It was like your El Salvadorian grandma went to culinary school and made her signature dishes for you right in her own kitchen with the freshest ingredients. I realized that my meal took 30 minutes to make because NOTHING was premade. There was no day-old guac blend in my burrito; instead, there was an avocado, ripened to perfection, that had just been peeled. The spinach & cheese pupusa was seemingly crafted by gods--warm, savory, expertly cooked, light yet filling, and sitting atop an incredibly delicious cabbage salad in chile sauce. My meal had an amazing non-greasy lightness that I've never before experienced at other restaurants with similar food. Hands down way better than Besito, and that's saying something.
