This was my second "tasting menu" meal experience. My first one was in Puerto Rico and I LOVED it. Maybe it was the excitement or the anticipation of hoping this place was just as good which made it not meet the expectations. It was good though don't get me wrong. I just didn't expect it to be located and arranged the way it was for the price we paid. Some other reviews have mentioned how parking is kind of hard to find, and the ambiance wasn't really up to par, which I do agree with. We were a party of 3, I had a modified vegetarian menu, my husband had a pork restriction and the staff was really accommodating to all our requests. Service was great and like I said the food was good but it didn't blow my mind. I probably would never come here if I was ever in Maui again. I feel bad saying anything negative because they server was so nice and welcoming but when it came to the food, everyone at my table agreed they weren't swooped off their feet, especially for the price. I'm not sure how my spouse found out about this farm to table, fine dining spot in Paia, but he's been here several times and couldn't wait to take me and my mom for the experience at Maui's only restaurant with a chef's table. Chef Jeremy Solyn and wife Paulina are the masterminds of the biz. LOCATION: Nylos is located across the street from the Paia Post Office. Parking is street or in the paid lot of the post office (though it's not monitored). We didn't pay and didn't receive a citation. ATMOSPHERE: The interior carries a mixed vibe of modern and old plantation with seating for 18-20 folks through a mix of low tops and a chef's table. It was a bit toasty inside regardless of the a/c being on. The jazz background music matched the ambiance and menu perfectly. MENU: They only offer a three course menu that's available with pre-selected wine pairings. The menu changes nightly but don't expect the online info to be current. I was expecting surf & turf but didn't get the turf. All's good though! May 23, 2018 FOOD: We were treated to a "surf & surf" menu at $85 per person which offered an amuse, two courses of fish and dessert. We added the $45 per person wine progression which included three 5 oz. pours. If the presented wine doesn't please you, just ask as they'll totally accommodate your requested change! AMUSE & SPARKLING: Our meal started out with an amuse, a French word meaning "a little bit of food" which is meant to stimulate your appetite. The plate was artistically decorated with a marinated toybox tomato, cucumber chunk, ball of soft cheese, tong-full of dressed greens, sliver of watermelon relish topped with enoki mushrooms and a drizzled ring of dressing. Very fresh ingredients and use of flavors. The sparkling was a glass of prosecco that went well with the dish. Next came their outstanding house focaccia bread. I was a bit underwhelmed at the sound of the "f-word" as I dislike focaccia, but bite my tongue I did! OMG, it was simply divine! The exterior crunch, moist interior and out of this world garlic paprika herb salted butter made me moan with every bite, LOL. FIRST COURSE: Local Line Caught Mahi The diminutive filet of mahi was nicely broiled and enhanced with a gentle celery root sauce. A roasted maitake mushroom, aromatic mixture of kaiware (daikon) and pea sprouts finished the filet. Very simple yet ingenious blend of flavors. A glass of rosé wine accompanied. SECOND COURSE: Halibut and Mushrooms Thankfully the filet was considerably larger than the mahi as I was still hungry! Served hot off the pan, the flaky halibut was so delicate, like eating butterfish but without the bones. The sprig of toasted enoki mushrooms that crowned the fish added a delectable crunch while the roasted garlic cloves simply melted in my mouth. Dual sauces of green onion oil and a mirepoix puree, wilted spinach and Hamakua mushrooms complimented the fish perfectly. Beautiful! We enjoyed a glass of sauvignon blanc with this course. THIRD COURSE: Profiterole I'm not a fan of cream puffs due to their texture, but he did a great job on it. There were plenty of sauces and flavors that enticed my tastebuds on this airy pastry - chantilly cream, bittersweet chocolate, blackberry syrup and mint sauce all worked well together. A topping of silver leaf was visually appealing. Our final wine was a glass of very sweet moscato. SERVICE: Chef Jeremy & wife Paulina (the sole server) were very welcoming, friendly and professional. Due to the eatery's limited seating, you get excellent, personalized service. I have been trying to get a hold of someone from nylos for two weeks!!! Let's get to the 1-star review; my wife and I made reservations for nyloS while in Hawaii; however, we were not feeling well the day after we landed. We tried calling them and left a voicemail to see if we could reschedule for later in the week once we got our test results back. I am a responsible adult and don't want to get others sick! In the age of Covid, we should play it safe. You would think the leadership team of nyloS would want the same? Since we couldn't get a hold of anyone at the restaurant after multiple attempts, we canceled our reservation through resi and got charged $170 for a cancellation! This reservation was more than 24 hours out, so I did not think anything of it. I was looking forward to eating here since we booked these reservations months in advance! Wow, wow, wow, and more wows. Nylos is definitely a special restaurant and an experience like no other. Initially when I booked our reservation for the trip to Maui I thought oh cool it's your typical pre-fixed sample menu with some cool options. We'll get ready because you are in for a treat it's a six course pre-fixed meal that is absolutely mind blowing. Take a look at the pictures I posted to get an idea of the food and large portions you and your guest will receive. The chef also accommodates allergies and adjusts what is on the menu. Nylos is a family owned business, husband is the chef (which by the way he does all the cooking by himself) and his lovely wife is the server and hostess. Dinner is a bit expensive at $225/person plus any beer or wine you purchase but it's absolutely worth trying at least once. The meals are so refined, decadent and thoughtful your pallet will thank you for the delicious flavors. I wish the family much success in their business adventure in the small town of Paia. If you want a delicious meal made with LOVE, look no further. I typed in "farm-to-table" in the Yelp search box, and nyloS popped up. I was surprised that I had never heard of it before, as I've been coming to Maui for years, but found out that they are fairly new. Be sure to make reservations in advance, as they only seat about 15-20 people, and do about 40 covers a night (those are my estimations - could be more or less). The restaurant is a small, intimate one, where you can sit at the "Chef's table" and watch Chef Jeremy prepare all of the delicious dishes, or you can sit at one of the tables in the main dining area if you want a more romantic meal. I chose to sit at the table that overlooks all the "action", and loved every minute of it! The menu changes often, but basically you start with an amuse bouche and sparkling, then he serves 3 courses for $85. You can also add the wine pairings for $45, which I HIGHLY recommend! The Chef is also a sommelier so he knows how to pair wine with food very well. On the evening that I went, the menu consisted of: an Amuse Bouche paired with a Sparkling, 1st Course - Tuna and Marlin Ceviche paired with a Rose, 2nd Course - Surf and Turf Broil paired with a red wine, and 3rd Course - NGF Chocolate Brownie served with a Port. All dishes were very flavorful and beautifully presented. The restaurant is run by the Chef owner and his wife, who is the hostess and server. I got to talk with them a bit, which was really cool that the Chef would take time to stop by each table and converse with the guests. The minute you walk into their restaurant, you feel like you are walking into somebody's home. It's a business casual environment with aloha spirit. My wife and I celebrated our 19th anniversary here and it was fantastic. It has a quaint dining room with the feel of a chef's table - you can watch the chef perform his magic from any table. Because our kids (13 and 10) are adventurous eaters, we also brought them along and they were completely blown away. Every dish was exquisitely executed, and the wine pairing was on point! My husband and I ate here on our last trip to Maui. I was excited to find a restaurant that did a tasting menu on the island. Some parking solutions would be helpful, maybe even valet. When you pay this much for dinner, you don't expect to have to run across a busy highway in heels after a long search for parking. The food was ok, there were some hits and misses and the value just wasn't there for us. I don't need gold and silver flakes on my food, they add nothing in terms of flavor and seem like a gimmick. The pork dish was the best, but what would be considered the main (surf and turf) was disappointing. Our server was the best part of the meal. She was warm and friendly. The first two wine pairings were good and then the rest were misses. Unless the price comes down, we'll continue to enjoy the other fabulous restaurants on Maui. read more

Food was decent, but definitely not worth $225 per person. Great ingredients, but overall the courses miss something. Nothing was really outstanding, with exception of the foie grass mousse. The third course was a home made focaccia with fancy spiced butter (there was even wine to pair with it, but bread is not a course, in my opinion). Dessert had too much going on, but nothing really special. Portions are small. The problem really is the execution vs price. I would prefer that they remove the shaved truffle and caviar (if that's what's driving the high price), become more creative and make this menu more interesting, with more texture and flavors. read more

Not only the best meal we had on Maui (and for perspective, we were there only 4 hours after Mama's Fish House, which was also excellent and considered one of the best meals on the island), one of the best meals we've ever had. I made a reservation for an important dinner one evening but had to cancel last minute due to a family emergency. I tried calling the restaurant but no one picked up. That evening when I got back to my phone I had several missed calls from the restaurant. I tried calling the restaurant and left multiple messages but no one returned my call. I still haven't heard back from anyone. A few days later I saw that the restaurant charged me $1,200 for missing the reservation. Despicable. I would have easily rescheduled the reservation at a later date as I was looking forward to trying and supporting a new restaurant in town. Not anymore. Chef Jeremy is passionate about the ingredients that go into every dish that he creates. Everything is expertly prepared and the wine pairings are always on point. My husband and I stayed mostly near our resort in Kaanapali during our week stay in Maui, but we felt the need to venture out and try nyloS once we saw the reviews. The restaurant was about 45 minutes away from our resort, but so worth the drive. Dining room was small and they only sat about 8 tables for our 8pm seating. They accommodated my request for a gluten free menu with ease, trading out the foie on toast for a delicious fish dish with wine and butter sauce. We highly enjoyed the ambiance and both agree this was our favorite meal we had in Hawaii. We have recommended nyloS to our friends visiting the area and they also were impressed with the food. read more

Absolutely horrible people. The owner is nasty and uncaring about the safety of their guests. My family had a reservation for 7 people and one of our guests was feeling ill the day of. Given that this is a small island and Covid restrictions here are rather tight, we chose to play it safe and cancel our reservation with ample time. Rather than be gracious and understanding, the owner was rude to us on the phone and charged us nearly $600 for canceling. They even said, "Oh, you should just come without the sick person." as if we haven't been around them for the entire trip and may also be sick ourselves. Even if the person in our family does not have something more sinister like Covid, the owner shows total disregard for the severity of Covid, and all contagious illnesses for that matter, by putting their guests at risk. This restaurant most likely cuts safety and sanitation corners if they're willing to seat guests who could be sick next to their healthy customers. Avoid if you take your health seriously and don't want to support restaurants that treat their customers so poorly. read more

They are less a restaurant and more of a "dining experience". There's 6 (maybe 7) tables, the chef and server. It's intimate and not to be rushed. They could do better on the clarifying that but everything there is magical. It's unique and delicious, I have a seafood allergy and they were very accommodating. NyloS presents themselves as a unique, intimate fine dining experience, and they charge accordingly, so the bar was set pretty high. I decided to give them a try, because I have eaten at a lot of high-end restaurants, so I wanted to see what all the hype was about. Let me start by complimenting the chef and his wife who are friendly, hospitable, and run the entire operation which is small and quaint much like a chef's table experience. They charge close to $100 for a 3-course menu and another 50 bucks for wine pairings. At those prices, one would expect a positively unforgettable experience. Unfortunately, my experience started off with a bit of a hassle just to even get a confirmed reservation. I received four calls and voicemails from the restaurant during my busy work day that I missed. I then had to play phone tag with them, making several calls back and leaving several messages just to get a hold of them so I could give them my credit card information to hold my reservation and be told that they have a 72-hour cancellation policy, and if I don't show up, I'll get charged the full price for the prix fixe menu. NyloS did take the time to ask about my dietary restrictions and my aversions or allergies to certain foods, which I thought was a nice touch, and I told them no garlic. However, I'm not even sure why they even bothered asking, because my entree ended up having tons of garlic in it... it was literally smothered in a thick blanket of burnt garlic. I had to scrape it off. Even my husband who loves garlic said it was excessive and had a bitter taste from being burnt. The chef and his wife were very apologetic about it and even offered to redo my meal and comp it on my tab. As far as the actual dining experience, it was indeed intimate, but right outside was the usual late-night Paia with strange folks that you had to walk by to get to the restaurant. Inside the restaurant, it was very warm, because there was no air conditioning. There were ceiling fans on, but they were just blowing warm air around. And they were blowing so strongly, my menu kept lifting off the table. The floors were also weathered and mismatched in a non-purposeful way. And there were no purse hooks at the tables, so you either had to put your purse on the ground or try to hang it off the corner of the table somehow. The food was creative with regard to flavor and presentation. But the portions were small, and we were still a bit hungry after leaving. There were some great flavors presented that worked nicely together (i.e. the cucumber and caviar appetizer and the pear dessert with delicious meringue cookie). However, there were also some strange flavors presented that really didn't work (i.e. the crab appetizer with cremated enoki mushrooms and excessive cumin, the seared ahi filet with waaay too much garlic, and the lilikoi sorbet that was so tart that it overshadowed instead of complemented the sweet dessert). Mama's Fish House just down the street is a master with fish/seafood and flavor profiles, and that continues to be one of my favorite venues. The wine pairings at nyloS were okay, but the calibre of wine really didn't wow me. The wines were neither unique nor special and most can be found at Costco or your local grocery store for under 10 bucks a bottle. Overall, I'm going to give this restaurant a star for culinary effort and creativity, a star for colorful and inventive presentation, and a star for friendly and hospitable service. read more

Our evening with friends at Nylos was very enjoyable. Having heard good reviews from a few people we were encouraged to try it for ourselves so agreed to have a get together with visitors last night. I'll post the menu instead of trying to explain it all, but it barely conveys all the nuances of flavors or the visual appeal of each course. The restaurant is small and intimate, with seating for only about 16 guests, so right away you know you'll get personal attention from the husband and wife team who run things. Immediately we had water and never had to ask for more. Conversation was easy in this small dining room because it wasn't noisy. The courses were nicely spaced so we didn't ever feel rushed, and each presentation was explained as to the ingredients and preparation. Lots of local ingredients and creative treatments. Soup and salad starter: Very visually appealing and every bite was unique. First course: delicious crab on creamy risotto left us wanting more - but wait! Second course: garlicky steak and veggies with green onion oil! Wow. Everything was so perfect... even the steak knives were worth mentioning. Then it was all topped off with a delectable little sweet dessert that I won't even begin to explain. A lovely ending to a lovely meal. This top notch restaurant is a real stand out for Pa'Ia and makes a nice alternative to Mama's Fish House for a special occasion. It's not a quick "grab a bite" type of restaurant, but definitely worth a visit when you want a true culinary experience. They are able to customize the menu for each diner according to their dietary needs, so vegans, vegetarians, and others can let them know in advance. Be prepared to take your time to savor each delicately prepared plate (2.5 hr is conservative, the 5pm slot left at about 8 10 pm, we had 8pm reservations). Husband and I were glad we saved this for our last great meal in Hawaii. We were both blown away by the cuisine, service and ambiance. You walk into a room that has only a handful of tables. The kitchen is open so you can sneak a peek at the hyperlocal ingredients (chef has a local woman provide the vanilla just to him for the desserts) being used. True there were imports like the Maine lobster or the lamb but overall there was so much directly from Maui or the other islands. I was totally impressed from the polite dietary restriction questions (allergies, vegetarian, and etc), which made feel that nyloS really care. Stepping into the Restaurant: Greeted by Paulina and Chef Jeremy as we walked through the door. Very inviting, intimate, and warm. Very Plush and Classy, yet a relaxed and laid back romantic vibe with candles lit up on the tables and corner of the wall. Food: Salmon: The flavors and texture of the Salmon, perfect. Taste absolutely wonderful. Focaccia Bread and special butter: Homemade Focaccia bread toasted to perfection and soft in the middle. Butter just awesome with the special spices. Alaskan Halibut: Halibut executed well. Along with the roasted snap peas and pickled mini cucumber as garnish goes very well. Chicken Breast: Cooked to perfection. Chicken breast, Moist and tender inside. Nice and crispy on the outside. The reduction sauce that complimented the chicken was great. Dessert: Chantilly, Meringue, Raspberries, sweet mint sauce on the side, and 70% cacao on the side balance the sweet, bitter, yet a little savory all at once. Great!! Overall the fine dining experience is second to none. Both FOH and BOH worked in sync. This is the only Chef to table in Maui and it is in Paia. If you are celebrating any special occasion like a wedding anniversary any other this is the place to be. This was the most special meal of our latest visit to Maui. Our Westin concierge highly recommended nyloS, and after researching various Yelp reviews, my husband said "let's do it!" Happily I was able to make a 1,000 point Open Table reservation! The day of our reservation was also the arrival of Tropical Storm Olivia, and I left a message with the restaurant. A few hours later Chef Jeremy called me personally to re-schedule our dinner since he was concerned for our travel safety as well as for his staff, which I fully appreciated. A few days later, we stepped into nyloS and was warmly greeted by Chef Jeremy as though we were entering his home! This is an intimate setting for 14 and we chose a table by the window. Tonight's 3-course pre-fixe tasting menu plus amuse (it changes every night) began with a sparkling LaMarca prosecco. Our amuse was one beautiful cucumber bite topped with a yummy goat cheese confection sitting on a bed of perfectly dressed local greens. First course was a "pan crisped line caught New Zealand Ling Cod, blistered Ho Farms toybox tomatoes, char roasted guan's enokis, kahanu kaiware sprouts, harissa mayonnaise". It was one of the prettiest platings I've ever seen! Second course was "24 hour dry rubbed and pan seared USDA prime eye of rib tournadoes". Again, beautifully plated with sauteed hamakua mushrooms, grilled alpine farms haricot verts, natural lamb curry sauce, and kahanu pea sprouts. The searing of the meat made it a little difficult for me to cut into the hard crust, but it was not a problem for my husband! Third course dessert was a stunning chocolate strawberry pavlova napoleon, which consisted of "dehydrated organic meringue, torched soft organic meringue, bittersweet organic chocolate creme chantilly, cacao Scharffen Berger milk chocolate sauce, Kula strawberry compote, Kula strawberry gastrique." The sauces were so delicious, we practically licked our plates clean! This amazing gastronomic meal was $93 per person. Was it worth it? Yes, yes, yes!!! Just stop -- your visit to Maui will not be complete without a visit to nyloS. This restaurant is absolutely perfect. The minute you arrive - they greet you by your name. This is a 3 course tasting menu. Wine pairing is available - and highly recommended. Changes quite frequently. The menu is very fresh using island ingredients from farms just up the road. We actually ate there 2 nights in a row. And Jeremy did not disappoint. While he changes the tasting menu constantly - he made sure that our 2nd night was completely different than the night before. My new husband and I came here for a romantic dinner on our honeymoon. I am vegan and he is not, so I was treated to a delicious special meal of the best-prepared vegetables I've ever had, presented with care and style. My husband's omnivorous courses were also delicious and beautiful. I chose the "incredible wine pairings" which were indeed incredible. Our server Paulina was kind and attentive. Sadly our jet lag got the best of us and we left before the dessert course so we could make our drive back to our rental house, but chef Jeremy plated our desserts in to-go containers with the same artfulness. Holy cr*p, this place is awesome. I ate here with my mom and dad earlier tonight. My dad generally does not like eating at fancy/expensive restaurants, and was ambivalent about coming even though he was the one who picked it out. However, he told me that one of the owners (Paulina, co-owner and wife of lead chef/co-owner Jeremy) had called earlier in the week to ask about any dietary restrictions for our party, and I said with that kind of attentive service we have to try it. We were not disappointed. We were the first party in the restaurant, and our waiter, Matt, and chef Jeremy were both extremely friendly and accommodating. My dad doesn't eat meat except fish, and I was concerned because the 2nd course on my menu was Surf and Turf. But I needn't have worried because on his menu it was Surf and Surf. They printed out a different menu just for him!! On Matt's recommendation we ended up ordering the wine pairing to share between me and my mom, and they happily split the servings into two glasses per course rather than making us share one. The wines were perfect for every course. Subtle, mellow, fruity and complex all at once. I wouldn't have expected a Riesling to be my favorite, but the Havemeyer they paired with the desert was just fantastic. The amuse bouche was a prawn, cucumber and mushroom dish with Chinese honey mustard. I'm not a fan of Chinese mustard or mustard in general, and this didn't change my mind, but they drizzled it around the perimeter of the plate so I was able to try it without getting it on everything, and it wasn't bad! The shrimp was amazing, the mushroom was delicious and even the cucumber was scrumptious and generously portioned. The paired prosecco really rounded out the dish. The first course was Mahi with purple cauliflower, heart of palm and radish sprouts on Mirepoix puree (which I still can't explain even though they told me twice), and the Mahi was so tender and yummy. The cauliflower was possibly the best single bite of cauliflower I've ever had. I'm not sure how to describe the Fleur de Mer rose (kind of like melon candy but much much better?) but it was again perfect for the course. You can tell they spend time picking their wines. Course #2 was Surf and Turf (my dad got Ahi instead of steak and said it was delicious), and the combination of balsamic steak and oregano/thyme-butter sous-vide king crab was, pardon the slang, redonkulous. The crab was probably the most tender crab meat I've ever tasted and I realized I've used superlatives for two items already but I'm not exaggerating. It was paired with a Louis Martini cab sauv that was complex and exquisite. Course #3 was dessert, a cinnamon apple banana tart on top of a 69% cacao chocolate fudge sauce combined with mint, strawberry drizzle and blueberry puree. Sweet jebus. This dessert combined so many different elements to such great effect. Most chocolate sauces are thin and runny. Not this one, no sir. No thinning agents necessary. This was thick and rich and, combined with the mint, just awesome. The accompanying reisling was one the best white wines I've ever had (yep, superlative #3, come at me). My dad took a sip and literally swooned. Combine all that with intimate atmosphere, laid-back and humorous but extremely competent and knowledgeable chef and server, and kick*ss rock playlist in the stereo (and Miles Davis poster and vinyl for decoration), and this was a can't-miss dining experience on Maui. Wow! What a Gem of a restaurant in the town of Paia on Maui. You must make reservations - there are only about 5-7 tables depending on configuration. Great place for a couple or up to a group of 4. I'm sure they will accommodate a larger group - but it would be pretty tight. Okay, so this restaurant only serves a 3 course menu that changes daily (impressive) ! However, we think it's more like a 4.5 course menu, because they serve you a surprise starter dish, a glass of sparkly wine and home baked focaccia bread with flavored butter - in addition to the 3 course! All this and Great service and Ambiance for $85 (currently)! Chef Jeremy and his Wife Paulina are wonderful hosts and their pride in their restaurant shows in the cooking and description of each dish! They also exude the pride of using locally sourced ingredients from surf to turf. The interconnected relationship of their offerings and the local source is really tangible. Note: only certain unavailable items are out sourced - like Salmon - but quality is tops. Okay now for the dishes: We started of with a beautiful local greens, fruit, goat cheese ball & fresh raw scallop salad. Take a look at the pic - it's looks small, but wow - it ate like a full blown salad. The flavors of each item could be tasted individually and meld into one as you continue through the salad. The scallop adds that protein texture punch needed to balance the other salad textures (crunch, leafy, fruity). Lets also not forget the accompanying sparkling wine (Prosecco tonight). Next up - home baked Focaccia bread with compound butter. Nice, warm , fluffy and a light crunchy crust! The Paprika was a nice touch on the butter. Yum! 1st course: See menu pic for description - what can I say - the Halibut was cooked with perfection! Firm, but tender and juicy. The accompanying sauce and greens perfectly matched this dish. The bonus not to be missed are those soy reduction lobes on the side, tiny flavor bombs I tell ya! 2nd Course: See menu pic for description - Another fish I thought. But I think it was seafood night. That salmon was definitely wild caught from not farmed. The fish had a nice firmness, but flaked nicely without it being dry. OMG - the crispy skin was the feature - taking a bite with the skin, meat, mushroom and accompanying sauce(s) really showcased Chef Jeremy's French Cuisine skills. Next! 3rd Course: Desert! Yeah, everyone I showed this pic to said something about that vanilla cream shape... okay - so this desert was some what like a Hot Chocolate Souffle' without the wait! The Vanilla cream, Mint and Strawberry Gastrique perfectly complemented the strong Chocolate elements. BIG Tip: That Silver Foil you see on top - you gotta eat that first without any of the actual desert. Place it on your tongue and rub it against your upper palate. It's a totally subtle texture experience. Unlike Gold foil, the silver has a texture - my take was I could taste / feel the wrinkles on the foil. Then as soon as that idea came into my mind - it was gone! Neat-O. We opted for the wine pairings for this meal, and let me tell ya - they know how to pair! (and pour!) In conclusion: Chef Jeremy and Paulina own and operate a delightful restaurant that we would like to patronize over and over. Too bad we are in Honolulu. But my wife and I agree - it's going to be worth the trip! read more

Nylos... Michelin star quality from the Jean George of Maui. This is a chefs table experience at a 12 seat restaurant.

Nylos is a singular experience on Maui. There is nothing like it. First of all the service. We were scheduled for the first seating. However, we were running late. We arrived half hour late and it was no problem. However my companion was going through airline reservation nightmare and we did not actually begin dining until after the second seating began. They were completely accommodating. Its hard to review the food because it changes all the time. Suffice to say it was what we go to restaurants to experience; food and preparations we do not do at home. Every dish was meticulously prepared, introduced by our server like an Academy Award nominating speech, and then deliciously devoured, to the point of using our fingers to get up every bit of sauce without anything to interfere with the flavors. Highlights of the meal are unfair to the rest, but here goes. The fois gras with maple syrup reduction with tabasco was a homerun, bringing a new flavor to maple syrup I cannot wait to try. The Halibut with the creamiest lemon sauce done to perfection. My bouche is still smiling from how amused it was. This is hands down the best dining experience on Maui. The place is intimate (no more than 20 at a seating) and its like being invited to a chefs home, where you are the only one being served; it feels that special. Its worth every cent and them some.
