Of course, we also had to try the margaritas, and now I understand why this place is known for them. Fantastic. Fruity, flavorful, beautifully presented and dangerously easy to drink. Then came my favorite thing of the entire meal: the birria ramen. The noodles had that perfect bouncy chew, the egg was cooked beautifully, and the broth somehow found the sweet spot between traditional ramen and rich Mexican birria. It didn't taste like someone simply dumped birria into a bowl of noodles and called it fusion--it actually worked. The chicken mole enchiladas were enjoyable, but didn't execute that traditional flavor coming across a bit bland and lackluster. I also assumed there would be cheese inside with the chicken, and there wasn't. That's on me! Next time I'm asking for cheese because I think that would've made a huge difference. And finally, the molcajete arrived. Loaded with grilled meats, seafood, vegetables and fresh cactus, it was extraordinary. So many different flavors and textures packed into one dish, and the cactus was especially good. Definitely one of the highlights of the meal.
