The only thing is that they told me that they do not clean tripe in Korea which was hard to believe. I do want to share a concern regarding the preparation of the tripe soup. After beginning the meal, I noticed that the tripe did not appear to have been cleaned. At first, I wondered if this was simply the restaurant's style of preparation, but after researching further, I learned that improperly cleaned tripe can be both unpleasant and potentially unsafe to consume because tripe comes from the stomach lining of the animal. Uncleaned tripe may still contain food residue, digestive material, parasites, worms, bacteria, and strong bile or waste odors. This can potentially lead to issues such as foul smell, unpleasant taste, food poisoning, bacterial contamination including E. coli or Salmonella, and symptoms such as stomach cramps, vomiting, or diarrhea. Proper cleaning is generally considered an essential part of preparing tripe, especially in professional restaurants where customers would quickly notice if the cleaning process was incomplete. Overall, I appreciated the kindness of the staff, the quality of the drinks, and the excellent side dishes.
