    Parasol is the kind of place that makes you pause not because anything is off, but because everything is just that dialed in. Tucked beside the Vinoy's pool with postcard views of the marina, this spot captures the exact vibe you want from a Florida day: breezy, effortless, elevated. You're shaded just enough by palm fronds and umbrellas, while boats drift in the background and every cocktail arrives as if on cue from some off-stage director of vibes. The menu is tight and thoughtful. My go-to is the shrimp tacos bright, fresh, and perfectly portioned for a poolside lounge. Add a mezcal paloma or their cucumber cooler and you're doing it right. Service is exactly what you'd hope for: friendly but never hovering, casual but sharp. Whether you're in a swimsuit and flip-flops or just wandered out from brunch at Paul's Landing, you'll feel like you belong. Parasol doesn't try too hard because it doesn't have to. It's effortless luxury with a slice of sunshine. Highly recommend as your daytime HQ if you're anywhere near downtown St. Pete.

It has one of the few espresso martinis in town that feature fresh brewed espresso. One of the best things about this bar is that it focuses on the art of cocktail making and features the bartenders as artisans. Every employee is the epitome of top of the line hospitality. Each cocktail on the menu is unique and you won't find it replicated locally. The menu is seasonal, so you can always try something new. It's the kind of place where you can say to the bartender "I'm feeling something gin based, maybe something blackberry flavored" and they will make you a unique cocktail based on what you're feeling, even if you don't know exactly what you want. During the month of December, they hold "miracle at mezzo"- a Christmas themed pop-up that was previously hosted at intermezzo. During the cooler months, weekends and during the Christmas popup, it's gets extremely crowded, sometimes forming a line out the door. We sat outside which is perfect for watching the parade of people on Beach Drive.

To drink - the "Osaka Mule" and the "Shiso Heavy". Both were good, though we recognized that the Osaka Mule had a slight edge on the Shiso Heavy. Neither of us are normally sake drinkers so this was nice and refreshing for us - the Osaka Mule had nice hints of cucumber and the wasabi salt on the rim was a huge hit with us. To eat - we ordered the gyoza and the miso udon. The gyoza was incredible - an explosion of flavor unlike anything else I've had in a long time. Truly unforgettable and honestly the best part of my entire weekend. The miso udon was good as well - my partner thought the udon might've been just slightly overcooked. We split both and then decided to order the gyudon as well afterwards. The gyudon was also very good - daikon radish was a great addition to the flavor! With respect to the atmosphere/ambience - it's a small place, but cozy. The music was nice - the bartender allowed me to browse some of the records.
