Food/Taste/Flavor: 4/5 - ordered two Pho with one Rare Beef (#13) and one Rare Beef and Brisket (#15). The broth was a bit salty but quite one dimensional where we didn't care to finish the soup. The rare beef was already cooked all the way through by the time it arrived at our table that we're not quite sure what the difference between that and well-cooked would be. It was interesting in that there were sliced mint in the soup but the cilantro was out on the plate for you to add based on preference. While the noodle was good, it wasn't quite enough to fill either of us. Service: 3/5 - very efficient but not friendly at all since she seemed annoyed at any questions/requests. We've been to small Asian restaurants before but this is a whole different level of curtness. Ambiance: 5/5 - clean overall with light instrumental music playing Value for price: 4/5 - not the best pho but seemed like it was one of the only options around. We went here for the first time today. We went for an early dinner and no one else came in the entire time we were there. It was a very quaint little restaurant. We were told to take a seat and the waitress came over and handed us menus. We both ordered Bun which is the vermicelli noodles. We also ordered shrimp summer rolls for an appetizer. It took a long time for our food to come out, but at least I felt like it was fresh. The portions were huge and even though pricy for what we ordered they did not skimp on the meat. Here was the issue. First off and maybe because the place was empty she was drying or doing something with dishes or silverware that literally hurt my ears, so bad my husband asked if we should take it to go. Thankfully it stopped. Our appetizer and meal were served together and then we never saw the waitress come out again. We waited and waited finally I got up and walked to the counter and said "Hello" through the swinging door. She popped up from behind the counter where she had fallen asleep. Anyhow I asked for a to go container and paid. I would probably try again maybe she was just tired. Next time I know not to expect any friendliness, service or attention just hopefully good food. The problem however is when you go out it's because you want great food and service. Our 2 meals and a can of coke was just under 50.00, so I know I can make it for a lot less, but we go to support local businesses and service. Thoroughly enjoyed our first visit of what we expect to be many. Attentive service including questions to clarify that we knew what we were ordering. Guess we looked like the first-timers that we were. Love Vietnamese cuisine and this is a different take on it as if we were guests in someone's home. Absolutely delicious. Fantastic pork and artistic shrimp. Perfect vermicelli. As others have said it's a very nice, clean environment. The way our utensils were placed after our order was reminiscent of white tablecloth fine dining. The reviews that suggest any form of 'rudeness' have never dined in a small and efficient Asian restaurant before. Really great pho based on what's available in the area and we regularly stop in when we're in town. But our nickname for this place is, "Angry Pho," given the short fuse and general, "I'm having a bad day," vibes we get from the owner. (But it's not personal and the food is still great, as other Yelpers attest). So the path to yummy noodles means dealing with terse responses, side scowls and general annoyance, especially if you want to alter stock menu items (and not even by much, like 'add meatballs' ). A good hint for predicting the mood of the place is how many tables need bussing and if the owner themselves are the ones doing the bussing. One table means calm-ish and civil. Anything more than three un-bussed tables means hold on to your hat. We have technically seen the owner smile three times (no tables needed to be bussed and it was pre mealtime rush in those cases). We have only witnessed one all out shouting match between the owner and the kitchen (nearly every table in the small restaurant was un-bussed, so our highly scientific theory holds.) So if you can stomach the mood and walk in psychologically prepared, you will be rewarded by tasty delicious pho with their savory broths and fresh, delicate meats. Otherwise, get the goodness to go and eat at home (and only face the owner's wrathful disdain during the short period of time that you need to place an order). Or, you could not crave pho and just grab Mexican next door instead. But the food is pretty solid, truly. You can't (locally) beat any of the beef broth pho. It's hearty and zesty and will hit the spot. Another favorite of ours is the pork chop rice, which is grilled in their special sauce (of anger and vengeance...I kid, I kid) and pairs wonderfully with a mouthful of white rice. Noodles & Pho has the best, authentic tasting, and delicious pho in the Chattanooga area that I've tried. Which is most of them. You can tell the broth is prepared properly because there's very minimal amounts of oil floating on top so they are diligent about scooping out the foam while it cooks over night. I always get Pho Tai, the rare beef option, and don't waste a drop. Fresh bean sprouts and cilantro every time. It's got a homey feel and the older couple that runs it are nice and accommodating. We ordered 2 veggie pho. all that was in it was tofu and bok choy. my daughter asked for chop sticks and the woman begrudgingly gave her some but took her fork away. Noodles &Pho is my #1 spot for Pho ( see my #2 spot - Chopstix- review). It's Friday, so went to the bank at lunch and picked up these goodies! The chicken Pho broth is so balanced and delicious. You will notice how clear the broth looks compared to my other review of Chopstix pho which has a more prominent anise flavor and the broth is murkier. Both are great, but this one is better. One note, I added my own jalapeno, for some reason it is not included at Noodles & Pho) The Summer Rolls come three to an order compared to Chopstix's 2 rolls, but again, it comes down to balance. These rolls have a balance of noodles, shrimp, and pork. Even though Chopstix's rolls are larger, there is way too much noodle, so various bites are just noodle. I also prefer Noodles & Pho's dipping sauce. Although I did get my order to go, I do know when dinning in, the service can be very slow. It's a one woman show here - and don't expect smiles a banter. Decent pho. Certainly not the best I've had but not worst either. There aren't many choices in the Chattanooga area so this is where we go (unless we are motivated enough to go to the base of Lookout Mountain to get better pho "the chef special" from Cafe & Toast). I've dined in about a handful of times and gotten take out about a dozen. The pho is consistent, as well as the owner's attitude. I feel like I need to follow protocol by ordering quickly and concisely, then politely stepping aside. It is a Seinfeld episode every time I'm in there. That actually makes me laugh a little on the inside (of course not out loud as I am sure to be quiet and make no further eye contact after putting in my order). I hear the fear in other patrons' voices as they quickly and over-politely put their orders in. Every once in awhile you'll see a clueless fool who walks in for the first time not knowing how to order, takes their time, slouches, and asks for water with extra ice or something ridiculously indulgent like that. This is the best pho I have had in the Chattanooga area. Living in an Asian community right outside of Atlanta where there is a 24 hour pho joint on every corner, the pho here is actually comparable. The broth was a little salty for my liking, but that was my only complaint. When you walk in, you are greeted by a small seating area, which is very clean and modern. I came around 11:30, but was the second customer for the day (they open at 11 am). There was a bell on the counter which I had to ring, then a lady came out and sat me. My food came out within 5 minutes of me waiting, and was piping hot. I ordered the pho tai, just like I always do. I got the seafood pho and the pork banh mi. First of all, the French roll for the banh mi was probably the best one I have ever had. SO SOFT but also crunchy. The meat was actually a sliced up pork chop. I've never had it that way. Different, but also delicious. The seafood pho was fresh and yummy as well. I could have used some more greens on the side, but that's a very minor gripe. There were bean sprouts, cilantro, and sliced limes. No basil :-( (which is my favorite part). In the soup, there were muscles, shrimp, and crab cakes. No calamari, which, again, would have been nice, but an extremely minor complaint. The service was decent. Only one waitress who I think is one of the owners. It did get pretty slow once they got busy, but she held her own. All in all, great Vietnamese food! read more

It's located next to Dollar Tree & Hobby Lobby in the strip mall. The place is nicely appointed with new furniture & decor. There are laminate tables & chairs peppered throughout the dining area. The authentic French cafe music is piped in softly over the intercom. There is great soft lighting. The floors are new fabricated hardwood. It has a spa almost atmosphere to it. The dining area & bathrooms are EXCEEDINGLY CLEAN. I was greeted immediately by a lovely older lady. She showed me to a table & brought water & a menu immediately. I scanned the menu to look at their selection but settled on an appetizer of spring rolls & a bowl of Rare Beef Pho. A young girl took my order & was very kind, polite & courteous. The woman brought out a small dish of pho accoutrements: bean sprouts, basil, cilantro, lime wedges, jalapeño slices. All if it was extremely fresh!!! The spring rolls arrived & they looked & smelled fabulous. They wonton skin was bubbled from the wok frying. They were hot & delicious. I sprinkled a touch of fish sauce & some siracha nibbled away! The pho came out steaming in a generous sized bowl with a lovely fragrance of beef broth & spring onions. I picked off the cilantro & basil & added them for flavor. I dipped into the soup, and it was sublime. The broth was lightly flavorful & the meat was plentiful & fresh. The noodles were perfectly cooked. Good place for some authentic or pretty close to authentic Vietnamese food. Not too many options around these areas but it wasn't bad. I got the bun dac biet, the noodles was cook good and they give you a good potion of meats. The veggies aren't the freshest but it's not bad. I also got a side order of banh uot. That was ok, it was frozen that was heated up, which is normal if you eat it at home but the banh was a bit hard. The Cha was good, cant really go wrong with cha, it's all premise. This pho is very authentic. It's South Vietnamese-American style and it tastes and smells like home. They also have many other Vietnamese and Asian dishes which are hard to find in Chattanooga, like the Yeo Soymilk. If there's a better pho place in the area, I would love to know. read more

On the hunt for a new place to try Pho; found this through Yelp and gave it a go. Parking is easy with a huge lot in the strip mall. Came during lunch on a Friday and the crowd was light and service was efficient. I ordered a veggie Pho, the broth was tasty and the veggies were fresh and delicious. There was a side of some spicey...spice which wasn't overpowering or too hot and added nicely to the flavor. Food is the star as the decor is basic, the place is clean, and there were pretty good music playing as well. The price was reasonable (around $9 with tax) and I had water to drink. Try this out. I am working to become an expert in pho and fortunately live in an area with a great international food scene (Atlanta). The pho at Noodles & Pho in Chattanooga is FABULOUS. But let me add a disclaimer: Do NOT come here for friendly service; come only for delicious food. I actually had to pull up Yelp while there to read reviews of the service to make sure that it was not just ME that the waitress/hostess hated ; ) Yes her attitude is not welcoming AT ALL, nor did she take well to the compliments that I attempted to share with her at the deliciousness of the pho; however, the pho is worth it. We just won't be best friends ; ) This was my sister's first adventure with pho, and I was thrilled that this was so good. Interesting that they do not serve it with jalapeno or basil, but they do give the goodies of lime, bean sprouts and cilantro. We got the brisket and rare beef (number 15, I think), and they only offer one size, which is perfect for lunch. We also shared the spring rolls, which were yummy. A small but well decorated storefront in a shopping plaza, there were only 3 other tables seated when I arrived fairly late. However, there was a bit of a wait until the hostess showed up to seat me. No other way to put it....she was surly. No greeting, just "how many?" and pointed to my table. I almost laughed out loud when she brought the menu and I looked at the title... "Warm Welcome to Noodles and Pho!". Anything but. She curtly took my order for #15, rare beef and brisket Pho Bo. The order was hot, with just the right amount of broth, noodles, and a very generous portion of beef. She brought the side dish of bean sprouts, but the customary jalapenos were missing, and there was mostly parsley with a scant amount of Thai Basil to season the broth. But....even with that, this was some really good pho. I thought of asking for more basil but decided I didn't want to be barked at again. I would recommend this place for takeout, as the pho is worth it, but I wouldn't eat here if this is their normal "warm" service....on the other hand, she may have just been having a bad night, who knows? read more
