The hype is real. As someone else mentioned in the line, "what other bakery in C Springs has a line like this?" We purchased a Roasted Cauliflower and Romanesco Sauce sandwich, and Pear & Cardamom scone, and a Morning Bun. The sandwich was phenomenal, with the flavors complimenting just the best baguette. Everything was amazing! The sweet potato bread is popular, but very filling. The sourdough has lots of flavor. They also gave a small selection of baked goods and quiches. Be prepared to stand in line outside. Their store is unusual in that you don't go inside. It's a counter at the entrance. The staff are friendly, and the line may be a bit long. I seriously struggled with this review because I will be the first to admit their breads are out of this world. Deliciously different, sizable, and unique. BUT when it comes to service when you're there and reliability of information regarding their store, they are highly disappointing. As a local who looks forward to getting their amazing baked goods, there's nothing more frustrating than trusting they are open, driving out of my way, and finding they decided to close for the day or their hours have changed again and yelp/google etc have it wrong (which has happened on multiple occasions). And then being sassed when you do manage to get in while the store is open just adds to the distaste... When I say this is the best bread I've ever had, I really mean that this is the best bread I've ever had. I ended up getting four of the rolls because they smelled so good, and it was the best decision I've made. My only regret is that I didn't buy more than 4!! The texture of this bread is absolutely exquisite, and the flavor is as well. The cheddar is masterfully woven into the bread, and the leeks add a wonderful element to the overall flavor. My Gawd. I can only rate this place for the Saturday pizza, but if that's all I ever got here I would be a happy camper. I reminds me of authentic, handmade, old-world pizza I've had in Italy - only... better. Simplicity is king here. They use fresh, local (when possible), premium ingredients in their pies and it's absolutely reflected in their end product. It certainly doesn't hurt that their competition for quality pizza is (very) limited in this city, but considering you can only get it once a week - it's worth waiting for. Expect a line and a bit of a wait (15-30 minutes) but your patience will be rewarded. Go grab a beer or four at Goat Patch and the wait staff there will even be so kind to go pick up your pizza at Nightingale when it's done. Can't beat that service! read more

The bread and sandwiches are out of this world. The bacon scone was incredible. It released a sensation hitting every taste bud. It was pure ecstasy in my mouth. I wish I could say the same for the service. The guy taking sandwich orders was surly and seemed to have slipped our order behind his five friends/regulars behind us. The wait was terrible and watching the people behind us enjoy their sandwiches and bakery items at the picnic tables while we stood and watched was frustrating. Good help is hard to find. Some of the most excellent bread I've ever eaten, you can taste the unique grains. Love their cauliflower sandwiches, perfectly balanced. The pizza could be better, maybe more fermentation, maybe a little more salt/sweet in the dough, maybe a little thinner to make it more crispy and toppings more distinctive and fresh toppings, less oil or vinegar? But truly I could recommend their bread to everyone from anywhere and feel good about the recommendation. We made french onion soup with their bread and it was so good. read more

Truly a gem. This is like something you would find in Europe. *NOTE - this place is cash only! The space is very open concept - it is part of an old elementary school that has turned into a sort of strip mall of cute spots. There's a coffee shop, Scandinavian restaurant, and a brewery close by (would recommend grabbing a beer at Goat Check while you wait for your pizza!). The food is delectable. My girlfriend and I shared the cheese pizza - we originally wanted to try the Spring Garlic pizza that was vegetarian with potatoes, garlic and scallions, but it was sold out. Have no fear - another patron nearby heard that we tried ordering this pie, and she offered us her 4 leftover pieces because she did not like it (who knows how you cant like fresh 'za dough and all things garlic?!). She was so sweet and offered us her pizza, so we ended up with a full fresh "Cheese Please" pizza and the Spring Garlic. Both were so great - the spring garlic had larger chunks of red potato, so it was a bit heavy on the starch. The "Cheese Please" had fresh basil and some drizzled oil. The crust is so fresh and cooked to perfection - it bubbled up really nicely to make those delectable, thin, crust bubbles that I love. Service took about 30 minutes on a Saturday afternoon - not bad at all! We grabbed a beer at Goat check, and I snagged the Golden Milk Scone, Dark Chocolate Sea Salt Cookie, and a loaf of Ciabatta for later. The cookie was salty, but was truly the best cookie I've ever had. The scone was AMAZING with coffee and had an orange blossom glaze on top that was so delicious. The space has only a few tables inside, but if it's nice out, there's tons of patio seating. I would definitely come back - the food was great, service was so friendly, and I got to take home some goodies. You don't see a bakery like this in many places across America. First, they mill their own grains in the bakery. Should I say that again? They MILL their OWN grains IN THE BAKERY. That is insane. The bread is fresh and some of the varieties are excellent for people with gluten sensitivities. Talk to the baker to learn more about their process for grain selection and where everything comes from - it is fascinating. You will love this place and its simple commitment to the community and craft bread. They purchase heirloom grains from small farms. They grind said grain in house with a custom stone grinder. Then the make a variety of delicious and nutrient filled bread. There breakfast option is simple but great! Bread, butter, homemade jam and tea. Really thankful for this local spot. read more

I have severe arthritis in my hands, and I'm unable to slice or rip their heavy crust as they suggest. I am sure there are many other people with the same issue. At eight bucks a loaf I'm sure they can afford a slicer, and hope they will consider offering slicing for those of us who would like to enjoy the bread but are unable to slice it. We love this place! Their bread and pizza is absolutely the best around. You can taste the freshness and quality in every bite. As far as the pizza goes...be prepared to wait! We waited 45 minutes from the time we ordered. This did not include the time spent in line. They sell out fast so get there early! I am glad that I drove across town to buy a loaf of bread. They had some interesting peach and basil scones. A great sourdough and I god the seeded bread. They are only open Wednesday through Saturday and only make a limited amount of some items. I heard that their pizza that they make on Saturdays is awesome but still have to try them out. just have to remember to get there earlier in the day so I can have a bigger selection. read more
