Since it was my first time, I decided on a trio of their glazed varieties. I'm not a huge fan of overly filled and topped donuts anyway. The classic plain glazed donut was fluffy and airy inside and lightly glazed on top- perfect. The glazed French Crueller was slightly wet inside and crispy outside- prob won't get again as I prefer the fluffiness of the classic donut. The sour cream fashioned I saved for last because it's my go-to donut. Honestly, it let me down. Yes, it was crispy with lots of crusty surface area and had a dense inside. But it had too much surface area that held on to too much glaze, making it overall way too sweet for me. I will be back to get more plain glazed and maybe try the twisted two-toned.

Interior is very "Parisian cafe", period art, TVs showing videos of the pastry chefs doing their thing. She ordered a hot chocolate to start, and a Parisian crêpe (berries, whip cream, raspberry coulis). I ordered a galette (think square envelope-crêpe) from the savory side. I'd had it last visit and had been looking forward to a redux. I ordered the Professeur Steve, capers, mushrooms, caramelized onions, spinach and brie, which arrived with smoked salmon arranged like a rose at opposing corners (keeps it cold). Oh man, this brie-gooing mushroomy sweet-caramelly onion spinach umami explosion goes perfectly taken in a bite with the salmon. Addiction sated; withdrawals saved off until next June's visit. Wife's crêpe was delicious--everything sweet-toothers love. Hot chocolate is real. Like not from a packet but from a chocco chunk and paid labor somewhere nearby. Whipped cream was real, and thick enough that it could have been sliced and served on its own. Absolutely freaking delicious. Love this place. See you in a year!

Based on experience at Taste of Fort Collins on Saturday night. Walked right up to order through…read moreassembled crowd. The lack of wait to order combined with the large crowd waiting for food should have clued me in to move on. The woman taking my order warned that food would take 25-30 minutes. Much longer than desirable, but I figured I could manage that wait and proceeded with my order: chicken and waffles for $16 + tip. Thirty minutes pass. 10 more minutes pass. Finally at about 47 minutes after I placed my order, with the headline concert time fast approaching, I inquire where my order is on the queue. She a scrolls down past many orders ahead of mine and predicts at least 15 more minutes. I request refund and walk away. No dinner for me at "Taste of FoCo". :( Bottom line: Worst food truck experience ever. Please, know your limitations and figure out how to accurately tell customers how long the wait. One hour is truly unacceptable, as one does not attend festivals to wait around for food to miraculously appear. Had I been told from the outset that it would be an hour or more, I wouldn't have ordered and could've chosen another place to eat. I gave two stars only because I've eaten their food after a Fortitude run years ago and it was good. Also because it couldn't have been easy for the poor girl taking orders to have all those hungry eyes staring at her hoping their order was next. She was nice.

My daughter ordered the gluten free european waffle minus the nutella. I also ordered the gluten free/vegan european waffle. The portion sizes were definitely generous. My daughter thoroughly enjoyed all of her breakfast and thought it was delicious. Mine was a little bit sweet for me, if i were to go back again i would get gluten free vegan waffle with only the fruit on top. My husband would like to go and check out the waffle lab though so i imagine we will be back :) It is cool to know that there is a location that offers gluten free waffles. I have told some friends and they will be sending some folks over. The location is clean. The staff was friendly. There is limited parking however.
