amount we spent yesterday and was equal in food quality and presentation as of that yesterday. I thought we needed a 6 course dinner to be satisfied, we were in a food coma by the 4th serving and keep in mind that there are 2 items like bread and another appetizer served before your first course begins. We got lucky on a same date reservation and got the bar and able to watch them prepare in a small kitchen, it was amazing to see how each dish was creatively presented over and over again to each patron with the same passion over and over. This place is unique in an ingenious way. They rotate menus as "chapters" of different places in the world in order to explore that location's cuisine. I lucked out and went while they were doing a special menu, the "Best of" menu, where they served one dish from each chapter they had done so far. Ramen from the Japan chapter, ceviche from Latin America, pizza from Italy, and so on. We arrived and were seated at a cute little table outside. The restaurant is on the smaller side, but they do have indoor and outdoor seating. A waiter immediately came by with the wine selection, from which we chose a rosé, and then we were off! Touring the world through food at our little table for two. I'd like to first compliment the portion sizes. We went through about nine courses in all and, with that much food, you really have to pace yourself! They did a great job with serving small dishes and timing them well. The food was, on the whole, delicious, creative, and inspired. We started with some focaccia and olive butter, which was followed by little appetizers: pizza, a fried sushi rice bite, and some sort of gazpacho. The gazpacho stole the show. It was divine! Next, we had ceviche with a frozen version of a popular Latin American drink served on top. Which is just so clever, considering the theme! And the flavor paired perfectly with the fish. After the ceviche, we had white asparagus served with a type of egg whip, I believe. It was a little on the sour side, but the asparagus had a nice crunch to it. Following that, we had a cooked white fish served warm with crispy bread. The fish was nice and flaky and went well with the sauce. The next dish was my absolute favorite, it was beef ramen with peanuts and it was amazing. So much flavor in the broth and such a great combination of ingredients! I couldn't get enough. After the ramen came the lamb with sweet onions, which was super tender and not too heavy. They followed this with what I believe they called a "pre-dessert" of eggplant ice cream, and then the actual dessert, which was a lemon meringue over lemon sorbet. You're probably feeling a little overwhelmed reading all of this, but I think that their normal chapters are set up a little differently and only focus on one place instead of squeezing in multiple places. I'm very glad we went when we did and got to try so much! But their chapters do look great, too. And, if our visit was any indication, I have no doubt their food will be incredible no matter what chapter they're on. It was Friday date night with my husband and we were able to get a ressie at Guts and Glory which we were excited about since we've heard good things - and they did not disappoint! Food: They change their menu every three months and we were able to experience their Italian themed menu which was fabulous! We chose the five course menu (they also have a seven and a nine). Every course was absolutely delicious and full of flavor, but the osso buco with risotto was the winner! Drinks: We ordered three glasses of wine, one bottle of still water and an espresso macchiato. Price: €128.50 Service: Very friendly! Everyone was very nice and service oriented. Ambiance: Super casual. You walk into the restaurant which has a small bar and the kitchen. The main dining room upstairs is not big, but cozy with tables of two, four, or six. They also have outdoor seating when the weather is nice. Would I go back? Most definitely! AMAZING PLACE! I went with a friend for a nice dinner and we were very happy! The place is very modern and well decorated. The staff is also very friendly. You just choose how many dishes on the theme you want 4, 5, 6 or 7 and all the dishes will be a surprise! The theme was BEEF. We got 5 courses + truffles. You can add truffle to your order, special Japonese beef, cheese platter for a little extra. Amuse Bouche with dried beef and little potato fried buns. 1st cod fish in a bone marrow broth with celery and caviar. Very fresh, light and delicious. 2nd Beef tartare. Honestly, I didn't like this dish. The tartare could've been more seasoned, it was kind of bland, and this was the dish the added the black truffles and we couldn't real feel the truffles. 3rd Little beef sandwich. Delicious!!! It was my favorite dish. Soft bun, with very well seasoned meet in the middle, very well presented also. 4th beef and broccoli. Tender meet, very delicious cooked medium rare with a reduction of soy sauce and balsamic. 5th Dessert - ice cream!!!! Delicious pairing on yogourt ice cream and fruits. Last night I had an amazing meal here. We did the 5 course tasting menu and the theme was beef. But don't be fooled to think it'll be a heavy beef menu.. The clever uses of the ingredients made this tasting perfect. The pretty plating made all the dishes look simple and elegant. The taste is what blew me away. I highly recommend you check this place out, I added a photo of the bone marrow fish dish.. And although I photographed every dish.. I want to leave that for you to experience. Only comment is if you buy a bottle of wine, the server may not have tasted it and the description isn't the same as if you buy by the glass which they have tasted... Regardless Great selection. Guts & Glory is a premium fine dining-esque restaurants. They serve a rotating menu (each menu called a "chapter") that uses local ingredients to produce tasty dishes according to that chapter's theme; I ate during the "Best of" "Chapter 12", which incorporates world-wide cuisines. There are wine pairings to boot. The venue is fairly small with both inside and outside tables; I was able to get a reservation several hours before. Service is very good, but short of a Michelin 1-star level due to some "mistakes" such as not putting out the utensil holders. Ordered: Gazpacho + pizza like dumpling + fried sushi rice - gazpacho - tasty small morsels. I enjoyed the gazpacho and sushi rice together. Fish ceviche - I forgot the fish type, but comes with a sour lime like ice, onion, corn, and several squash sauces. I appreciated the different temperature and texture mix of the ice + fish White asparagus with egg yolk whips + hollandaise (?) sauce with pistachios over it - liked this one. A bit too sour for me. But the rich egg yolk + crunch asparagus + the hollandaise sauce made for a good vegetarian dish Chinese ramen - beef broth with sichaun beef over egg noodle ramen with onions, peanuts, and some vegetable - this dish was all over the place: japanese, chinese, thai maybe. Only criticism is it could have been served hotter Lamb cut - with grilled onions, yogurt sauce, and some spicy orange sauce which reminded me of the original flavored "CornNuts". Lamb wasn't too gamy and was tender. Interesting flavor profile with the spicy + yogurt. Hands down the best meal we had in Amsterdam. The rotating menu 'chapters' (different concepts, changed every three months) don't repeat, and you can tell that everything is made with loving care and an exacting eye for detail. The concept this time around was a classic Dutch menu, but with a playful twist to every dish. Our five-course lunch, with smoked eel supplement, was expertly cooked and each one turned a menu item we'd had earlier on our trip into a brand new experience. There were enough palate cleansers and extra dishes that we were surprised by the amount of food, and left completely satiated and ready for more winter exploration. Yesterday was my third time at the restaurant and we got to taste Japanese Kaiseki Menu. First of all, I am a big fan of the rotating menu, I simply love the idea. A long time ago when I thought of opening restaurant myself I wanted to do the same. Anyway, let me go back to yesterday's dinner. 7-course Japanese dinner which left me a bit underwhelmed. The ramen was extremely salty, I kept waking up at night super thirsty. The first courses of smaller appetizer-like bites were okay. Sashimi course had a piece of salmon toro with mayo on top, so fatty. Did not appreciate the combination. My favorite was the aged ribeye and the black sesame dessert. Hidden gem! Don't let the lack of people inside deter you, this place is amazing. Best food I've had in Amsterdam by far, and I'm told they change their entire menu every 3 months. We went here when it was Guts and Glory, a year or two ago. We were disappointed to hear they had changed, but delighted when we found out the change was mostly in the name. Still a multi course chef's tasting menu where you get little to no information about what's about to be coming your way (I would expect a lot of seafood). Definitely something that you have to be a bit adventurous for but let me tell you, EVERYTHING I've ever had at this place, in either iteration has been FANTASTIC. Absolutely one of my favorite restaurants in the world. Wish I could give it more than five stars. read more

Great restaurant with an outdoor terrace and open kitchen on the ground floor. Most of the seating is upstairs and because of the open kitchen below it is HOT. They need some more ventilation. Still a great evening however, the 5 course meal was lovely and you get two complimentary dishes as well as bread and olive cream to start. The white fish and fish stew (no picture) were slightly salty to me, the other dishes were great though and full of flavour, the burrata being my favourite. Great wine list, friendly servers and a smart, casual atmosphere. Will be back when they switch up the menu again :) read more

Seriously the best chicken i've had in my life! The chefs (also working at a Michelin star restaurant) are so pasionate about cooking, they put the boring chicken right back on the map! (They only serve chicken btw) The way of prepping is absolutely delicious!(injected with chicken broth and shortly fried in special fat) The starters are great as well! Small pieces of art and using every part of the animal. No waste!! The concept is based on a no waste way of thinking and for now the chicken is the centre of attention. Looping forward to the next concept, but the chicken needs to stay!!! Small point of critique, you smell like a smoked chicken when you leave as well. I'm sitting here at the restaurant right now, on a Valentine's evening dinner with an old friend of mine. Acqua Panna water = much better than Spa. Thank you. Bread course: soft, room temp bread with ham butter and pork rillette. Ham butter ++ Amuse bouche: white sausage with deep fried apple and an apple compote, salt and pepper sausage, prosciutto on crouton with tomato. The white sausage lawd so good. First course: pork dumpling, Chinese style, in a sesame oil broth. The dumplings I made last night in my house were better -- skin was broken on one of two dumplings. Broth uninspired -- literally just some beef broth (?) with some sesame oil. Interesting flavors in the filling, but texture is slightly grainy. Second course: pork sausage with ham mousse, sauerkraut, crispy potato cubes. Pretty good -- sauerkraut balances the richness of both the sausage and the mousse on top. Excellent texture from the crispy potato cubes. Perhaps a touch too salty. Third course: cauliflower, roasted in brown butter, topped with lardo and shaved black truffle. My dining companion really enjoys this dish. I feel it lacks some acid. Fourth course: pork cheek with sweet and sour carrot puree, sweet and sour red onion, puffed rice, chorizo. The pork cheek is cooked perfectly, but the accompaniments fall short -- the sweet and sour isn't pleasant. The puffed rice is interesting, but something like cracklings would've been better. Maybe the pork itself could have been better with a little more salt. Fifth course: pork loin with gailan, fennel and cinnamon oil, mustard seed. Again, the pork is cooked perfectly. Gailan is cooked well, mustard seed doesn't add anything. Maybe a mustard sauce would have been great -- the dish needs some acid. Sixth course: steamed bun with char siu pork, "XO sauce," pickled cucumbers, black beans. The steamed bun is cooked unevenly -- the bottom is hard. I wish they hadn't served this, simply because I've been to Ippudo and Baohaus. The beans are a little undercooked and don't add anything other than a grainy texture. Also, where is the XO sauce?! Pre-dessert and dessert: ok. I love cracklings but not on ice cream. A lot of the dishes were misses, but I can't fault the technique. Every piece of pork we had was expertly prepared. I'd like to come back and try their beef and chicken preparations. read more

From the moment we came in and were recognise by our names to the very end. Excellent food and excellent service combined. We love Amsterdam and come here very ofte. I made a booking for here blindly based on a friends recommendation. I'd been working off a list of Amsterdam restaurants and markets. Judging by the name I thought this place would be a spit and sawdust burger place or similar. I was pleasantly surprised to arrive at an inexpensive (relatively) and friendly Michelin starred eatery (almost a contradiction in terms). The food was exceptional, the staff were lovely, and it was a very nice place to spend a couple of hours. Would highly recommend and hope to come back at some future point. read more

Despite the name, this place is more glory than guts. Sister restaurant of Cafe Daalder, Guts & Glory's menu is centred around a particular animal. Every three months the animal changes. When we visited they were onto their third 'chapter' - beef. Prior to that they had fish and chicken. The theme here is to use all of the animal, no part is spared (sorry vegetarians). But it's not about serving heavy offal dishes, it's very refined, well thought out and delicious cooking. Our first course was actually a cod fish dish, with the sauce being made from beef broth. We probably shouldn't mentioned this as by the time you visit the menu would have moved on to the next chapter, but they served bread with what has to be the best butter ever! Beef butter. Made from beef scraps cooked slowly in brown butter. It was craaaaaazy good! Took me completely by surprise. I am a bit skeptical about most places right around the Rembrandtplein. The place is crawling with tourist traps. I just kind of assumed Guts & Glory was one of them. When someone suggested this for lunch, I tagged along with very low expectations. o.m.g. Blown away. The restaurant doesn't really have a menu. They have themes that last a few months, and you can order a certain number of "surprise" courses. This must keep the chefs interested in their work, because it was ah-maaazing. We got lucky and stumbled in for their "Latin America" chapter. We had the 3-course meal for 29 euros per person. When we were there, it consisted of... Bread: crusty bread with chimmicurri pesto and herb butter = tasty Starter: deep fried banana with a dallop of peanut sauce + beef and cabbage empanadas = nice surprise 1st course: ceviche with charred corn and jalapenos, topped with pisco sour ice shavings = WHAT?! SO. SO. so good. 2nd course: simple steak garnished with spicy greens and more charred jalapenos = beautifully cooked Amuse-bouche: tiny pastry medallion topped with dulce de leche cream and candied pecans = I wanted a big one 3rd course: coconut ice cream + coconut crumble + grilled pineapple + coconut ream = lovely Drinks: Water; viognier to start with; we switched to a chilled pinot noir at the 2nd course = happy TRY IT! read more
