I came here for a late lunch around 2 pm after arriving in Boise. They weren't crowded at this point but business wasn't dead either. My waitress was very friendly. Inside has a lived-in, intimate feel, but it was pretty dark, so much that I wasn't sure they were actually open as I was opening the door. I had the French dip sandwich with a side of tomato basil soup. The sandwich was delicious and tasted homemade in the best way. The "meat" of the sandwich was seitan. I don't THINK it was a perfect meat replica (but I've never had a real French dip), but it was very flavourful. I loved the flavour and the thick cut of their bread, but it didn't have much structure and fell apart easily as I was eating which made the sandwich very messy. The tomato basil soup was a little different. It was slightly creamy but brothy and a little chunky - not a smooth puree. Again, it tasted great and was nice and light, which was a good contrast to the very rich sandwich. It was a little slow, especially considering they weren't that busy. I didn't really mind since I wasn't on a schedule, but this is something to be aware of - don't come here for a quick meal. Not cheap, but worth it for the quality.

Owners Leo and Jana Berejkoff are serving up high quality, hearty and deliciously wonderful sandwiches that rival any I have ever had. I am an omnivore, but I also cook, so it is rare that I get excited about sandwiches or chicken in general, but Bel Cibo's break all the rules. I have visited Bel Cibo twice within three weeks and have tried three of the sandwiches, all of which are available as Tacos for those that require a gluten-free diet. There are four sandwiches available daily, all of which rotate with the exception of the top-seller Hobie Yaki. The Hobie Yaki is the best chicken sandwich I have ever had. It is better even than the former Seattle restaurant Baguette Box's Crispy Drunken Chicken sandwich, which made that restaurant famous. Truth be told, I was reluctant to try the Hobie Yaki, as well as The Shrimpie because I have an adversion to "sweet meat." I am the rare female that prefers savory to sweet and I do not enjoy anything that skews too sweet as an entree. As a result, I find most teriyaki too sweet. The Hobie Yaki is grilled chicken teriyaki on slaw, drizzled with creamy Asian sauce, topped with sesame seeds.It's difficult to describe the complexity of the sandwich. The average person is going to find it incredibly delicious. Those who cook ate going to marvel at the layers of flavor (including smoky) textures and temperatures that elevate this sandwich beyond all expectations. I resisted, feeling that was too much trouble in an unreasonable request, but he insisted. I am glad he did because I had the opportunity to try the Hobie Yaki and The Shrimpie, both of which are excellent. These sandwich descriptions sound somewhat similar, as both have slaw and creamy Asian sauce, but they are entirely different. On my second visit, I was picking up a sandwich for a friend, who left it up to me to decide what to order for them. I asked Jana if I could order two different sandwiches and have them package them as 1/2and1/2s in the back. She kindly agreed. I knew for sure that one of the sandwiches must be the Hobie Yaki, but I was struggling to decide on the second, when Jana suggested I try the Greengo Pork, which is based on Leo's famous carnitas recipe and a big part of the reason why the Berejkoffs decided to open a food truck. Given that, how could I resist? The Greengo Pork sandwich is slow roasted "carnitas style "shredded pork on green chili cream cheese and slaw, topped with roasted green chili salsa, ground mustard and black and bell pepper. Jana shared that she never liked carnitas until she tried Leo's. I on the other hand, have never encountered Carnitas I did not enjoy, but like everything the Berejkoffs do, the Greengo Pork is fantastic!
