My Pisco-licious ($16) -- Barsol pisco, mint, blackberry puree, sherry, lemon, and egg white -- arrived under a dense, well-set foam cap with a charred, dehydrated citrus wheel balanced on top. It poured tart-forward, with the blackberry rounding out the back end, and the foam held its structure to the last sip. My friend's cocktail moved just as fast. Bread came warm and unfussy, gone before the entrées landed.
