Don't expect the brisket to be actual BBQ brisket. It's light years from what you would get if you smoked it yourself or got it from a Texas BBQ restaurant. Cute little place in Palouse. Went with a big group. We enjoyed our time. Upside- loved the food all the food!! From the BBQ platters, nachos, tacos, wings, mac and cheese and salads. Drinks were really good. Downside- you have to go up to the bar to order all your food and drinks each time you want something, and with a big group that was not fun. I love this place! Easily my favorite restaurant for hundreds of miles around. Great food, great service, great small-town charm, a good variety of beers, and did I mention the great food?! The Palouse Caboose is in the small town (population less than 1,000) near Pullman, WA, home of Washington State University (WSU, Go Cougs!). If you are anywhere near the town of Palouse you should absolutely go to the Palouse Caboose for lunch or dinner. They have a variety of different sandwiches and wraps, some really good salads, and more. There are a number of beers on tap and a full bar as well. We bring groups here and everyone always loves their food. The staff is super friendly and helpful, and the casual ambiance is cheerful and fun. Think small-town charm with big friendly smiles. Excellent dinner. Their meats were great, with a special shout out to the pitmaster for the Smoked Turkey. Turkey is hard to make macro for the daily menu. It rarely turns out as good as you do it at home, but their's has great smokey flavor, is tender, and has a consistancy of a top-shelf deli meat. It's clearly smoked and processed in house, and attests to how genuine this place is. Wifey had it as her main, and I had it on my Club. Was able to sample their brisket in their soup-of-the-day (Beef Stew) and it was excellent as well. All other sides were great, and seemed to be made fresh that day. And it's the little things that impress me sometimes--like offerings of delicous pickled vegs, and whipped honey butter with the cornbread. Not many choices to dine in this small town. This place has a good Yelp rating and lots of cars parked around so we gave it a try. Looks to have a great beer selection but sadly I had to pass as I am low carbing in preparation of having knee replacement surgery next week. Walk up counter to order and table delivery. We went with buffalo wings and two side salads. Wings were the best we've had in a long, long time. Side salads were larger than most, chock full of delicious greens, tomatoes, purple onion, mushrooms, and grated cheese. Saw some great looking barbecue plates coming out of the kitchen. All the meat from the sampler were EXCELLENT. I think the potatoe salad a bit too german, the mac salad (penne) a bit too duro (undercooked 3 minutes). Flavors were completely tolerable, and the cole slaw was a great accent. The Turkey was a bit salty, but Turkey so often is. If you think I am complaining, I am explaining. My main problem is, it is a 5 hour ride from my house, so, I'll have to keep smoking my own. If you are within a two hour drive, it is worth your effort. read more

My wife spotted this on Yelp this morning when looking for a lunch spot on our travels in the area. We decided to give it a go and we were glad we did. The restaurant/bar is open and airy with a handful of wood tables. Some with bench seats and others with chairs. There are also tables and chairs outside as well. We were greeted by Kim (Owner/Waitress/cashier) and she was super friendly like you would expect in such a small town. She gave us menu's and told us the specials of the day. I went with the brisket sandwich and my wife ordered a meatloaf sandwich. Drinks were ordered and brought to the table lickity-split. The sandwiches were both wonderful. The brisket full of flavor and moist, the meatloaf cooked perfectly with a hint of a sweet flavor. We both had a side of potato salad and it was very good with perfect texture and mix of ingredients. For desert we had a peach cobbler with a couple scoops of Ferdinand's (WSU creamery) ice cream. I can't think of a time that I've ever had a better cobbler. We're already planning our next visit.... we hear they have a great breakfast as well. read more

I was in Palouse at another location and couldn't resist the awesome smell of smoked meat coming from the place! We weren't let down! The customer service was excellent. The meat has great flavor and was very tender for smoked meat. The only thing I would have liked more was if my fries were a little warmer and they served ribs. I will be back often! read more

We learned about Taco Tuesday and Steak Thursday from her along with live music during the summer taking place here. Lovely place inside with AWESOME music 70s and 80s music. My hot iron plate was TASTY which consisted of country fried potatoes, bacon, eggs, and toast with jam. My partner's Guthmiller hash was SCRUMPTIOUS with potatoes, pork, bell pepper, eggs, and gravy on the side. We will return again and again. What a WONDERFUL find for us! read more

What a pleasant surprise. We traveled from Lewiston to see if the rumors were true of a great BBQ place in Palouse, it's no rumor, this place is on point in this sleepy little town. The BBQ meats were excellent, highly recommend the brisket and pulled chicken. Not only were the meats good but the potato salad and pasta salad were very good. It didn't take long for the food to come out and the prices were reasonable. Staff were friendly and it was a clean a welcoming environment. Having a full bar was nice and their huckleberry ice cream was a delicious way to end a tasty and filling dinner. Needless say they won some fans on our first visit! Tried this place again, this time for dinner and on a Sunday evening. Not great, and service was terrible. There was one girl running around helping people, but she was very forgetful when we asked for refills or silverware. The other lady working was just standing around. There was a different cook this time as well and all the fries, tots were all over cooked. Ordered a burger and all the toppings were missing, the turkey on the club had a bad smoked flavor-- too strong. Ordered chili fries as an appetizer and they were good, BUT should come with sour cream!! Instead we were charged for getting some to put on it. Buns were good. Got the bread pudding for dessert and it was soggy and had some aluminum foil in it. What a disappointment. Now only recommend for breakfast during the week! read more

I've eaten here over a dozen times and even though I live nearby, I can no longer stomach paying ridiculous prices for sub-standard food and drinks. I now drive a few extra miles to Pullman or Moscow to save a few dollars and get much better food and larger portions. Most recent disappointment was their club sandwich. Priced at $12(!) and served on dry non-buttered plain toast with a handful of fries. And they have the audacity to charge you $.50 for a side of ranch so you can choke down the completely boring sandwich! Their smoked meats tastes weird, and their decent sandwiches are $15, $17, and $18! This is a little diner in a little town with no table service due to Covid, and within 15 minutes of much better choices. And the drinks? Overpriced and weak as well. $7 for a weak pineapple margarita that doesn't taste like pineapple, comes in a tiny 10 oz glass, and was supposedly the daily special? I sympathize with them dealing with the virus and having to raise prices, but they need better quality food, bigger portions, and stop charging for sauces. I haven't eaten there for months and now drive on past on my way to Moscow to the Varsity Diner for a truly great club sandwich that is twice as big, with more and better fries, great fry sauce, and $1 cheaper. Now, breakfast is not bad and their breakfast Grande burrito is awesome and very large. The only problem is that they charge $12 for a breakfast burrito with no sides and charge you extra for a side of sour cream. That is twice what a similar burrito costs just about everywhere else. To be fair, the staff is excellent. They are friendly and attentive, the atmosphere is great, the place is clean, and the owner is a lovely person. This is a relaxing spot to enjoy a yummy meal with your Best Friend. We were staying in Pullman, read the Yelp reviews about Palouse Caboose -- and had to try it. After much debate, I ordered the smoked beef brisket sandwich. Packed with thick, delicious slabs of brisket, this is without a doubt a "two-fisted" sandwich. (That is, it was so large and heavy, most folks need two hands to pick it up.) What a treat! And after almost no debate at all, Skye had a medium-rare burger patty (one of his numerous all-time favorites). Although it didn't last long, it got his Seal of Approval. The staff is super-friendly, and brought out treats and a water bowl for Skye (petting him all the while). Finally, I can't forget dessert. They have FERDINAND'S Ice Cream! I had never heard of Ferdinand's before I visited Pullman and WSU. But my education was quick and decidedly delicious. The finish to a relaxing, yummy meal with my Best Friend. Great weekend breakfast in Palouse. We were expecting a greasy spoon, but instead got good, innovative food in a really nice atmosphere. No wait for our 10-person group at 9 AM on a Saturday in late August. Friendly service, and a far more upscale interior than I expected. Our group ordered and enjoyed breakfast burritos, biscuits and gravy, house-made granola and yogurt, grits and chicken-fried-steak. Surprisingly affordable too, at about $7/ea for breakfast entrees. The service is still great but the pulled pork was way too salty, the bun was a standard hamburger that got soggy quickly, and the coleslaw crispy but little flavor (no bite). Visiting Palouse for a few days and had dinner here with some friends. The food was pretty good, but the treatment by the staff was terrible. I asked for another beverage when my food arrived, but was told by the server that I would have to ask my original waitress, but she didn't return so I ate my dinner without. When she did finally come back, I asked and then she forgot, so I had to wait again. When I paid my bill, she brought the wrong change twice. Then when I walked inside to use the restroom, I paused when I came in the door to allow a server to walk by and was told by another server that I needed to move to keep the area clear for her to work. Incompetent and rude will not win repeat business. If you are in town for a visit, try The Congress. I ate lunch there and the food was great and the staff was friendly. read more

We stopped on our way through for a late lunch. The place was clean, pleasant and staff were amazing. I had the brisket Rueben and he ordered the club. I say ordered the club, but after one bite of my Rueben, he finished that half. It was amazing! The smoke ring on the brisket was beautiful, the flavor perfect, the Rueben delish! I had the coleslaw, which was lovely and light with lemon and oil, he had the tots, which were crisped to perfection. His club was great, and we left with a full to go box.
