Had many tamales before this. Nothing even close. In the same gas station as the 10$ car wash. She doesn't speak english. Zero english words. Use google translate to learn some rudimentary sentences before going. 5 types of tamales 1) red with beef. 2) red with chile and cheese, different spiciness than green. Smoother chili flavor. Tastes like homemade chili powder ground from dried chile. 3) red with chicken, different than green with chicken. Have to taste them one after another to distinguish. The red chili spicy flavor is very different from the green chili flavor. The green is captures the sourness of tomatillo. The red has a earthy flavor from freshly ground chili powder from a mix of dried chiles. 4) green with chile and cheese. Spicy on tongue, with slightly sour acidic background. Tomatillo sour blends well with cheese. Contrasting spicy and creamy flavor. 5) green with chicken, has slightly sour taste compared to red. Hand shredded chicken breast. All served warm from cooler. She is there before noon with 2 other older people. By 2pm she is sold out and gone. Best tamales I ever had. Melt in mouth. Like brisket; has to be served freshly steamed and kept warm. If allowed to cool it isn't the same after. Microwave after not the same. Have to eat them fresh and still warm from steamer. Better than any restaurant. One key i sthey are wrapped and served warm; not reheated.
