This was the most expensive dinner I personally have ever had. That being said it was worth every penny! First the atmosphere is great, very classy. The service was fantastic- the waitress was very knowledgeable about the menu and was able to give great suggestions. The drink I got was very unique and my husband enjoyed his whiskey. I got the filet and he got the New York strip. Both were seasoned and cooked to perfection. For sides we got the truffle Mac and cheese and the Brussels sprouts. The Mac and cheese was easily the best I've ever had but I didn't love the sprouts. I was there for an early birthday dinner and they graciously provided me and my husband with a free glass of champagne and a free dessert (chocolate lava cake). Monarch Chophouse is our favorite restaurant in Colorado! The staff is always extremely polite and the food is always amazing. The tableside Caesar is awesome, as well as the filet oscar, the lobster mac, and the creme brule! The only bad thing that we recently discovered was that there was a management change and the new manager changed the drinks so that they all have less alcohol. We used to love the old fashioned but now it tasted like there was no alcohol and they added water. Hopefully they can bring that drink back to it's former self! read more

25th Anniversary so time to splurge on what has, up to this point, been a flawless experience at Monarch Chophouse. Not this time. Attempt to order a bottle of champagne that is on the wine list. Out of it. Order something else, also out of it. Offered a substitute of 4 small bottles "at the same price". Well thanks, but at the prices you are charging there is no need to mention this detail, just do it. We both ordered the beet salad - based on previous experiences - the beet salad here really used to be a work of art. Not any more. My mistake for not noticing on the menu that the beet salad had been changed in pretty much every way imaginable. I was expecting what I had there a number of times before and this was a pile of drenched sour greens with bottled pickled beet strips, a piece of stale bread with a little bit of burrata on it, a green flavorless paste on the plate and, absolutely drenched in a dressing that someone accidentally put 5x the amount of vinegar the recipe called for in - or something? I ate some of it. Waiter asked me if "we didn't care for it" and I simply said it wasn't what it used to be and I got an "oh, so you haven't been here in a while, you can order the burrata as an appetizer", yeah OK dude, my mistake. He takes it away, then comes back to the table 5 minutes later to proudly proclaim he was taking it off the check. Again, at these prices a $15 salad isn't breaking the bank here, so no need to mention it, just do it. That's just a minor nit - but the trend of service being forgetful and underwhelming was set, and it continued throughout the night. I had the filet with Bearnaise sauce. Ordered Medium rare. The steak was stone cold in the middle - not going to mention it to the waiter - though he never asked. The Bearnaise was the strangest I have ever had. It seemed mayonnaise based or something. Very thick, white, and creamy. It might have had some tarragon in it, but not sure. Again - not going to try to crack this code with the waiter during our 25th anniversary dinner. The steak was oddly over seasoned and not in a particularly good way - and trust me, I like a lot of seasoning on my steak, but this just didn't taste good, and there was way too much of it. It was a nice cut, and even stone cold it was pretty good once you got in beyond the seasoning. My wife really enjoyed her Sea Bass, thank the baby Jesus. We had the roasted wild mushrooms. Nothing special there in any way. They seemed sauteed, very plain, and dare I say, "not wild". The salsa verde that the menu mentioned was non-existent. Meantime, we are running low on the mini champagne bottles I had to open for my wife (service?), so I order a scotch. Double 12 YO Maccallan on the rocks. It arrives in an oversized snifter with about 4 ice cubes in it. No biggie, just asked the waiter for a glass of ice. But, without a doubt, this is the stingiest pour I have experienced at a bar in a long, long time. Surprisingly stingy - it's not like this is a place that can't afford to make a decent drink. I confirmed with the waiter when he came back to the table 10 minutes later that it was indeed a double. He said it was and asked if I needed anything else. Yes please, that glass of ice you forgot about. Soldiering on - dessert - I like a good Chocolate Mousse, so we ordered that and also the Chophouse S'more. The S'more was really good. I'd recommend that. The Mouuse was...uh... a cake? Or a pastry? A heavily frosted rectangle that was so thick and loaded with nuts that a spoon wouldn't easily go through it (we had asked for forks, but never got them). I have no idea what the hell this was but it in no way resembled Chocolate Mousse other than the fact that it was chocolatey I guess (I would describe it as sickeningly sweet) and it was also brown. But it wasn't chocolate mousse - nope. I think they should call it cake. This item clearly arrived at the establishment frozen in a box - when I first put a spoon to it I thought it was still partially frozen, it was that hard. But it wasn't. It was just a brick. A monolith of mediocrity. Meantime a large table is seated next to us with a bunch of guys wearing t-shirts and ballcaps. I'm not much on dress codes, but seriously. Our expensive intimate dinner suddenly felt like a Dennys. At this point I just want out of there while still holding up my end of trying to have a great time with my wife for the 25th anniversary dinner with good cheer and no complaints. So I pay the bill. Waiter charged me for the beet salad. I have done this maybe 3 times in my life, but that sucker came right out of his tip, and frankly, I still don't think he deserved the tip I gave him. Very disappointing - both in the quality of the food, which is nowhere near what it used to be, and the service, which per my previous review below used to be more than perfect. We eat out a lot - and usually have to drive to Boulder, Golden, Denver, or Idaho Springs to find decent food - let alone good customer service. I am NOT kidding. And we finally finally finally tried The Chop House at The Monarch. Good decision!!! So we ate at the bar ... the awesome bartenders made us dirty martinis, let me taste several wines to select from, and topped the night off with expresso martinis. We ordered at the bar but the food was brought to us by servers. The temp of the food was perfect. Everything was delish ... we ordered the NY strip, and scallops which were seared to perfection. Also - we were brought small bites of a caviar appetizer they wanted us to try. Soooo yummy! Word of advice ... you pretty much need a reservation to get in. There's a reason for this. Great staff. Not much to say about the Monarch Chophouse. The prices are high but the product didn't match the prices. Not that the food was cooked wrong or anything. There just wasn't much of a difference compared to say Saltgrass. I understand that the location of the restaurant is in a casino, but that shouldn't excuse the mediocre food. We were here for a business dinner and there was 8 of us altogether. We had several drinks each, apps, and entrees. We had good time, but a few things were a little annoying: 1) The restaurant was really dark. If the lights could have been brighter by a couple notches it would have been perfect. 2) Service was really slow. There restaurant wasn't full but the items (drinks and food) came out too slow. Our server hardly checked up on us we had to flag him down to get his attention. To be clear, we knew we were going to spend a lot here. but we expected the service and the food to fit the price. With the other options available for get togethers, we will think twice next time before choosing Chophouse. read more

Blown away is what would say my reaction was to this restaurant. I never know what to expect in hotel restaurants - sometimes high expectations are major let downs and other times they live up to the standard. There is no question this place was nice. In fact, we were going to get a drink at the bar but they told us they would seat us early so that worked out really well. Everyone from the person greeting us to the people serving our table was so polite and nice and, at times, funny! The tables were social distanced but we were in the back so we were able to see the whole place really well. It was maybe the combination of just enjoying a nice dinner together with the fact we haven't been dining out for a very long time but I believe we ended up being there for close to 3 hours. First things first, I don't know where to begin because everything was fantastic. There was a nice wine list but the mixed drinks were the highlight. I am skeptical as so many times these are let downs but kudos to the bartender for absolutely nailing every drink we had. Specifically, I believe it was the Peak Bagger that we both loved. We had a nice lychee based palette cleanser to kick things off along with the bread bowl. We went with the waiters suggestion of the scallops and beet salad to start. Both were wonderful dishes. I knew Ribeye would be the way to go, he confirmed, and I can't tell you the last time I had a steak this good. It was absolutely perfect in every possible way. My wife had crab legs - can't go wrong there! For dessert, we went with the chocolate cake, which worried me because I thought it would be too sweet and heavy. On the contrary, great balance of sweetness and it wasn't heavy at all. Went to the Chophouse at Monarch for my husbands birthday. Our server Troy was absolutely out of this world. I am gluten free, and was asked if I had any dietary restrictions before we even ordered anything. Once he discovered I was gluten free, he put in a special order or the best gluten free bread I have ever had in my life. Troy also made impeccable recommendations for cocktails and food, and made sure to warn me of every item that may contain gluten throughout our meal. Our meal, by the way, was... unimaginably delicious. Everything we ordered was unbelievably full of flavor and cooked to absolute perfection! My husband and I could not have asked for more. Troy also thoughtfully brought us a little dessert plate for my husbands birthday, a complimentary tasting of tequila and continued to advise me of items that may contain gluten. He was, far and away, one of the best servers we have ever had and made an enjoyable evening even better! Could not recommend this restaurant and their staff enough. read more

This makes me sad. Since this place opened we've gotten take out quite a few times and I've eaten at the bar on a couple of occasions while visiting the spa when Covid-19 was on a downswing. I was pregnant at the time and they had great protocols, so it was a rare exception. The food was exceptional every time too along with the service. Tonight for the first time since our son was born 9 months ago my spouse went to pick up some takeout. Here comes the sadness: The host who took my order didn't ask for a name and didn't seem to register my order. I called back to verify both because I had a bad feeling. I should've cancelled at that point. I asked for two Caesar salads with dressing on the side, parm risotto, braised bison short ribs, Colorado lamb medium rare and expected their lovely bread as usual. Instead I received no risotto, was charged for it, overdone lamb, one Caesar fully dressed and soggy, one as I ordered them with dressing on the side, and zero bread. When I called the same host told me she couldn't refund me for the risotto and her manager would call me back. That was an hour ago. My spouse is on his way back to return the mostly inedible food we paid $151 for with tax and to-go tip. They've lost a local family's patronage unless this is somehow made right. read more

Great place to eat. We ordered the Bison Short Ribs with Bone Marrow and the Roasted Chicken. Very tender. The short ribs fall off the bone tender. The Roasted chicken was not dry and very juicy. These truffle Mac n cheese was so cheesy. I recommend the The Rose Old Fashioned. Great ambiance and very moderate setting and quiet. The wait staff is awesome and attentive to your every need. One thing I know is 801 chophouse is underrated and doenst get the recognition it needs. The monarch chophouse was amazing! As you walk in you see the lounge and it is a vibe. Here you can't feel out of place because it's at a casino so no need to be dressed to impressed. We were greeted right away and they were great for accommodating with our reservation that grew in size. The service was on point! We started off with the Cesar salad, and I loved the presentation. They make it right in front of you. It tasted great, couldn't take the anchovies which was used to coat it. The tomahawk is huge and I recommend sharing with a couple sides and you'll be set. I forgot the sauces that came with it but they all complimented the steak in its own ways. For the sides we ordered the jumbo bake potatoe and truffle Mac and cheese. Everything was delicious and well definitely be back when we are in the hills. And there's a plus, if your a gambler like myself you can use your monarch points towards your bill. read more

The food we did have was AMAZING and we will definitely make this a stop on any future visits to Blackhawk. I would recommend making an appointment ahead of time as it does seem to get pretty busy, especially on the weekends. The staff was very professional and ensured that we had everything that we wanted. The steak (we had both the filet and the Waygu) was so tender and perfect. The Parmesan risotto was reallly really good we almost licked the plate. The cheesecake was so light and fluffy and had the best ginger snap crust. The menus lit up so as to see things really well. My husband and I were there for our 25th wedding anniversary. The bread and butter that came out first was heavenly. We had crab cakes with dandelion greens and a beautiful vinaigrette for our appetizer. My husband had the prime, New York strip loin and I had the prime fully mignon. Mine was cooked Pittsburgh, black and blue. He had his medium rare and we both had them Oscar style. It was the best meal that we have both had the very very long time. The Ambiance is dim candle lit very fancy looking but there were people in shorts and tee shirts there. The Chef sent out a candy that was beautiful and my husband loved and they also sent us home with two personal carrot cakes which were amazing. This is a hidden gem. The ambiance is luxurious and sophisticated. The food was cooked to perfection. The coconut curry sea bass soup was one of the best dishes we have had this year and we eat at some of the worlds best restaurants. The short ribs were dry and not melt-in-your-mouth type, I think I do better job than them. The most disappointing dish was the scallops: I can taste the baking soda as I chewed it. Yes baking soda! I know a lot of restaurants used baking soda to tenderize food but scallops? Never had baking soda scallops in my life! And in this fancy restaurant which costs an arm and a leg for the food?
