    The food is fantastic the staff is very helpful especially since I know nothing about Ramen. It was clean I would recommend it 7 days a week.

    This is some darn good ramen. The atmosphere is sleek and modern. I'd heard some folks didn't like ordering on your phone but I liked it. The menu is small so I didn't need a server to come over and explain the dishes to me. There was a guy going around delivering the food and chatting with the diners. He did check to see if we had questions while we were ordering. The food arrived quickly and hot. I love ramen but I don't get to eat it as much as I would like so I may not be the best judge. I enjoyed my ramen and the whole experience. Since it's in the Bobby Boy / Bottling Plant complex it's easy for me to get to. Plenty of parking and my favorite bakery is 20 feet away. I will be back as often as possible.

    The latest restaurant concept in the highly touted and well loved Bobby Boy Bakeshop repertoire. This one is right next to their 2nd location of the Bakeshop in the Salem Bottleworks, with the Slaberia being to the left, and them being to the right. None of these places have a sign on them... would be nice if they did. We did not know which spot was Noodle Ju'B when we walked up, because all the windows are heavily tinted. In short, it's the first building on the right when you walk into the "gated" area which used to be the distribution center. Inside you'll find a modern eating experience. All counter seating, menus and ordering are all done via QR code, which makes things nicely streamlined... though I am sure it will annoy some people. Probably not the main demographic here. You are asked to tip when you order... a little strange, but I guess it's the only option. There is someone who delivers your food and brings a water pitcher, but not traditional waiter service. The menu is small, 4 types of ramen, a couple apps, and a few canned and bottled drinks. The bottle of yuzu lemonade was a little hilarious, in both size and price. Probably won't fall for that again. The steamed bun as well, is just one (very delicious) bun. I honestly can't remember if it was expressed on the menu as singular or plural. Now that the things I didn't love are out of the way, let's talk about the delicious items. The Gyoza is really really good. It had a perfectly crispy bottom, very tasty fillings, and the sauce was the perfect complement. This was the better appetizer, and really the only shareable one (with 1 other person). The Shoyu ramen was absolute perfection. Handmade noodles, extremely flavorful broth... which is of course the key. Tender pork that was easy to pull apart. And for me the favorite... the soft boiled egg with a runny center that just soaks up all that flavor, while releasing it's creamy yolky center into the dish. This eggs yolk had a very deep orange, and that creaminess was apparent. Had to be locally sourced, which you would expect at this price point. It was an expensive lunch, but in the future, I think I'd be good with just the ramen and a beverage now that I know what's up. It was absolutely delicious, and really, as long as that is the case, totally worth the cost. I'll be back!

    The atmosphere is very chill and relaxed, and the ordering system makes everything super easy, you order directly from your seat and they bring everything to your table, which makes the whole experience smooth and convenient. We had the steamed bun and the gyozas, and the Shoyu Ramen, everything was rich, flavorful, and comforting. Service was friendly and efficient, and overall loved the whole experience.

    I came here for lunch the other day. Reading the reviews ahead of time were helpful to know how and what to order. With this place connected to the Bobby Boy group, I knew I wanted to give it a try. We came at lunch. Staff were super friendly and helpful. My food was incredibly flavorful and very filling. Bummer they have no GF options to bring my wife, but the staff said that was something that was planned in the future.

    Leaning into the Japanese counters and the Australian QR codes/limited waiter service, this spot is reminiscent of my travels. The pricing is not. So expensive for ramen. Solid flavor but would recommend more tofu to other ingredient ratios. I am wondering why they close at 5 pm. Such an awkward time-the spot was nearly empty in the final hour.

    I had the noodle place on my list since they opened. The bakery and pizza place are amazing and Noodle Ju'b did not disappoint. I sat facing the kitchen and could talk to the staff making the food. The menu is a QR code and you order online. There is a host/server who seats you and brings your food and drinks. The menu is small and focused. I triad the pork bun and shio ramen. The bun was fluffy and filled with tasty pork. I loved the ramen. The broth was light and the noodles had a nice chew and never got mushy. The wontons were delicious and I enjoyed the marinated bamboo. I can't wait to come back and try more ramen.

    I can't say enough good things about this restaurant. The seating is only counter seating either facing the kitchen or looking out the windows. If you come during prime hours you'll probably find a line out the door. Service was quick , food was hot and delicious. You scan a QR code , order what you want and pay upfront so everything is efficient. Everything is so fresh and house made. Looking at the description of our dish immediately prompted Google searches. Soy Seasoned Chicken & Dashi Soup, Roasted Pork Chashu, Pork Neck Ham, Ajitama, Scallion, Menma, Naruto, Nori, Einkorn Noodles. I have never had an Ajitama egg, but now I'm in love. I guess the main lesson is don't be an afraid of an unknown item it may turn out to be your new favorite.

    We wandered in after attending the Moravian Fest in Old Salem and we're greeted heartily by the front of house and (open) kitchen. I think it was their third day of service so not sure if their currently limited menu will expand. Or maybe they'll just focus on doing a few things very well? I wouldn't mind that. We had one each of the starters. The steamed bun was steaming hot and fresh. A bit of pickled ginger on top added a nice kick to the sweet pork belly. We almost wanted it to be served on the side to make sure we got a bit in every bite. They gyoza was also pork (sorry non-pork eaters) and my wife said it was the best gyoza she's had - and she's had a lot. The spicy cucumber salad was a nice refreshing change of pace and not too spicy for me. I had to choose just one of the three ramens unfortunately (they also have a soba - soupless ramen). I chose the shio ramen. Interestingly a chicken broth but with pork. The soup had rich, layered flavors. Certainly the best in this area. The noodles were plentiful, fresh, and not overcooked. All of the staff were really welcoming and happy to get our feedback. I'm looking forward to returning to try the other bowls.

    Good place, a fun stop that everyone should try! Is it the best I've ever had? No. But is it good? Yes. Service was fine, ambiance was fine.

    Cool spot at Salem bottle works. Self order, QR code menu. Being vegetarian, there was one option, the vegan ramen. It's obvious they use high quality ingredients. It was good initially, but we ordered chili paste to be added which really elevated the ramen. The veggies were mostly bean sprouts and cabbage - I wish they added more to the ramen. I also wish there was a veggie appetizer as well. Prices are higher for Winston but for the quality of ingredients it matches. Overall would return.

    Damn good ramen. Shio is probably my favorite but the Shoyu is very good also. Service was prompt and food comes out quick. Glad to see a line outside this place everyday

    If you're looking for a chefs kiss best Ramen that you've ever had this is the place for you! I love food I'm very picky about my Ramen the broth and noodles are hard to put into words how incredibly delicious they were. I had the takatsu and I ate it all! We also had the potstickers omgggg so fresh not pre made. As fresh as you could possibly imagine. We also had the bun wow wow wow the flavor was amazing. The folks are extremely kind and put so much passion and great love into everything they serve. The owners treat their folk with great respect and in turn they treat all of their customers with great respect! It's spotless, smells amazing and is worth the wait!
