Both of them are excellent, and I would recommend ordering one of each, no matter you, order the noodles in a soup or a dry noodle bowl. The bone cylinder and beef shank are usually our go to appetizers. They are quick and delicious! The steamed dumplings and cumin sandwich are also flavorful and very well done! The noodle soups are absolutely fantastic! After the third visit, the waitress told me that they can mix and match the noodles with the broth. So you can decide if you want the pulled noodle or shaved noodle and then you choose the broth you prefer and they can make that combination happen! This was the perfect place to go to after ice skating (which is right across from the restaurant). We had the Lanzhou Noodle Soup, Biang Biang Noodle, and Curry Chicken Noodle Bowl. All were good. About 10 minutes later, I went to take it out of the car and the bottom, fell out, and all the food fell out, and I had noodles all over the car and the floor, and some on me! Another one a little pieces of boiled chicken on top of the noodles, so disappointed! But the glaring problem was the fried rice!! I didn't have a lot of expectation for Chinese food when we were looking for good Chinese cuisine at Edina. Noodle was always a safe option for us. My son is a big noodle fan. Especially if there's Beef Noodle Soup in the menu. I like how they have preserved cucumber, which is not something I can get just any Chinese restaurant. Pretty solid authentic Chinese food in the twin cities! This location hand pulls their noodles. I got a beef noodle and it was quite delicious and satisfying! The noodles were fresh, bouncy and a good length. You can literally see the chefs/sous chefs pulling the noodles in the back where you are eating. The decor and ambience is quite nicely decorated! Next up was the Biang Biang noodle which I am a bit torn on. The early bites seemed a bit dry and less flavorful than those which soaked in the bottom of the dish through the meal. It almost seemed like a bit more broth was needed to bring those flavors together throughout the meal. Great little noodle shop, The noodles are hand stretched and the tame has a nice texture to chew. Bunch of my team members want to come here for the master noodle soup. This comes with beef rib bones in a rice beef broth, Ramen. We Oder a assortment of apps to begin with. And I inquired with the waiter what the huge bowls was for and he indicated they have a ramen noodle soup challenge. It is the equivalent to the portion of 4 individual bowls of noodle soup and it has to be finished in 30 mins. If you don't finish in time you'll have to pay for the cost of the soup and if you do finish in time, the noodle soup would be on the house and a $25 gift card. Needless to say I was both intrigued and was challenged, and my team member's was also egging me on for the challenge. So I completed the challenge with a little more than 2 mins to spare. I met a colleague here for a lunch meeting and it was wonderful. I had been to the Master Noodle in St Paul but this location was new to me. I stuck with the fried rice and dumplings because I liked them so much and it gave me some leftovers to bring home. Both were so good. I love the veggies in the fried rice. I tried to eat the dumpling with chop sticks but after splattering soy sauce all over my shirt, I broke down and asked for a fork. Service was excellent. The atmosphere is so inviting and friendly. They really are master noodles, I don't think I've ever had a fresher noodle. The broth is also very deliciously savory, and the beef was amazingly tender. Cream cheese wontons are delicious, savory (the way I like them) and plump- perfect ratio of cream cheese to fried wonton. Sichuan wontons in chili oil have tons of flavor and are so good. Cold black fungus is good, but you have to like mushrooms. As far as noodles go, they're good. I was slightly disappointed with chicken curry noodles but that's because I like curry with lots of flavor and heat, and this isn't it. There are more solid noodle contenders. Shrimp fried rice has a little kick and generous portion of shrimp. Have ordered here 3 times and I appreciate the consistency of the food and the kindness of the people working here. I'm throwing in all the stars for this little strip mall gem in white-bread Edina. I was very skeptical that a place with some reasonably authentic ethnic noodles could be located in one of the least diverse suburbs in MN. Don't get me wrong, I love Edina but it is known for manicured lawns, an upper-middle class Euro heritage population, and meat and potatoes. A Chinese hand-pulled noodle shop does not fit the stereotype and I was prepared for a take-out order of Chinese noodles akin to preparing for an order of Italian noodles from the likes of Olive Garden. I was pleasantly and thankfully surprised. The shop is spotless and modern and the on-duty crew was friendly, helpful and engaging. I was sad that it was empty as almost everything is nowadays during the pandemic but they were very much open for business and happy to talk about their food. I was amazed to find hand-pulled and knife shaved noodles that are made with pride along with hard to find Chinese street foods such as scallion pancakes, lamb-cumin burgers, and milk-teas. I found the food to be tasty although probably a bit less flavorful/spicy than I would like. The Chongqing spicy noodle soup was hearty and earthy but needed a bit more mouth numbing pepper and spice for my liking as did the Sichuan Wontons in Chili Oil. A star was the braised pork-belly in their String Bean Noodle dish. Soft, melty and with great flavor that was reminiscent of meals I have had in Hong Kong. I suspect that some of the flavors and spice have been toned down a bit because they are catering to a MN crowd that may not be as happy as I am to break a sweat during a meal. This was my first visit, it will not be my last. While I have had perhaps more flavorful hand-pulled noodles in some far-flung major US Chinatowns as well as throughout Asia, it is hard to believe that this place is only a few minutes from my hometown.
