I love Nicolas and have for many years. Especially in the winter when it's cold enough to sit by their ancient fireplace. The pizza sauce is just right on seasoning. Not too salty. Not too much sugar. I'm keen on their cheese steak and I'll drive here just for one. Succulent. Perfectly made. I don't live anywhere near and this is worth the journey.

As a pizza addict, it's fitting to make sure you try every pie in town. Since this place is the closest to my new apartment, of course it was first on my list! I ordered a pie a few months back and really enjoyed it, and came back for some more. To me, the sauce is really important in making that yummy pizza pie, and this is something that Nicolas has down. Since football was on... some wings were ordered too (their Cluck-U wings) which were breaded and crispy. If your in the mood for a delicious slice, head on over to Nicolas.

Great Jersey pizza here....thin with a great chewy crust. Small space in an old stone building.

The restaurant is okay, but the dining room is tiny, cold, and dark. The bathroom is upstairs in a dark room with a nice view of Route 609.

I think it may be located in the old Rooster Coffee Roaster space on N. Union Street nearest the northern part of town. We had reservations, and boy were they busy and LOUD!!! We were seated in a back room section, which we thought would be a win on volume, but heck, we were all having a fun time and drinking and eating. A lively place for groups for sure. As for the menu, it did take me a few read-throughs as there were many new ingredients to my lexicon, and I wasn't able to visualize some of the dishes from the description. No fret we did nail our first experience by ordering and sharing the Gnudi Di Granchio - ricaotta dumplings, summer crabmeat, corn sauce, charred corn, red pepper puree and scallion -- was delicious and the blend of the flavors surprised our taste buds and the Carpinone le pizze - sunday sauce, parmigiano, crumbled meatball and sausage, I have to fess up, I'm not a lover of meatball and sausage on my pizzia, why because no other place we've been used the RIGHT ingredients... this was a winner. Packed with flavor. I like to taste my meal. Our server, Matthew, was very patient with us as I mentioned we needed more time to review and make our choices. One day, sadly, it may be our last meal, as we sometimes joke. Good thing we live nearby; we will absolutely be back with boisterous friends.

Opting for the smaller cheese pizza, it came out HOT and delicious. Crust was definitely crisp and not too thin. The sauce is slightly chunky and doesn't appear to be seasoned with spices. Overall, a very good choice. We finished with a cannoli which is filled when ordering and very good as well. Service was exceptionally attentive and friendly! Majority of patrons knew the owners... and you could feel the love there as well. Definitely was jealous of everyone else and their big pizzas! After glancing over the menu and seeing about their meatballs we knew we needed to try one. The Large pizza was huge and I am glad i surveyed the restaurant before we ordered. We went with the small. Between the Garlic knots, the Homemade meatball and the Pizza we knew we had made the right choice. The Matball was light and moist. The garlic knots were buttered and garlicky. The pizza was delicious. If we are ever in the area again, we know where we are eating. The service was great. It was a Husband/Wife combo working the restaurant. He was cooking and she was waiting all the tables insode and out. What a wonderful hiddn gem in New hope!

I ordered a large margarita pie to pick up after Googling for a wood fired pizza. When I picked it up, the person at the counter took the pizza out of a standard pizza oven. I asked if it was made in the wood fired oven that I could see in the other room and she said "No". I told her that I only came here because the name of the restaurant on the street sign states "Wood Fired". She replied that I didn't tell her that I wanted a wood fired pie when I ordered and that they only made medium pies in the wood oven. I realized that this discussion was going nowhere, I paid for my order and left. I'll say that the standard oven pizza was very good, but not what I came for. Regarding the ambiance, the bar and the dining room didn't look like the environment I would want to spend time in. So the take away is, if you order from here, make sure to specifically state that you want a wood fired pizza.

We sat outside on a cool fall evening and the heat laps kept us plenty warm and I loved the sound of the waterfall. For me the apps and desserts really stole the show. The carrot cake, tiramisu, and d&d snickers bar were so delish but the carrot cake was my favorite. Will absolutely be back and can't recommend dinning here enough! Go soon so you can eat outside!
