The house made chorizo was clearly a seitan product, and it was good. It was just a lot of seitan, and that's a product I try to avoid. In terms of the service, everything was exceptional. Our server was very nice and demonstrated exceptional situational awareness. She was present as much as needed, but no more. She was also fast, despite waiting on half the restaurant.
