We booked an all-inclusive trip to Cano San Lucas, but we would have been remiss if we sis not try some local dining options. While on the hunt, we ran across Pancho's & boy it did not disappoint! We arrived around 1300, & they promptly invited us in! Seating: There is outdoor & indoor searing. The dining area is covered, so you could technically say it was "indoor seating". They sat us down & promptly placed two fans on either side of us for air flow. Ambiance: We were their first customers of the day, so it was quiet. Some of their employees were just showing up for their shifts! Some mariachis came by, but we politely declined. Food: This is clearly the most important part! Here is what we ordered: -Tableside Guacamole (1.5 avocados, tomato, onion, cilantro & serrano pepper ***We could have ordered without tableside prep, but it was nice seeing them make it. What I will say is the guacamole needed a touch of salt, but it is probably what I am used to. It still tasted amazing as prepped. Additionally, the serrano added some nice heat, which was a nice touch! -Asada Street Tacos ***You cannot go wrong with an asada street taco! There was a nice serving of asada in both tacos & it did not disappoint. I probably could have easily eaten two more! The asada was seasoned to perfection, & they also brought out two different hot sauces to pair with the tacos...one was red & spicy while the other was a green sauce that was less spicy. Both were equally good. -Shrimp Baja Style Tacos ***This order contained 4 tacos with a generous helping of shrimp. Separately, there was guacamole, onions, cilantro lettuce, tomatoes & limes to dress your taco however you wanted it. This was such an incredible simply because there was so much shrimp on each taco. Always a great time at Panchos, and this visit even more so because of the tequila tasting with Jose! So glad we reserved time to learn a little about tequila with Jose. You can select the quality level of tasting ($35,$45,$65 or $95 per person) but the lesson remains the same. I was in the mood for chicken mole enchiladas and decided to give Pancho's a try. Good choice! A weeknight in Covid-19 November 2020, found a pretty empty restaurant. Good for us, bad for the restaurant as we got very good, personalized service. The restaurant is probably pretty busy in "normal" times. So, how were my chicken mole enchiladas? Excellent! My dining companions enjoyed their meals too. Pancho's has a fun atmosphere and I'm sure gets quite festive when it's busy. Great food, friendly service and a fun vibe. And this time, we got the Steak Nachos, which were excellent, along with very fine, smooth Guac to go with outstanding crisp homemade Tortilla Chips. A Deep-Fried Shredded Beef Taco made with a Corn Tortilla was good but with somewhat frizzy meat, as somewhat expected but sought by me anyway. In contrast, another Shredded Beef Taco that was not deep fried and utilized a Flour Tortilla and marinated beef tasted very good. Smooth Refritos and fine Mexican Rice with carrots rounded out my custom combination plate. Pancho's is our home away from home when we visit Cabo! It's our go-to for delicious classic Mexican food. We usually start with a shot of Rattlesnake Tequila for our arthritis. Drinks are splendid, service just right, atmosphere just fine. Rey cheerfully valet parks our car. Tequila Tasting with Jose was a highlight. The Chicken Mole' is superb. Stopped here for a light breakfast right before we left for the airport. Service was rather slow and the not so complicated order of ours took a while to arrive. Decor is bright and colorful. We shared a Mexican breakfast consisting of a fried egg over tortilla and salsa, side of potatoes, fruit and flour tortillas. The first night I got to Cabo this is where my family took me. It's pretty much your typical Mexican restaurant. They serve a very tasty queso fundido and the guacamole is about as good as I've had.
